Insulin-like growth factor 1 (IGF-1) is an anabolic hormone important for growth and development. However, high-circulating serum concentrations in adults are associated with increased risk of postmenopausal breast cancer. Nutritional status and specific foods influence serum IGF-1 concentrations. Breast cancer incidence is typically low in Asian countries where soy is commonly consumed. Paradoxically, soy supplement trials in American women have reported significant increases in IGF-1. Seaweed also is consumed regularly in Asian countries where breast cancer risk is low. The purpose of this project is to create a conceptual framework grounded in a caring relationship that provides nutritious, economic, and efficient noon meals to 200 to 400 homeless people at an inner city church kitchen. Awareness of the concerns of the church kitchen coordinator and the needs of the homeless population provided the motivation to explore comprehensive and effective solutions through a conceptual framework. The typical menus from the inner city church kitchen and the research articles both showed the meal programs were fairly nutritious but high in total calories and low in dairy products. In recent years, the expansion of corn-based ethanol production has resulted in an abundance and variety of co-product feedstuffs. As research with distillers co-products has evolved, findings have indicated that the value of the protein and energy content of these feeds is suitable for use in beef cattle diets. In an era of volatile feed costs, these feeds can alleviate some of the burden of high grain prices. The biggest concerns in feeding these products to beef cattle are the potential for high sulfur and phosphorus concentrations, variation in nutrient composition as it changes relative to source and season, and …

Little is known about the prevalence of dietary supplement usage among college students. Though taking dietary supplements can cover nutrient shortages not achieved through diet alone, it is often recommended to improve the quality of one's diet rather than rely on supplements. The main objective of this research study was to determine the prevalence of dietary supplement use among college students in relation to a variety of demographic and lifestyle variables, and to find out what portion of total nutrient intake is supplied by supplements. Childhood obesity has become a worldwide epidemic with health and economic implications. In response to the epidemic, Congress passed the Child Nutrition and WIC Reauthorization Act of 2004. The act is an unfunded mandate requiring school districts and schools that participate in the National School Lunch Program to develop and implement a Local School Wellness Policy. The National Alliance for Nutrition and Activity or NANA developed a model wellness policy as a guide for schools in the development of a Local Wellness Policy. Hunger in West Virginia has long been considered a problem that stems from high poverty rates and rural low access communities. The purpose of this study is to assess the stability of emergency food providers in economically distressed counties in West Virginia. Data was collected from Clay and Webster counties, of which Clay is considered low access and Webster is severely low access or a food desert. Background. More than 12.5 million children in the United States are overweight. More specifically, in 2007, 31% of 9th grade students in West Virginia were overweight. Healthy People 2010 identified obesity as among the top ten health issues and set a goal to reduce the proportion of children and adolescents who were overweight to 5%. This goal was not attained because most current interventions to prevent and treat obesity have not been effective in changing the weight status of children and adolescents. In recent years there has been considerable interest in describing and explaining increases in the prevalence of overweight and obesity. The quality of the nutrition environment, including the availability and price of healthy foods options, has been suggested as a likely contributor. This project was developed to investigate the relationship between weight status and the nutrition environment in school children in two West Virginia counties. The Nutrition Environment Measures Survey (NEMS) was conducted in Monongalia and Marshall Counties, WV. Objective: The objectives of this study were to evaluate the demographic data of the study population, compare nutrition knowledge and retention in Hispanic pregnant women who were newly diagnosed with gestational diabetes (GDM) or with a history of GDM at time of GDM diagnosis and prior to delivery, and determine if the Sweet Success education program’s curriculum was effective in improving overall knowledge in pregnant women with GDM.

Design: A quasi-experimental design was used with a convenience sample.

At the 2006 meeting of the Asociación de Hemato-Oncología Pediátrica de Centroamerica y Caribbe, local nurses recognized food safety as one of the main problems they dealt with daily. Based on that information, food safety education program was developed. The program consisted of development, evaluation, distribution of the booklet “Alimentación del niño con cáncer [Feeding the child with cancer]”, training of nurse educators to provide food safety education using the booklet, and testing of its efficacy. The influence of feeding juvenile female leopard tortoises (Geochelone pardalis, n=18) a commercially available, complete, extruded feed three (3) or seven days (7) per week on dry matter and digestible energy intake, apparent digestibility of dry matter, organic matter, gross energy and fiber fractions, animal body weight and measurements, digesta transit time, rate of passage, and indigestible fill was evaluated.  Both feeding frequencies are commonly practiced with captive tortoises. When fed 7 compared to 3 days per week, dry matter and digestible energy intake was greater.  Tortoises gained more g BW, but not when adjusted per kg initial …

Purpose: The purpose of this project was to describe primary care physician adherence to National Heart Lung and Blood Institute (NHLBI) Clinical Guidelines on the Identification, Evaluation, and Treatment of Overweight and Obesity in Adults (1998) and to explore patient characteristics associated with physician assessment and management behaviors. Patient characteristics included age, sex, race, BMI, associated disease risk, and Medicaid coverage.

The prevalence of childhood overweight and obesity in the United States has prompted researchers to examine the factors that contribute to children’s food choices and consumption. Schools provide ample opportunities to teach children healthy eating habits, as well as create eating environments that are conducive to healthy eating behaviors. The National School Lunch Program (NSLP) provides federally assisted meals to millions of children every day and the assessment of the NSLP provides an opportunity to examine the school-eating environment.
