The Healthy, Hunger-Free Kids Act And High School Obesity, Derek Grills
The Healthy, Hunger-Free Kids Act And High School Obesity, Derek Grills
Walden Dissertations and Doctoral Studies
United States high school student obesity rates have doubled in the past 30 years to 13%, threatening the health of millions of adolescents. To mitigate the epidemic, Congress passed the Healthy, Hunger-Free Kids Act (HHFKA) in 2010, which mandated significant changes to school nutrition and physical education. From a public policy perspective, the HHFKA changed school nutrition and exercise policy to affect obesity rates by changing intake and energy expenditure at school, though no study using national-level data examined this relationship. As such, the purpose of the study was to examine whether HHFKA policy compliance had a statistically significant effect …

Observations And Teachers' Perceptions Of The Implementation, Benefits, And Challenges Of Breakfast In The Classroom, Dixie Shaffer
Walden Dissertations and Doctoral Studies
The federal government established nutrition assistance programs such as the School Breakfast Program and school districts have implemented Breakfast in the Classroom (BIC) to improve participation rates, yet millions of low-income children do not partake in these programs. Thus, many school districts are failing to meet the nutritional needs of the low-income population, which can have negative effects on a child's healthy development. The purpose of this qualitative case study was to observe and explore teachers' perspectives regarding school breakfast implementation in a small school district in the Mid-Atlantic region of the United States. Research questions examined experiences with implementation, …

Childhood Nutrition And Lifestyle In Owensboro, Kentucky, Mckenzie J. Mattingly
DNP Projects
According to the CDC, childhood obesity is now one of the leading health problems in the United States. Thirty-five percent of adults in the United States are obese. Kentucky is the 12th most obese state for adults. and the 7th most obese state for children. The State of Obesity: Better Policies for a Healthier America, states that Kentucky’s adult obesity rate is currently 31.6 percent. This is up from 21.7 percent in 2000 and 12.7 percent in 1990. Primary care providers must work to help prevent these numbers from continuing to climb. Since our population of children who are overweight …
Improving Nutritional Status In The Hematologic Oncology Population, Mary A. Malone
Improving Nutritional Status In The Hematologic Oncology Population, Mary A. Malone
DNP Projects
Background: Patients undergoing treatment for both solid tumor and hematologic malignancies experience numerous symptoms that greatly affect their nutritional status. Malnutrition can have a negative impact on oncology patient outcomes. There is a reduced response to treatment, reduced survival and quality of life. Early and consistent interventions have proven beneficial in the oncology population.
Most hematologic cancer patients have good nutritional health. However, as their treatments intensify, side effects compared to their solid tumor counterparts can adversely affect nutrition. Interventions, consisting of total parenteral or enteral nutrition are initiated but only after oral intake has been impeded for 2-3 days. …

The Alpha-Glucosidase Inhibitor Acarbose As A Calorie Restriction Mimetic To Modify Metabolic Outcomes In Mice, Rachel Ann Brewer
All ETDs from UAB
Age-related diseases continue to be a leading cause of death. One of the only replicable methods proven to decrease age-related morbidity and mortality in multiple species is calorie restriction (CR). CR is difficult for human populations to implement, and has a number of associated risks and side effects. A CR mimetic could provide the healthspan- and lifespan-extending benefits of CR without the limitations. Acarbose (ACA), an α-glucosidase and α-amylase inhibitor approved to treat type 2 diabetes in humans, was recently identified as able to extend lifespan in healthy mice. The purpose of this research was to determine the effects of …
The Influence Of Diet Composition, Plant Defensive Chemicals, And Winter Severity On The Nutritional Condition Of A Freeranging, Generalist Herbivore, Grace L. Parikh
The Influence Of Diet Composition, Plant Defensive Chemicals, And Winter Severity On The Nutritional Condition Of A Freeranging, Generalist Herbivore, Grace L. Parikh
Dissertations, Master's Theses and Master's Reports - Open
Herbivory requires animals to manage intake of toxic phytochemicals. Detoxification and excretion of these chemicals prevents toxicity, but is energetically expensive. I investigated the relationship between investment in detoxification and nutritional condition for moose on Isle Royale National Park (Alces alces) during winter, using urinary indices from urine samples collected in snow. The ratio of urinary urea nitrogen:creatinine is an indicator of nutritional condition, and the ratio of glucuronic acid:creatinine is an indicator of investment in detoxification. Nutritional condition declined with greater investment in detoxification. An alternative means of managing defensive chemical intake is to diversify the diet. Microhistological …

Examining The Interplay Of Diet Composition, Cardiometabolic Diseases, And Economics, Kenneth Patton Kell
All ETDs from UAB
Despite the invaluable contributions that both randomized controlled trials and longitudinal studies have made to our understanding of the relationships between diet and cardiovascular disease (CVD), a comprehensive understanding of these relationships does not yet exist from birth to death. Furthermore, the longest running of these longitudinal studies have not included a representative portion of racial minority participants. Lastly, given the financial impacts of CVD, as well as how socioeconomic status (SES) can influence diet, the interplay between these three merits consideration. Therefore, the objective of this dissertation was to evaluate the associations between diet and cardiovascular disease (CVD): 1) …

Important considerations for the development of sea urchin aquaculture will include understanding nutrition and feed management. These reported investigations contribute to knowledge of dietary protein and carbohydrate requirements in Lytechinus variegatus and feed management strategies. The first evaluation of economic feasibility of sea urchin aquaculture as related to feed costs is presented and the geometric framework (GF) to assess nutrient intake targets is first applied to cultured aquatic organisms to yield recommendations for nutrient balancing in formulated urchin feed. Data- derived models for dietary protein and carbohydrate intake predict increased rates of growth and production among urchins fed diets containing …

Reducing Childhood Obesity In America Through National Legislation, Sailee A. Joshi
Reducing Childhood Obesity In America Through National Legislation, Sailee A. Joshi
UROP Posters
According to the Harvard T. H. Chan School of Public Health, the American childhood obesity rate has increased threefold within the past 25 years, a trend accompanied by increasing rates of hypertension, type 2 diabetes, cardiovascular disease, certain types of cancer, and even mortality. Obesity has grown so prevalent, in fact, that Centers for Disease Control estimate that one in three American children is obese. According to the Chan School of Public Health, unless legislation directly targeting America’s spiraling obesity rate is passed, the trend shows no signs of slowing or reversing.
Passing effective legislation requires a both an understanding …
Diversity, Genetics, And Health Benefits Of Sorghum Grain, Davina Rhodes
Diversity, Genetics, And Health Benefits Of Sorghum Grain, Davina Rhodes
Theses and Dissertations
Staple cereal crops provide the majority of nutrients to the world's population, and thus, can significantly impact human nutrition and health. Phenotypic and genetic diversity within a crop can be useful for biofortification and crop improvement, but quantitative phenotyping is needed to identify varieties with high or low concentrations of a nutrient of interest, and to identify alleles responsible for quantitative trait variation of the nutrient. Sorghum [Sorghum bicolor (L.) Moench] is a diverse and widely adapted cereal crop that provides food for more than 500 million people in sub-Saharan Africa and Asia, and is becoming increasingly popular in specialty …

Study Of A Contemporary Diet In One Household In The Yucatan, Ericka K. Hardin
Mahurin Honors College Capstone Experience/Thesis Projects
The history of the Yucatan has played a major role in the development of the food system of the area and the nutritional status of the population. Originating from an agricultural based diet, which forms the foundation of the traditional Yucatan diet, there has been a recent shift away from whole and natural foods to a more processed and convenient food supply due to the influx of American products and culture. Coinciding with the influx of these unhealthy foods, there has also been a rise in the health problems of the Mexican population such as heart disease and diabetes, both …
Farmers Markets In Urban Us Counties: The Relationship Between Income, Obesity, And Access, Mia El-Hamaki
Farmers Markets In Urban Us Counties: The Relationship Between Income, Obesity, And Access, Mia El-Hamaki
Earth and Environmental Sciences Presentations
In the last decade there has been a convergence of factors that have contributed to an increase in food deserts, obesity, and income inequality in the US. Two-thirds of US adults are overweight or obese. This prevalence disproportionately affects low income areas with high minority populations (Ruelas et al., 2012). Simultaneously, research shows that grocery stores are tending to move away from low income, inner city communities and towards affluent urban and suburban areas. In order to combat the growing food deserts and obesity rates as a result of this shift, farmers markets have been proposed and utilized as a …

Food Science and Nutrition
The purpose of this literature review is to determine the prevalence of nutrition-related conditions among children of migrant and seasonal farmworkers (MSFW) compared to national averages, as well as effectiveness of strategies for minimizing any health discrepancies. MSFW live under harsh conditions, engage in long hours of physically demanding labor, and receive insufficient income. Compounding demographic characteristics create insurmountable barriers to quality health care and nutrition education resulting in disproportionately unhealthy children within the MSFW population as compared to the greater US population. The prevalence of overweight, obesity, diabetes mellitus, cardiovascular disease, and numerous infections is higher among MSFW children. …

OBJECTIVE To test the hypothesis that greater chocolate-candy intake is associated with more weight gain in postmenopausal women. DESIGN AND METHODS Prospective cohort study involving 107,243 post-menopausal American women aged 50–79 years (mean=60.7) at enrolment in the Women’s Health Initiative (WHI), with three-year follow up. Chocolate-candy consumption was assessed by food frequency questionnaire and body weight was measured. Linear mixed models, adjusted for demographic, socio-economic, anthropomorphic and behavioral variables, were used to test our main hypotheses. RESULTS Compared to women who ate a 1 oz (~28 g) serving of chocolate candy <1 per month, those who ate this amount 1 per month to <1 per week, 1 per week to < 3 per week and ≥3 per week showed greater three-year prospective weight gains (kg) of 0.76 (95% CI: 0.66, 0.85), 0.95 (0.84, 1.06) and 1.40 (1.27, 1.53), respectively, (p for linear trend<0.0001). Each additional 1 oz/day was associated with a greater three-year weight gain (kg) of 0.92 (0.80, 1.05). The weight gain in each chocolate-candy intake level increased as BMI increased above the normal range (18.5–25 kg/m2), and as age decreased. CONCLUSIONS Greater chocolate-candy intake was associated with greater prospective weight gain in this cohort of post-menopausal women.

Mineral And Protein Blocks And Tubs For Beef Cattle, Jeff Lehmkuhler, Roy Burris, Donna M. Amaral-Phillips
Agriculture and Natural Resources Publications
Nutritional supplement blocks and tubs are convenient for beef producers, require no investment in feeding troughs and require a limited area for storing. One of the most attractive features is that they lower the labor needed to supplement livestock. Many producers use these products to provide supplemental nutrients to cattle consuming low-quality forages or as a mechanism to promote a more consistent intake of minerals. These products are also attractive to producers who have off-farm employment as they eliminate the need for daily feeding. Yet, they often come at a greater cost per unit of nutrient than more conventional feedstuffs. …

Nutrition And Prevention Of Alzheimer's Dementia, Arun Swaminathan, Gregory A. Jicha
Neurology Faculty Publications
A nutritional approach to prevent, slow, or halt the progression of disease is a promising strategy that has been widely investigated. Much epidemiologic data suggests that nutritional intake may influence the development and progression of Alzheimer’s dementia (AD). Modifiable, environmental causes of AD include potential metabolic derangements caused by dietary insufficiency and or excess that may be corrected by nutritional supplementation and or dietary modification. Many nutritional supplements contain a myriad of health promoting constituents (anti-oxidants, vitamins, trace minerals, flavonoids, lipids, …etc.) that may have novel mechanisms of action affecting cellular health and regeneration, the aging process itself, or may …

Exclusive Breastfeeding And Breastfeeding In Newspapers: Analysis Of Frames, Content, And Valence, Amanda E. Hamilton, Moira Lewis
Proceedings of the New York State Communication Association
Exclusive breastfeeding and breastfeeding durations in the United States are shorter than recommended. No U.S. media content analyses assess exclusive breastfeeding. No studies assess exclusive breastfeeding or breastfeeding portrayals in U.S. newspapers. We fill these gaps. Framing theory suggests media present breastfeeding in particular ways and that such presentations impact breastfeeding. We contribute a systematic theoretical approach to the study of exclusive breastfeeding and breastfeeding representations in 819 newspaper articles published across five U.S. regions. This study is limited by its focus on newspapers. However, since exclusive breastfeeding information is identified using a systematic theoretical approach this study contributes new …
