While previous studies have shown that healthy nutrition has a positive effect on our physical and emotional well-being (Marsman et al., 2018; Harbottle, 2019), it is unknown whether those benefits extend to individual levels of resilience among those who have suffered childhood trauma. The rise in recent years of research dedicated to community food environments has produced valuable insights but has focused primarily on one dimension of access to healthy food: availability. This study expands the current research and utilizes an innovative approach in generating a food environment index by focusing on consumer choice in restaurants. Using food images crowdsourced from Google Place (n=19,907) and TripAdvisor (n=3,252) in restaurants (n=487) of the Greater Hartford Area, we employed a deep-learning based food-image-recognition technique to identify the food type and nutrition information from these food images, which were also validated by manual coding. However, this perspective does not account for the complexities of food access, gender, and household dynamics. This study aims to evaluate the nutritional impact the COVID-19 pandemic has had on children within the U.S. by assessing how children’s nutritional patterns have changed due to the COVID-19 pandemic, determining how these changes are impacted by participation in school federal nutrition assistance programs, and exploring additional food-related barriers the COVID-19 pandemic has created for families. The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. This capstone project was completed through a partnership with GiGi’s Playhouse in Nashville, Tennessee. GiGi’s Playhouse is a Down syndrome achievement center that offers free programming for individuals of all ages with Down syndrome. The focus of this project was the development of programming for adults and children with Down syndrome. One of the programs developed was GiGi Prep, a program for adults focused on communication skills, money management, fitness, and healthy cooking skills. The Reserve Officer Training Corps (ROTC) prepares college students for future military service. The ROTC includes a rigorous physical training program. As such, effective nutrition practices are necessary to maintain performance. The purpose of this study was to assess USU Cadets’ nutrition knowledge and practices to inform future research and intervention needs. Cadets were recruited through email and classroom announcements. Participants completed an online survey that gathered demographic, fitness, nutrition knowledge, nutrition behaviors, Intuitive Eating, perceived stress, and food security data. The purpose of this research was to learn more about ROTC cadets' dietary habits, the reasons for their dietary choices, and gain feedback on what they think could improve their dietary intake. Background: The dietary inflammatory index (DII®), a quantitative measure of the inflammatory potential of daily food and nutrient intake, and associations between a variety of health outcomes have been reported. However, the association between DII score and disease activity of rheumatoid arthritis (RA) is unclear. Therefore, this study was designed to test whether higher DII score contributes to disease activity and as a corollary, y, whether reducing DII score helps to achieve or maintain low disease activity or remission in patients with RA.

Diet is a modifiable risk factor that may influence cognition in people with HIV.
Objectives
We examined the association between dietary intake and cognition in women with HIV (WWH) and HIV-seronegative women.
Methods
An 18-item dietary National Cancer Institute screener was completed by 729 WWH and 346 HIV-seronegative Women's Interagency HIV Study participants. Daily intake frequencies of processed meats, sweet beverages, fish, whole milk, and vegetables were calculated. Participants completed biennial neuropsychological (NP) testing. NP domains included attention/working memory, executive function, processing speed, memory, learning, fluency, and motor function. Throughout the semester we explored various aspects of living a healthy lifestyle, we started in the topic of MyPlate and introduced the five food groups, touched on other elements of a healthy life (such as exercise, sleep, and the nine dimensions of wellness). Towards the end of the semester, we incorporated cooking lessons that taught the students safe kitchen habits and where their food comes from. We tried to incorporate physical activity, visual, audio, and hands-on elements into each club meeting.

Background: Low/middle-income countries (LMICs) face triple burden of malnutrition associated with infectious diseases, and non-communicable diseases. This review aims to synthesise the available data on the delivery, coverage, and effectiveness of the nutrition programmes for conflict affected women and children living in LMICs.
Methods: We searched MEDLINE, Embase, CINAHL, and PsycINFO databases and grey literature using terms related to conflict, population, and nutrition. Background:Asthma physiology affects respiratory function and inflammation, factors that may contribute to elevated resting energy expenditure (REE) and altered body composition. Objective: We hypothesized that asthma would present with elevated REE compared to weight-matched healthy controls. Methods: Adults with asthma (n = 41) and healthy controls (n = 20) underwent indirect calorimetry to measure REE, dual-energy X-ray absorptiometry (DEXA) to measure body composition, and 3-day diet records. Clinical assessments included spirometry, fractional exhaled nitric oxide (FENO), and a complete blood count. Results: Asthmatics had greater REE than controls amounting to an increase of ~100 kcals/day, even though body mass index …

Educating and training a multisectoral food systems workforce is a critical part of developing sustainable, resilient, and healthy food and water systems. This paper shares perspectives from a working group of educators, learners, and food systems subject matter experts that collaborated over the course of a year to develop, pilot test, and evaluate two interactive webinar series with a multi-site cohort of dietetics interns and graduate students. Background
Beyond intakes of total energy and individual nutrient, eating patterns may influence health, and thereby the risk of adverse outcomes. How different diet measures relate to frailty—a general measure of increased vulnerability to unfavorable health outcomes—and mortality risk, and how this might vary across the life course, is not known. We investigated the associations of five dietary indices (Nutrition Index (NI), the energy-density Dietary Inflammatory Index (E-DII™), Healthy Eating Index-2015 (HEI-2015), Mediterranean Diet Score (MDS), and Dietary Approaches to Stop Hypertension (DASH)) with frailty and mortality.

This research employed a matched-pairs randomized field experiment design to evaluate a classroom-based health education intervention for pre-Kindergarten and Kindergarten children in a rural region of the southeastern United States. Schools were matched on demographic characteristics, then one school from each pair was randomly assigned to the treatment group and one to the delayed treatment group. The intervention included a field trip experience and an integrated curriculum designed to increase knowledge about nutrition, physical activity, and sleep.
