In our fast paced world, using technology allows us to connect with people and assist them in developing healthier lifestyles within their time limits due to families, work, and other responsibilities. The goal of our project was the development of online, technology-based, nutrition, health, and fitness education challenges using social media as a means of helping consumers develop healthy lifestyle changes. Participants completed preassessments and postassessments to determine overall program impact and to self-report perceptions of knowledge gained and practice/behavior change. Results from the challenges indicated participants gained knowledge on nutrition, health and fitness topics while making strides towards lifestyle …

Background: Vitamin D insufficiency and deficiency have been documented throughout the world, correlating with disease processes including: cancers, bone disorders, autoimmune diseases, and cardiovascular disease. Factors affecting people of Southwest Alaska, such as northern latitude (above 34ºN), low dietary intake of vitamin D, reduced sun exposure, high body mass index, and darker skin pigmentation increase risk for Serum 25-hydroxyvitamin D [25(OH)D] deficiency and insufficiency.
Purposes of the Study: To evaluate the incidence of 25(OH)D insufficiency and deficiency in Southwest Alaska, differences in deficiency rates between Alaska Natives and non-Natives, and seasonal trends in 25(OH)D levels.

As part of a Science, Technology, Engineering, and Mathematics (STEM) Service-Learning grant, a service-learning project was integrated into two college programs. The overall purpose of this project was to address identified community needs concerning nutrition, health-related issues, food security, and food sustainability. First-year college students developed and implemented a community nutrition survey, and created a list of community resources. These students then shared their survey results and overall impressions of the experience with public health nursing students, who then addressed community needs through a variety of service-learning interventions. INTERGROWTH-21st is a multicentre, multiethnic, populationbased project, being conducted in eight geographical areas (Brazil, China, India, Italy, Kenya, Oman, UK and USA), with technical support from four global specialised units, to study growth, health and nutrition from early pregnancy to infancy. It aims to produce prescriptive growth standards, which conceptually extend the World Health Organization (WHO) Multicentre Growth Reference Study (MGRS) to cover fetal and newborn life. The African site in the INTERGROWTH-21(st) Project was Parklands, a wealthy suburb of Nairobi, Kenya, with a largely middle-to-high socio-economic status population. There are three hospitals with obstetric units in Parklands, with approximately 4300 births per year. The Newborn Cross-Sectional Study (NCSS) sample was drawn from all three hospitals, covering 100% of births in this target population. The Fetal Growth Longitudinal Study (FGLS) sample was recruited from antenatal clinics serving these hospitals, using the eligibility criteria in the INTERGROWTH-21(st) protocol. Special activities to raise awareness of the study included securing media coverage and distributing leaflets in antenatal clinic waiting rooms. …

Chokeberry (Aronia melanocarpa, Aronia prunifolia, Aronia arbutifolia) is notable for its high phytochemical content, particularly anthocyanins and proanthocyanidins. Aronia berries of different genotypes may vary in their polyphenol content, so it is important to characterize these compounds based on species, and to determine whether or not aronia fruit color correlates with phytochemical content. Using normal-phase HPLC, UPLC-MS, and the DMAC and Folin-Ciocalteu assays, polyphenols in twelve different aronia accessions were quantified and characterized based on fruit color. Significant diversity was observed in anthocyanin content among berries of different colors, with black aronia berries (mean = 10.47 mg/g DW) …

The obesity epidemic is steadily increasing and affecting all age groups. Obesity rates among young adults are scarcely reported but merit special attention as being overweight during young adulthood will likely result in being overweight or obese throughout adulthood. Because college students are still forming lifestyle patterns, the university setting is ideal for intervention and educating young adults on the importance of developing and maintaining healthy behaviors. This study evaluated whether participation in a 16-week first-year college seminar cooking course increased students’ self-efficacy in food preparation skills and dietary behaviors. Omega-3 polyunsaturated fatty acid (n-3 PUFA) consumption has increased through diet and supplementation due to reports of health benefits. The objective of this study was to determine whether different n-3 PUFA sources play a role in lipid metabolism by altering lipogenic gene expression, serum lipids and lipoproteins, and inflammation. Young (aged 28 days) female Sprague-Dawley rats were assigned to one of six diets: corn oil (CO, control), flaxseed oil (FO), krill oil (KO), menhaden oil (MO), salmon oil (SO), or tuna oil (TO). qPCR was used to analyze relative gene expression. Obesity is a main health concern and leads to many other health complications. Conjugated linoleic acid (CLA) has been shown to cause a reduction in obesity in several species. CLAinduced body fat loss is enhanced when mice are fed coconut oil (CO). Many Africans living with HIV/AIDS also suffer from malnutrition. Together, HIV and malnutrition greatly compromise the immune system of an individual, with each condition increasing the effects of the other. This field study examines Maasai in the Arusha region of Tanzania where approximately 5.6% of the population is infected with HIV/AIDS and 45% of children exhibit stunted growth, indicating chronic malnutrition within the population. Cultural factors including gender inequality, knowledge levels, and traditions associated with Maasai (the predominant tribe in the Arusha region) were analyzed in their contributions to malnutrition and HIV. Many variables contribute to the rising prevalence of children being overweight and obese, one being poor nutrition and the lack of a balanced diet. Proper nutrition helps children to grow and develop normally, as well as lowers the risk of developing chronic problems such as cardiovascular disease, coronary heart disease, and certain cancers later in life. Conducted alongside an applied behavioral intervention to increase consumption of fruits and vegetables, a behavioral economic evaluation of demand curves was administered to students in the fifth through eighth grades. Objectives: Athlete’s nutritional habits and knowledge can directly affect their performance. The purpose of this study is to investigate the nutritional habits and knowledge of the Division I collegiate football player.
Methods: The participants of this study are male Division I college football players at Utah State University. The athletes included 45 players ranging from 18-26 and include freshman through seniors.
Results: Over eighty six percent of the athletes were unaware that a nutritionist was readily available to them. Sixty percent of the athletes were interested in meeting with the nutritionist. Forty percent of the athletes ate at a fast-food …

This dissertation addresses the need for valid measures of dietary intake for use in studies of chronic disease risk in the Yup'ik population of Southwest Alaska. The Yup'ik people have experienced dietary changes over the past century, as consumption of traditional foods has been increasingly supplemented or replaced by market-purchased foods. Determining whether this dietary change is associated with increases in chronic disease risk is important for making nutritional recommendations for disease prevention. This research study analyzed the sources of nutrition blog information as measured by frequency and type of sources used by nutrition bloggers. Since the use of online resources for finding health information has become more prevalent, it is important to further research the topic for the purpose of better understanding how our nutrition agenda is set by nutrition bloggers. Focusing on 20 nutrition blogs, the study content analyzed 3,156 blog posts during a one-year period from September 1, 2011 to August 31, 2012, yielding 5,263 sources. While most of the obesity prevention interventions focus on the traditional school day, the afterschool setting should not be overlooked. A pilot study was conducted using KidQuest, a traditional classroom nutrition and physical activity intervention for early adolescents ages 10 to 12 based on the social cognitive theory, in an afterschool setting. For a majority of patients with advanced heart failure, there is a need for complementary, non-pharmacologic interventions that could be easily implemented by health care providers to provide palliative care. Three major pathologic pathways underlying heart failure symptoms have been identified: fluid overload, inflammation, and oxidative stress. Each year, approximately 2.8 million adults die from complications related to obesity (World Health Organization, 2011). One in three adults aged 20 years or older is obese, and 6% are morbidly obese. This problem is increasing at an alarming rate in young adults, and 20.5% of college students are classified as being overweight based upon their body mass index (BMI) (Adderley-Kelly, 2007). Obesity has reached epidemic proportions in the United States. Almost two-thirds of
our adult population is overweight, and more than one-third are obese. The
obesity rate is twice what it was in 1970. Most local health departments try to
address this problem with nutrition and weight control clinics, but these clinics are often
underutilized. This study examined the effects of nine independent variables on a person's
inclination to use a nutrition/weight control clinic at ·a local health department in one of Utah's

Background: The exclusion of participants with invalid accelerometry data (IAD) may lead to biased results and/or lack of generalizability in large population studies. The purpose of this study was to investigate whether demographic, behavioral, and biological differences occur between those with IAD and valid accelerometry data (VAD) among adults using a representative sample of the civilian noninstitutionalized U.S. population. Methods: Ambulatory participants from NHANES (2003-2004) who were 20-85 years of age were included in the current study and wore an ActiGraph 7164 accelerometer for 7 days.
