Healthy Dietary Intake Moderates The Effects Of Age On Brain Iron Concentration And Working Memory Performance, Valentinos Zachariou, Christopher E. Bauer, Elayna R. Seago, Georgia Panayiotou, Edward D. Hall, D. Allan Butterfield, Brian T. Gold

Neuroscience Faculty Publications

Age-related brain iron accumulation is linked with oxidative stress, neurodegeneration and cognitive decline. Certain nutrients can reduce brain iron concentration in animal models, however, this association is not well established in humans. Moreover, it remains unknown if nutrition can moderate the effects of age on brain iron concentration and/or cognition. Here, we explored these issues in a sample of 73 healthy older adults (61-86 years old), while controlling for several factors such as age, gender, years of education, physical fitness and alcohol-intake. Quantitative susceptibility mapping was used for assessment of brain iron concentration and participants performed an N-Back paradigm to …

Understanding Milk Consumption Habits Among College Students In Order To Redesign Outreach, Stacey F. Stearns, Adam N. Rabinowitz

Journal of Extension

College students consume less dairy milk than in the past. Increased competition in the beverage aisle influences their choices. However, much of the population is not meeting the recommended intake guidelines for calcium. A survey of undergraduate college students with university dining plans focused on milk consumption habits, beverage choices, and student attitudes toward healthful foods and nutrition. Results are guiding Extension program educational outreach campaigns to college students. By focusing on the healthful and nutritional benefits of milk, Extension educators could increase consumption among college age consumers, and their long-term healthful outcomes.

Implementation Of Dietary Methionine Restriction Using Casein After Selective, Oxidative Deletion Of Methionine, Han Fang, Kirsten P. Stone, Laura A. Forney, Landon C. Sims, Gabriela C. Gutierrez, Sujoy Ghosh, Thomas W. Gettys

Division of Basic Science Faculty Publications

Dietary methionine restriction (MR) is normally implemented using diets formulated from elemental amino acids (AA) that reduce methionine content to ∼0.17%. However, translational implementation of MR with elemental AA-based diets is intractable due to poor palatability. To solve this problem and restrict methionine using intact proteins, casein was subjected to mild oxidation to selectively reduce methionine. Diets were then formulated using oxidized casein, adding back methionine to produce a final concentration of 0.17%. The biological efficacy of dietary MR using the oxidized casein (Ox Cas) diet was compared with the standard elemental MR diet in terms of the behavioral, metabolic, …

Omega-3 Fatty Acid Fortification Of Marinara Sauce, Hannah Collie May 2021

Omega-3 Fatty Acid Fortification Of Marinara Sauce, Hannah Collie

Undergraduate Honors Theses

In westernized culture, there is a deficit of healthy fats in the average person’s diet. Decreased intake of omega-3 fatty acids has been correlated to many different conditions such as cardiovascular disease, cancer, and chronic inflammatory issues. The “Mediterranean Diet” has been proposed as an ideal way to combat these issues. This diet promotes fish as a protein source and as a way to increase intake of essential polyunsaturated fatty acids. Due to location and dietary trends, fish is less often the main component of Northeast Tennessee's diet. This study investigated ways to fortify a more commonly consumed food in …

Increasing Nutrition Education In Elementary Schools, Guadalupe Zamora Madrigal May 2021

Increasing Nutrition Education In Elementary Schools, Guadalupe Zamora Madrigal

Capstone Projects and Master's Theses

There is a lack of nutrition education in most elementary school curriculums. The importance of healthy nutrition is essential because most parents supply food for their children. Children don’t often get to control the foods they intake because parents choose their food choices for them. Most of the time parents don’t make the healthiest food choices and it affects a child’s well being. Therefore, teaching children about a healthy nutrition can encourage them to make healthier food choices for themselves and benefit their wellbeing.

From Self-Sufficiency To Import Dependence In The Republic Of The Marshall Islands: Data Issues And Challenges, Debra L. Claypool

Electronic Theses, Projects, and Dissertations

Although it appears likely that the profoundly asymmetrical political and economic relationship between the United States and the Republic of the Marshall Islands (RMI) has contributed to the abandonment of traditional agriculture, import-dependency, and a decrease in quality of life for the citizens of the RMI, limits in existing quantitative data make it impossible to model exactly how this occurred. Therefore, rather than seek to model this causal relationship, the researcher employed three existing ethnographic studies to establish a quantitative measure of the transformation itself. Using additional government documents to supplement the existing data, a measure of relative percentage of …

Diet is a leading causative risk factor for morbidity and mortality worldwide, yet it is rarely considered in the design of preclinical animal studies. Several of the nutritional inadequacies reported in Americans have been shown to be detrimental to kidney health; however, the mechanisms responsible are unclear and have been largely attributed to the development of diabetes or hypertension. Here, we set out to determine whether diet influences the susceptibility to kidney injury in male C57Bl/6 mice. Mice were fed a standard chow diet, a commercially available “Western” diet (WD), or a novel Americanized diet (AD) for 12 weeks prior …
