Abstract
Introduction: Evidence suggests poor-quality diets and high levels of stress have negative impacts on health, especially in low-income families in the southern United States. Nutrition-based food assistance programs were developed to meet nutritional needs of food insecure clients. The purpose of this scholarly project was to explore the relationship between perceived stress and diet quality among low-income families engaged with a nutrition-based food assistance program.

Human epidemiology suggests a protective effect of tomatoes or tomato phytochemicals, such as lycopene, on prostate cancer risk. However, human epidemiology alone cannot reveal causal relations. Laboratory animal models of prostate cancer provide opportunities to investigate hypotheses regarding dietary components in precisely controlled, experimental systems, contributing to our understanding of diet and cancer risk relations. We review the published studies evaluating the impact of tomatoes and/or lycopene in preclinical models of prostate carcinogenesis and tumorigenesis. The feeding of tomatoes or tomato components demonstrates anti-prostate cancer activity in both transplantable xenograft models of tumorigenesis and models of chemically- and genetically-driven carcinogenesis. …

CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

Background: Accurately assessing dietary intake can promote improved nutrition. The PortionSize app (Pennington Biomedical Research Center) was designed to quantify and provide real-time feedback on the intake of energy, food groups, saturated fat, and added sugar. Objective: This study aimed to assess the preliminary feasibility and validity of estimating food intake via the PortionSize app among adults. Methods: A total of 15 adults (aged 18-65 years) were recruited and trained to quantify the food intake from a simulated meal by using PortionSize. Objective: This study aimed to assess the impact of an online introductory college nutrition course that implements evidence-based intuitive eating (IE) concepts and principles on students’ application of IE behaviors. A secondary outcome explored the relationship between student grades and changes in IE behavior implementation. Researchers hypothesized an increase in the average use of IE practices post-intervention.
Methods: This study was a non-randomized pilot intervention using pre- and post-test surveys. Pollen nutrition is critical for the development and well-being of the honeybee. Previous studies have compared the effect of pollen and carbohydrate-only diet on honeybee physiology. The effect of a monofloral versus polyfloral diet on the African honeybee (Apis mellifera scutellata) is poorly understood. This knowledge is critical as diversity-rich habitats are being altered to less diverse environments through increased urbanization and intensified agricultural activities, particularly in sub-Saharan Africa. Bariatric or weight-loss surgery is a popular option for weight reduction. Depending on the surgical procedure, gastric changes like decreased transit time and volume and increased pH, decreased absorption surface in the small intestine, decreased exposure to bile acids and enterohepatic circulation, and decreased gastrointestinal transit time may be expected. In the years after bariatric surgery, patients will also substantially lose weight. As a result of these changes, the absorption, distribution, metabolism and/or elimination of drugs may be altered. Individuals consuming plant-based diets have shown favorable dietary behaviors and diet quality. However, differences in diet quality considering motivations to adopt plant-based (vegan, vegetarian, and semi-vegetarian) diets and nutrition literacy, are not well known. The primary objective of this study was to assess diet quality, diet motives and nutrition literacy in vegans, vegetarians, and semi-vegetarians. Sex differences are an important consideration when researching and establishing policies for nutrition and optimal health. For women's health, there are important physiologic, neurologic, and hormonal distinctions throughout the lifecycle that impact nutritional needs. BACKGROUND: Food insecurity (FI) rates in the United States are particularly high among households with children. This research set aims to analyze if high school students experiencing FI had higher risk for mental health and suicidal behaviors.
METHODS: Using combined data from 11 states that conducted the 2017 Youth Risk Behavior Survey, a total of 26,962 and24,051 high school students were used to estimate race/ethnicity and sex-stratified prevalence ratios (PRs) from Poissonregression models. A single-question was used to measure the exposure of FI and outcomes of mental health and suicidalbehaviors.

A collaborative partnership launched the Great Grocer Project (GGP) in March 2021 in Detroit, Michigan where health inequities, including deaths due to COVID-19, have historically been politically determined and informed by socially entrenched norms. Institutional and structural racism has contributed to a lack of diversity in store ownership among Detroit grocers and limited access to high-quality, affordable healthy foods as well as disparate food insecurity among Detroit residents. Food insecurity has long been a global challenge associated with negative health outcomes. The spectrum of food insecurity corresponds to a spectrum of negative health outcomes that range from kwashiorkor and marasmus to obesity and chronic disease. Introduction: Fish is an affordable animal source food that provides nutrition and serves as a source of income for many people especially women in Nigeria. Smoking and sun drying are the processing methods in practice that expose the fish products to possible contaminants which may consequentially negate their nutritive value.

Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

Quercus palustris and Quercus alba acorns are a primary component in many wild animal diets, particularly during preparation for winter. As such, they provide a natural, easily gathered food staple for wildlife recovering in rehabilitation facilities. We examined whether collection and temperature-controlled storage methods differentially affect the nutritional deterioration of crude fat in acorns to assess both caching by wildlife and to provide recommendations to rehabilitators. Background Type 2 diabetes is a major public health issue and food insecurity can affect diabetes management. Food insecurity can contribute to disrupted dietary eating patterns and decreased consumptions of a variety of foods. The aim of this observational study was to determine the difference in dietary intake between food insecure and food secure individuals with type 2 diabetes, as well as by glycemic control. Salmonids play a major role in aquaculture globally and their production is expected to increase as the human population rises and wild fish stocks decline. Sea lice infestation is the largest economic burdens to salmonid net pen aquaculture with hundreds-of-millions of dollars lost due to the treatment, labor, and loss of biomass associated with these parasitic copepods. Chemotherapeutics were originally used to treat these infestations, but their effects on nontarget species resulted in them being banned in many countries. Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet.
