Effective diabetes prevention and management relies on nutritional behaviors, thus a basic level of health knowledge is important for patients with diabetes and their caregivers in their quest to acquire acute glycemic control and minimize negative health outcomes (Ley et al., 2014). The purpose of this study was to assess the nutrition-related health knowledge of patients living with diabetes who are seen at the UNMC Sharing Clinic by use of a verbal questionnaire. This nutritional health knowledge assessment was a quantitative, prospective, survey-based study utilizing descriptive statistics. Many colleges and universities offer students access to on-campus food pantries, yet very few students utilize these services despite reporting high rates of food insecurity. Considering the importance of a healthy diet on the developing minds of young adults, it is pertinent that colleges and universities find innovative ways to reach food insecure students. The purpose of this hybrid creative-research project was to creatively address commonly cited barriers of seeking food assistance (i.e., negative stigma, embarrassment, unknown location, awareness of resource, etc.) using public art. University dining halls are understudied food environments that affect student diet quality. This study (1) assessed dining hall offerings at the University of Rhode Island (URI) using the Partnership for a Healthier America’s Healthier Campus Initiative (PAHA) criteria for healthier campus food environments and (2) evaluated student perceptions of the dining hall through a campus-wide survey (n=165). We evaluated breakfast, lunch, and dinner using spring cycle menus (16 weeks in 2019 and 4 in 2021) from two full-service dining halls totaling 29 meals in 2019, and 84 meals in 2021 to determine adherence with PAHA criteria for availability of: 1) …

The purpose of this study is to examine if we can differentiate inflammaging between sarcopenic and non-sarcopenic older adults by exploring if there are differences between biomarkers of inflammation and nutritional status in older adults with distinct differences in skeletal muscle mass, strength, and function, metabolic flexibility, and muscle tissue oxygenation. Twenty-one non-sarcopenic (mean±standard deviation, age = 73.1±6.2 yrs, n=5 males, n=5 females) and sarcopenic (age = 81.2±10.5 yrs, n=6 males, n=5 females) were categorized based on muscle mass and strength criteria according to the European Working Group on Sarcopenia in Older People. From Liability To Asset: A Large Health System’S Approach To Transforming Hospital Food, Sven Gierlinger, Bruno Tison, Nicole Giammarinaro

Historically, hospitals are infamous for poor food quality. Valuing food as a tenant of health and well-being, Northwell Health, New York’s largest healthcare system, is transforming its hospital food program to become an asset and market competition differentiator. By focusing on structure, workforce, procurement and process, Northwell has improved patient experience performance “Quality of Food” by 61 percentile rank points within three years with minimal impact on budgetary cost.

The Cooperative Extension System translates research to practice and “brings the University to the people” throughout the U.S. However, the system suffers from program duplication and is challenged to scale-out effective programs. One program, Dining with Diabetes (DWD), stands out for its dissemination to multiple states. DWD is a community-based program aimed at improving diabetes management, nutrition, and physical activity behaviors. DWD was coordinated through a national working group and implemented by state Extension systems. A pragmatic, quasi-experimental study was conducted to determine the effectiveness of the national coordination model and the overall impact of DWD. Four states reported data …

The objective of this study was to evaluate fidelity to the Dining with Diabetes (DWD) program. Data were gathered cross-sectionally in 2019 using class profile forms (i.e., checklists) containing items reflecting the core components of DWD: delivery personnel, curriculum, hands-on cooking, and goal setting. Fidelity was calculated as the proportion of core components completed as intended. Educators (N = 9) completed class profile forms for 10 complete DWD programs (i.e., all four classes). Fidelity to components of completed DWD programs and individual DWD classes was high (over 70% in each category). Overall, fidelity was high, and adaptations reported likely did …

BACKGROUND: The COVID-19 pandemic has resulted in the closure of schools and may have inadvertently resulted in decreased physical activity for youth. Emerging evidence suggests that school closures due to the COVID-19 pandemic could have hastened the inactivity of youth, possibly due to a lack of structure outside of school and increased access to sedentary activities.
OBJECTIVE: The purpose of this study was to assess changes in physical activity from pre-school closure (before the pandemic) to post-school closure (during the pandemic) among youth in spring 2020.

GiGi’s Playhouse offers free and purposeful programs for individuals with Down Syndrome from birth through adulthood. The focus of this project was development, modification, and facilitation of the GiGi University program. GiGi University is a program for adults focused on career skills, communication skills, money management, and wellness through nutrition, healthy cooking, and fitness. The supplemental nutrition program of women, infants and children (WIC) is a nationwide program designed to give women and children access to basic nutritional foods, breastfeeding services, and healthcare referrals. WIC has been shown to help prevent some diseases such as nutritional deficiencies or type two diabetes by requiring participants to attend pre- and postnatal appointments and nutritional counseling. The purpose of this honors graduation thesis is to analyze the role of nutrition in the prevention, management, and treatment of chronic diseases and to argue that clinical nutrition should be reintegrated into American medical education as a high priority subject. The thesis begins with a historical review of clinical nutrition beginning in the fifth century B.C. with Hippocrates in Classical Greece and ending in 21st century America. It is well known that good nutrition is effective in promoting optimal health and in preventing and treating disease. However, it is unclear whether this understanding is successfully being reflected in the treatment that patients are receiving from their healthcare providers in the United States. This study surveyed adult patients about their experiences in the American healthcare system regarding the treatment they’ve received from various providers, as well as their perspectives on the role of nutritional interventions in healthcare. The objective of the study was to assess and ascertain the use of the Internet and digital information seeking among students and professionals. Background: Data about physical activity report card for Ghanaian children and youth are available but reports on physical activity patterns and dietary habits of undergraduates are scarce. Material and methods: This cross-sectional study sampled 278 participants (161 males, 117 females, mean age = 20.73 ± 1.72 years). Blood pressure, heart rate, physical activity patterns and dietary habits were measured. Results: Most (83.1%) of the sample predominantly engaged in household activities. Time spent on treadmill/ cycling activities is significantly higher in females than males (P = 0.018). Day/week for high intensity sports was higher in males (P = 0.005), while household …

Proper nutrition is a key factor in physical performance, but there are also indications of an impact of dietary components on the brain function. Therefore, the aim of the study was to assess the impact of macronutrients and water on cognitive performance. Assumptions of the Mediterranean diet correlate with better global cognition, episodic memory, lower risk of cognitive impairment and neurodegenerative diseases. In turn, a high-fat and high-sugar diet shows the opposite effect. Omega-3 fatty acids could be used as a preventive tool for cognitive decline, but there is still insufficient evidence if supplementation improves cognitive functions. The proper intake …

This study aimed to analyse the status of nutrition literacy and its influencing factors amongst middle school students in Chongqing, China. “Nutrition literacy scale for middle school students in Chongqing” was used in 29 districts of Chongqing in September 2020. The scores of nutrition literacy and its' three sub-domains (functional, interactive and critical nutrition literacy) were divided into low and high groups based on their median scores.
