Business Plan For A Korean Fine-Dining Restaurant In Las Vegas, Jihoon Kim
Business Plan For A Korean Fine-Dining Restaurant In Las Vegas, Jihoon Kim
UNLV Theses, Dissertations, Professional Papers, and Capstones
The Korean food industry is enjoying international attention and growth as the Korean government’s globalization efforts spur the development of Korean restaurants in international markets such as the United States (Korean Food Foundation, 2013). Korean cuisine is being branded as healthy food that harmonizes nutrition and flavor (Jang & Ha, 2009). Now is the time to start new Korean restaurants in the U.S.’s ethnic cuisine market. This paper provides a business plan focusing on a fine-dining Korean restaurant operation in the Las Vegas market, which is currently devoid of such an operation.
Evaluation Of The Relationship Between Nutrition Knowledge And Disordered Eating Risk In Female Collegiate Athletes, Amy L. Miracle
Evaluation Of The Relationship Between Nutrition Knowledge And Disordered Eating Risk In Female Collegiate Athletes, Amy L. Miracle
UNLV Theses, Dissertations, Professional Papers, and Capstones
Involvement in collegiate sports among female athletes is at an all-time high with approximately 198,000 currently participating, (National Collegiate Athletic Association, 2012). With this increase in female participation in collegiate sports, the pressures of sport participation and academics lead some women to engage in harmful eating behaviors. These harmful eating behaviors may lead to the development of disordered eating (C. Johnson, Powers, & Dick, 1999; Quatromoni, 2008; Reel, SooHoo, Petrie, Greenleaf, & Carter, 2010; Reinking & Alexander, 2005). Many factors have been identified as contributing to the development of disordered eating but nutrition knowledge or lack thereof, has yet to …
Improving Opportunities For Small Flock Egg Production And Proper Evaluation Of Glucanase For Commercial Poultry, Angela Elsie Lamp
Improving Opportunities For Small Flock Egg Production And Proper Evaluation Of Glucanase For Commercial Poultry, Angela Elsie Lamp
Graduate Theses, Dissertations, and Problem Reports (ETD)
Consumers of pastured hen eggs have justified paying an associated premium price because they perceive animal welfare, sustainability, and nutrition are enhanced compared to conventionally produced eggs. The objective of Study 1 (Chapter 2) was to implement practical management strategies to increase eicosapentaenoic acid (EPA) and docosahexaenoic acid ( DHA) composition of eggs (Experiment 1) and to determine if the same diet formulation would produce an enhanced EPA and DHA egg composition and effect hen health when pasture access and hen breed varied (Experiment 2). For Experiment 1, four dietary treatments were utilized: 1) Basal, 2) Basal + 0.5% Sardine …

Carbohydrate Mouth Rinse Improves 1.5 H Run Performance: Is There A Dose-Effect?, Benjamin F. Wright, Glen Davison
International Journal of Exercise Science
International Journal of Exercise Science 6(4) : 328-340, 2013. There is a substantial body of recent evidence showing ergogenic effects of carbohydrate (CHO) mouth rinsing on endurance performance. However, there is a lack of research on the dose-effect and the aim of this study was to investigate the effect of two different concentrations (6% and 12% weight/volume, w/v) on 90 minute treadmill running performance. Seven active males took part in one familiarization trial and three experimental trials (90-minute self-paced performance trials). Solutions (placebo, 6% or 12% CHO-electrolyte solution, CHO-E) were rinsed in the mouth at the beginning, and at 15, …
Improving Nutrition For Mechanically Ventilated Patients, Corinne Schultz Ellis
Improving Nutrition For Mechanically Ventilated Patients, Corinne Schultz Ellis
International Nursing Research Congress (INRC)
Session presented on: Tuesday, July 23, 2013:
Although nutrition plays an important part in positive patient outcomes, many studies have shown that Intensive Care (ICU) patients receive inadequate nutrition. Ventilator dependent ICU patients receive even less nutrition. Impaired nutrition is linked to impaired immune response, impaired ventilatory drive and weakened respiratory muscles. This can lead to prolonged dependence on respirators, increased length of stay, and increased infectious morbidity and mortality. Other complications of poor nutrition include impaired tissue healing, increased physiological stress, and an increase in hospital acquired infections and ulcers. An evidence-based practice project was implemented consisting of the …
Compositional Analysis Of Carbohydrates Of A Family Of Legumes, Arvind Raghothama, Bruce Hamaker
Compositional Analysis Of Carbohydrates Of A Family Of Legumes, Arvind Raghothama, Bruce Hamaker
The Summer Undergraduate Research Fellowship (SURF) Symposium
Legumes, most commonly identified as beans or lentils, provide a good source of both protein and carbohydrates. Many legumes contain the polysaccharide arabinogalactans, classified as dietary fiber and have unique functional properties in foods. However, these, and other plant polysaccharides have not been well characterized. A preliminary collaborative study between Florida State University and the Whistler Center at Purdue indicated that isolated legume arabinogalactans appear to have high texturizing capability through formation of viscoelastic structures. Their soluble property may also present unique fiber nutritional trait. These properties of arabinogalactans and their variability among different legumes are yet to be analyzed. …
Cultural And Western Influences On The Nutrition Transition In Thailand, Katherine Craven, Dr. Steven Hawks
Cultural And Western Influences On The Nutrition Transition In Thailand, Katherine Craven, Dr. Steven Hawks
Journal of Undergraduate Research
The impact of economic development on nutrition and dietary changes in transitional countries has been well researched. It has generally been found that there is a positive correlation between economic development and negative nutritional transitions. As a country becomes economically wealthier, its population tends to exhibit unhealthy eating and dieting behaviors. Populations with little history of obesity and diet-related non-communicable diseases begin to show increased occurrence of such problems, demonstrating a progression within the nutrition transition model (figure 1). However, the impact of western influences and culture on the nutrition transition has been less studied.

Master's Theses and Doctoral Dissertations
Paleolithic nutrition can optimize serum lipids in adults with hyperlipidemia who have been on a heart-healthy diet based on the current recommendations by the Academy of Nutrition and Dietetics (the Academy) or the American Heart Association (AHA). Twenty subjects (10 male and 10 female) age 40 to 62 were selected based on the criteria of a diagnosis of hypercholesterolemia. Subjects were not taking any cholesterol lowering medication and had followed a calorie-controlled diet, based on either the dietary principles of the Academy or the AHA, for at least four months followed by a Paleolithic diet for four months. Multivariate analysis …

Quality Of Olive Oils Available Locally: Chemical, Sensory And Market Investigations, Madeleine M. Gould
Quality Of Olive Oils Available Locally: Chemical, Sensory And Market Investigations, Madeleine M. Gould
Honors Theses and Capstones
Olive oil is a high quality food that comes at a high-quality price. Extra virgin olive oils are obtained through specific methods created to extract the highest quality oil. The world market of olive oil is rife with accusations of adulteration and false claims regarding quality. These are serious accusations, since adulteration results in lower quality oils. True extra virgin olive oils contain higher levels of beneficial compounds including antioxidant phenolic compounds. Specific mechanisms have been identified in which phenolic compounds in the olive oil matrix exhibit antioxidant activity contributing to the prevention of cancer and cardiovascular disease, among other …
Nutrition Among Pre- And Post-Natal Argentine Mothers, Camber Cooper, Dr. Erin Maughan
Nutrition Among Pre- And Post-Natal Argentine Mothers, Camber Cooper, Dr. Erin Maughan
Journal of Undergraduate Research
Tucumán is the poorest province in the country of Argentina, made worse by recent economic turmoil. Maternal nutrition is not only important for her own health, but it is also crucial to her developing fetus, both before and during pregnancy, as all nutrients the infant receives during this time come solely from the mother (Lowdermilk & Perry, 2004). Considering the importance of maternal nutrition, reports of malnutrition in Argentina cause particular concern for pregnant and nursing women. According to Argentina’s National Institute of Censuses and Statistics (n.d.), infant mortality across the country in 2002 was 16.8 per 1,000 live births, …

The Association Between Expectancies For Success And In-Season Dietary Practices Among A Group Of Female High School Softball Players, Elizabeth M. Crowley, Dr. Lora Beth Brown
Journal of Undergraduate Research
Coaches and trainers need to be aware of the dietary practices of their athletes and strive to encourage their players to engage in healthy and proper nutrition. The purpose of this study was twofold: 1) assess the dietary and nutrition practices of a group of female high school basketball players, and 2) to determine if expectancies for achievement and success are associated with better eating practices. Understanding the latter, may be useful in helping high school coaches devise ways to motivate players to improve their eating habits.
Project Sun Bear Nutrition, Alicia Anderson
Project Sun Bear Nutrition, Alicia Anderson
Journal of Undergraduate Research
Sun bears (Helarctos malayanus) are a critically endangered species. In this study, we will test stable isotope levels of D/H, 18O/16O, and 34S/32S that are assimilated in sun bear hair, feces, and urine to determine if consumption of mealworms, the larval stage of Tenebrio molitor, or house crickets, Achetus domesticus, can be differentiated isotopically by measuring sulfur, oxygen, and hydrogen isotopes in the bear’s substrates. We started by collecting food and hair samples from the different bears in the study in order to establish a baseline isotope ratio that we can compare with our future studies. In order to acquire …

Factors That Influence A Woman’S Choice To Breast-Feed, Emily Lippincott, Dr. Renata Forste
Factors That Influence A Woman’S Choice To Breast-Feed, Emily Lippincott, Dr. Renata Forste
Journal of Undergraduate Research
Breast-feeding is the healthiest way for a mother to ensure that her newborn child gets the best nutrition possible; in addition, breast milk provides maternal antibodies to the child that are highly effective in preventing disease (2). Hence the slogan “Breast is Best” was created to encourage mothers to breastfeed their children; unfortunately, there are still a larger number of women who have resisted this message and continue to choose other methods of feeding. For instance, white women are two times more likely to breast-feed than their black counterparts, and college educated women are three times more likely to breast-feed …

Overcoming Barriers To Local Food Access: A Case Study, Brittany Ryan
Overcoming Barriers To Local Food Access: A Case Study, Brittany Ryan
Masters Theses & Specialist Projects
This thesis focuses on the idea that food insecurity and access are real issues in the lives of many Americans. Simply stated, food insecurity is when a person does not have enough food to eat or does now know where his/her next meal is coming from. More importantly when looking at food insecurity is the realization that healthy, local food access is even more prevalent an issue – with increasingly more under-resourced individuals and families being food insecure and unhealthy at the same time. This thesis includes a literature review on diet and nutrition in the United States, a chapter …

Preventive Nutrition In Nazi Germany: A Public Health Commentary, Basil H. Aboul-Enein Msc, Mph, Ma
Preventive Nutrition In Nazi Germany: A Public Health Commentary, Basil H. Aboul-Enein Msc, Mph, Ma
Journal of Health Ethics
Nazi medicine invokes images of horrific experiments carried out by SS (Schutzstaffel) doctors like Josef Mengele in the concentration camps. Against this background of atrocity visited on some populations, the contributions made by Nazi public health activists and food philosophers were considered one of the most aggressive public health movements in the world. Nazi public health promotion and education were involved in activities that we might today view as socially responsible within the fields of preventive medicine. The dietetic sciences may be regarded as one of the least examined aspects of public health during the period of the Third Reich. …

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research
Introduction: Obesity has exponentially increased each decade, with approximately one third of the adult American population obese and another one third overweight. More startling is that these trends are rising in children as well. With economic, health, social, mental, and emotional consequences, childhood obesity has quickly risen as a significant issue to tackle. Increases in fast food consumption have been linked with overweight status, and home cooked meals are slowly becoming part of the past. The adolescent time period, in which children are slowly gaining more autonomy and conducting their activities independent from their parents, is an optimal time …
