Food neophobia, defined as an unwillingness to consume novel and unfamiliar foods is common in young children. Assessment of neophobia or willingness to try new foods can be a challenge with this audience. With the increase in nutrition interventions focused on the young child, valid and reliable measures to assess willingness to try new foods that can be administered in groups by classroom teachers and Extension educators are needed. Infertility affects nearly 50 million couples worldwide, with 40−50% of cases having a male factor component. It is well established that nutritional status impacts reproductive development, health and function, although the exact mechanisms have not been fully elucidated. Genetic variation that affects nutrient metabolism may impact fertility through nutrigenetic mechanisms. This review summarizes current knowledge on the role of several dietary components (vitamins A, B12, C, D, E, folate, betaine, choline, calcium, iron, caffeine, fiber, sugar, dietary fat, and gluten) in male reproductive health. Recently, endurance athletes have utilized a very low-carbohydrate diet, the ketogenic diet (KD), to improve performance in competition. The KD may be associated with diminished appetite, but this has not been explored in endurance athletes. An individual’s resting metabolic rate (RMR) is commonly the largest contributor to total daily energy expenditure. Prediction equations are most often employed by practitioners to estimate RMR, due to their superior practicality in many settings relative to laboratory methods like indirect calorimetry (IC). The ability to quantify RMR change over time may be more valuable than cross-sectional estimates as practitioners can then utilize these changes to prescribe adjustments to one’s nutritional intake. Limited research exists on the fertility needs for industrial hemp (Cannabis sativa) and the impact of fertility on plant growth and cannabinoids. Optimizing floral production for cannabinoid production and especially cannabidiol (CBD) production, is an economic goal for growers. Magnesium (Mg) is an essential nutrient for plant growth and plays many key roles in plant growth and when deficient leads to suboptimal plant growth. Objectives: To examine changes in planning, selecting, and preparing healthy foods in relation to personal factors (time, money, stress) and social distancing policies during the COVID-19 crisis. Methods: Using cross-sectional online surveys collected in 38 countries worldwide in April-June 2020 (N = 37,207, Mage 36.7 SD 14.8, 77% women), we compared changes in food literacy behaviors to changes in personal factors and social distancing policies, using hierarchical multiple regression analyses controlling for sociodemographic variables. Introduction: We examined factors influencing anemia outcomes in rural children following implementation of a prevention program. Method: Mixed methods study of children, parents, and clinicians utilized statistical modeling and content/ ethnographic analysis. Retrospective chart abstraction evaluated treatments administered and measured hemoglobin in children aged 6 to 59 months (n = 161). Prospective interviews/questionnaires examined parent (n = 51) and clinician (n = 19) perceptions. Results: Anemia prevalence decreased by 21.2%. Predictors of increased hemoglobin were clinic visit number and age at first visit. Once anemia improved, children were likely to remain improved (P = .65). Using the social-ecological model, this basic interpretive qualitative study sought to examine the phenomenon of food insecurity among Idaho Head Start enrolled families, focusing on barriers and deterrents to accessing available nutrition assistance programs. A total of 11 interviews were conducted with parents who had children enrolled in five Idaho Head Start programs. The data were coded and analyzed and are reflective of how individual, interpersonal, community, and organizational levels factors are reflected in participants’ decisions to access available nutrition assistance programs. The Paleolithic diet, characterized by an emphasis on hunter-gatherer type foods accompanied by an exclusion of grains, dairy products, and highly processed food items, is often promoted for weight loss and a reduction in cardiometabolic disease risk factors. Specific adipokines, such as adiponectin, omentin, nesfatin, and vaspin are reported to be dysregulated with obesity and may respond favorably to diet-induced fat loss. The uses of vegetable oils are determined by functional properties arising from their chemical composition. Soybean oil was previously used in margarines and baked foods after partial hydrogenation to achieve heat and oxidative stability. This process, however, generates trans fats that are now excluded from food use because of cardiovascular health risks. Also present in soybean oil are the anti-oxidant tocopherols, with α- tocopherol (vitamin E) typically present as a minor component compared to γ-tocopherol. Introduction: This qualitative study investigates children’s perceptions of the influences of a Centrally Procured School Food Program on their dietary behaviours and their recommendations on how to improve the program. Methods: The observations of 208 students aged 9 to 14 years (Grades 5–8) at 21 elementary schools were collected through focus groups in 2017/18. The larger intervention consisted of a 10-week program offering daily snacks (i.e. fruit, vegetables, whole grains, dairy, meat alternatives) for elementary school children in southwestern Ontario, Canada. Results: The participants’ overall impressions of the program were positive. They noted reduced hunger, increased energy and improved nutrition. …

Preliminary research from a related VCU faculty team indicated that roughly ⅓ of all VCU students experience some level of food insecurity. Inventions to remedy this dire situation will require a more complete picture of the campus food environment. This project documented aspects of that environment. Our research team surveyed vending machines within Monroe Park buildings and facilities, along with nearby corner stores that were easily accessible to the university. Phosphorus is an important component of bodily functions and is critical for adequate growth and development. This experiment evaluated the effect of maternal phosphorus intake on the growth and health of the calves. Treatments were 1) a free-choice mineral containing no supplemental P or 2) a free-choice mineral with 4% supplemental phosphorus. Primiparous, or pregnant for the first time, crossbred Angus beef cows (n = 36) were stratified by body weight and pregnancy status (bred by artificial insemination or natural service) then assigned to pasture groups (4 groups, 2/treatment, 9 heifers/group). Although proven that nutrition can impact physical health, limited research examines the relationship between nutrition-related lifestyle behaviors, nutrition knowledge, and the prevalence of injury in university music students. The objective of this study is to evaluate nutrition-related lifestyle behaviors and self-perceived nutrition knowledge of university music students before and after a targeted nutrition education session. Childhood nutrition establishes consumption norms that affect an individual’s health over the course of their lives. However, early nutrition interventions to establish such norms are uncommon owing to the various inefficiencies associated with current methods of measuring childhood nutrition. Here, we present an IoT measuring device, called the SensiTray, which accurately tracks mealtime intake in a child-friendly and cost-effective fashion. Principal technologies underlying the SensiTray (including mass-sensing technologies, microcontrollers) are identified and analyzed, along with other design choices. The prevalence of eating disorders in athletes is higher than in the general population. Various training styles, weight periodization, and presence of eating disorder (ED) may affect energy availability. This study investigated the relationship between lifetime prevalence of ED with training, body satisfaction, and weight-control methods among elite female endurance athletes. Female runners who participated in the 2020 U.S. Olympic Team Trials Marathon completed an online questionnaire examining training volume, weight-control methods, and self-reported current or past ED. Sea turtles are essential to the health of marine ecosystems, yet nearly 90% are threatened with extinction. The unsustainable consumption of sea turtles contributes to their global decline. Because sea turtle meat is also high in heavy metals, the monitoring of sea turtle consumption is a priority for both marine conservation and public health. Despite this, sea turtle consumption was understudied along Madagascar’s eastern coastline. We used structured interviews (collected over nine years) in northeastern Madagascar to study the rural consumption of sea turtles and other marine megafauna (including dolphins, whales, and dugongs).
