Factors Influencing Latino Participation In Community-Based Diabetes Education, Sarah L. Francis, Amber Noteman, Ruth Litchfield
Factors Influencing Latino Participation In Community-Based Diabetes Education, Sarah L. Francis, Amber Noteman, Ruth Litchfield
Journal of Extension
An Extension diabetes program (DP) was revised for Latinos; however, participation was limited. Factors influencing low participation rates were examined. Five Latinos interested in the DP participated in a focus group discussion. Transcripts were analyzed for themes. Preferred education programs were multi-session, local, group classes led by an engaging teacher during the summer. Participants learned of the DP through friends and Extension; preferred marketing strategies were Spanish radio, local health clinics, and Spanish-print media. Attendance barriers included scheduling conflicts. Limited use of culturally preferred marketing and scheduling conflicts were likely barriers. Culturally appropriate programs should use culturally preferred marketing strategies …

Parental Feeding Behavior: Influences On Elementary Children's Health, Cydni Martin, Jennifer Paquin, Helen W. Bland
GS4 Student Scholars Symposium
The purpose of this study was to assess the nutrition and physical activity of children. The hypothesis was that parental feeding styles will influence the healthy eating habits and physical activity among children. Childhood obesity has been called one of the most serious public health challenges of the 21st century (World Health Organization, n.d). In the past 30 years, childhood obesity has more than doubled in children and tripled in adolescents (Centers for Disease Control and Prevention, 2013). The research design used was a quantitative, descriptive, non-experimental, self-reported study in which a 27-question survey measured the parents’ child feeding behavior …
Asset Holdings And Undernutrition Of Young Children: Evidence From China Health And Nutrition Survey, Minchao Jin
Asset Holdings And Undernutrition Of Young Children: Evidence From China Health And Nutrition Survey, Minchao Jin
All Theses and Dissertations (ETDs)
Undernutrition is an underlying determinant of 45% of all childhood deaths annually, resulting in 3.1 million deaths to children less than five years globally (Black et al., 2013). The adverse effects of undernutrition, especially chronic undernutrition, could cause impaired physical growth, mental development retardation, low productivity and poverty during adulthood, and undernutrition of next generation. Worldwide, over 200 million children are undernourished (Black et al., 2013). Thus, there is an imperative to identify effective preventive actions or interventions for child undernutrition. Studies have documented links between undernutrition and low income, but few has tackling the causation from assets to child …

White-Tailed Deer (Odocoileus Virginianus) Population Dynamics In A Multi-Predator Landscape, Jared Fitzgerald Duquette
Theses and Dissertations
Indices of white-tailed deer (Odocoileus virginianus) abundance in the western Upper Peninsula of Michigan suggested the population declined 40% from the previous 5 year mean following 2 consecutive severe winters in the mid-1990s and has not since increased in population size. I collected estimates and assessed biological and environmental covariates of survival and recruitment of fawns (< 1 year old) and age-specific reproductive and survival rates of adult females (> 1.6 years old) in the southwestern Upper Peninsula of Michigan from 2009–2011. Reproduction did not appear to regulate population growth, as 92 percent of females were pregnant. Annual survival of adult females was 70 percent across years, but poorer annual survival of fawns …

Nutrition, Appetite And Weight Loss In Elders Living In Long-Term Care Facilities, Karene Marie Goodman
Dissertations
Abstract Elders living in long-term care facilities often experience weight loss. Weight loss in elders has been shown to increase their risk of death. Existing research has identified numerous factors associated with appetite and weight loss in elders. Dementia, depression, acute and chronic illness, and medications have all been identified as potential causes of decreased appetite and weight loss in elders. Only a few nutritional and appetite assessment tools exist, and these tools are not widely used in long-term care facilities. The purpose of this descriptive study was to validate the Simplified Nutritional Appetite Questionnaire (SNAQ), an appetite assessment tool …

Examining The Influence Of Farmers' Market Motivations On Access To Healthful Foods And Business Opportunities For Farms, Rachel K. Ward
Electronic Theses and Dissertations
Farmers’ markets are increasingly promoted as mechanisms for improving access to healthful foods for low-income households, as they are relatively inexpensive to establish and they can provide affordable food for low-income households by offering Supplemental Nutrition Assistance Program Electronic Benefit Transfer (SNAP/EBT). SNAP/EBT at markets also expands revenue opportunities for participating farmers. Market mangers provide a critical role in overseeing SNAP/EBT at markets and influencing business opportunities for farmers. Using a mixed-method approach, this study aimed to evaluate how managers’ motivations influence SNAP/EBT availability and participation at markets and business opportunities for small- and moderate- sized farms.

This study aimed to determine the relationship between mindful eating habits and yoga practice in terms of how they are related to dietary quality. To determine the relationship between these factors, a 51-item survey was developed and distributed to a yoga studio in Syracuse, New York. The survey asked for information on typical yoga practices, mindful eating habits and dietary habits using a brief food frequency questionnaire. The responses from …
The Impact Of Nutrition And Feeding Time On The Regulation Of Gene Expression In The Central Circadian Clock Of Drsosophila Melanogaster, Arwa Diab
Theses and Dissertations
The circadian clock plays an essential role in most organisms by allowing their adaptation to the daily environmental changes mainly light/dark cycles and also temperature. Circadian rhythms persist in constant conditions indicating an auto regulatory molecular circadian clock. Here, we investigated the possibility that the circadian clock of Drosophila can also be entrained by scheduled feeding. Cycles of 12 hours feeding and 12 hours starvation could entrain the molecular circadian oscillation in key pacemaker neurons of Drosophila. Clock proteins CLOCK (CLK) and PERIOD (PER) showed a 24 hour oscillation in the small and large ventral lateral neurons after entrainment by …

Growing Roots: Gardening As A Means To Mitigate Urban Poverty And Its Symptoms, Maeve Bassett
Growing Roots: Gardening As A Means To Mitigate Urban Poverty And Its Symptoms, Maeve Bassett
2014 Student Theses
Urban gardening has become a very popular trend in the last few years in both affluent neighborhoods as a form of relaxation and in impoverished areas as a form of hunger relief. In impoverished areas, urban gardens are usually exclusively advertised as a solution to limited food access; however, there is a naïve belief that these gardens are effective forms of mass food production. Presently, these gardens are not productive enough to globally effect food production and the environment. However, to the communities surrounding the gardens, the effects are immense. Urban gardens are cheap and effective solutions for many of …

The Examination Of Healthy Eating Across Cultures: An Existential Phenomenological Approach, Sarah K. Simpson
The Examination Of Healthy Eating Across Cultures: An Existential Phenomenological Approach, Sarah K. Simpson
Honors College Theses
Adhering to a healthy eating plan has been a topic of discussion across World regions. Moreover, Americans often attempt to mimic the eating habits of other regions of the world, such as the Mediterranean or Eastern Asia, in an attempt to live a long and healthy life. Satia et al., (2000) suggest that healthy eating perceptions can be influenced by food and beverage exposure, family norms, preparation methods, and geographic locations. Although this is the case, little research has been found which has examined healthy eating perceptions across regions from a qualitative perspective. Thus, the purpose of this study is …

Diet And Exercise Interventions Following Coronary Artery Bypass Graft Surgery: A Review And Call To Action, Garrett N. Coyan, Katherine M. Reeder
College of Nursing Faculty Publications
Coronary artery bypass graft (CABG) surgery has been used for the treatment of coronary artery disease (CAD) for approximately 50 years, and has been performed on millions of people globally. However, little is known about the impact of diet and exercise on long-term outcomes of patients who have undergone CABG surgery. Although clinical practice guidelines on the management of this patient population have been available for approximately 2 decades, evidence regarding secondary prevention behavioral interventions, lifestyle modifications and self-management to slow the progressive decline of CAD, reduce cardiac hospitalizations, and prevent reoperation remains virtually absent from the literature. Diet and …

Zoos provide both experiential and educational opportunities for the general public to learn about animals found in a variety of habitats around the world. A successful zoo must provide a safe and enjoyable environment for the visitors, in addition to the species living within the enclosures. Animal husbandry and welfare are crucial aspects to which close attention must be paid, and zoos have a responsibility to attempt to approximate the captive species’ natural habitats and life histories. An essential part of maintaining a captive zoo animal’s health and wellbeing is providing the animal with an appropriate diet. In addition to …
