The college years are often depicted as a time of immense change, specifically in relation to college students' level of nutrition and sleep quality. Background: Obesity prevalence in United States children ages 2-19 years has been consistently high since 2003.1 These children are at a greater risk for many chronic disease. Educating children on how to make healthful food choices, and using fun characters in a classroom setting may be one step to reducing the obesity rate.

Objective: Increase knowledge about MyPlate and heathy eating in children in kindergarten through fifth grade.

The proportion of obese adolescents in Southern Appalachia is among the highest in the nation. Through funding from the National Institute on Minority Health and Health Disparities — National Institutes of Health, the Team Up for Healthy Living project was a cluster-randomized trial targeting obesity prevention in adolescents through a cross-peer intervention. The specific aims of the project were to: 1) develop a peer-based health education program focusing on establishing positive peer norms towards healthy eating and physical activity (PA) among high school students, 2) test program efficacy, and 3) explore mechanisms underlying the program. This dissertation assesses racial and ethnic disparities in health outcomes of the aging population, with focus on improving functional health, health status and quality of life at both individual and community levels. Chapter 2 examines racial and ethnic disparities in willingness to pay (WTP) for improved health among an aging population sample while also examining the impact of health status and risky health behaviors. Results indicate that racial and ethnic minorities are more likely to have a positive WTP for improved health than non-Hispanic Whites. However, WTP for minorities is found to be significantly lower than for non-Hispanic Whites. However, …

The study was a month-long diet change focused on increasing omega-3 fatty acids and decreasing omega-6 fatty acids. This was done by using a Mediterranean style of eating focusing on fish, fruits, and vegetables. At the end of the diet, I lost 19 lbs, had a 2% decrease in body fat, a 2% increase in muscle, and a 7 beats per minute reduction in my heart rate.

Background: Early adolescents perceive peers as credible and relatable. Peers therefore have a unique conduit to engage early adolescents in positive health behaviors through nutrition learning such as that recommended by the U.S. Institute of Medicine (IOM).

Purpose: We developed an online, peer leader component to an existing in-person preventive nutrition intervention called NutriBee. We reasoned that youth ages 13–18 could create intervention materials that could remain engaging, credible and relatable to younger peers ages 10–12 online. Peer leaders could potentially derive health benefits from their service-learning experience.

Wing dimorphism in aphids can be affected by multiple cues, including both biotic (nutrition, crowding, interspecific interactions, the presence of natural enemies, maternal and transgenerational effects, and alarm pheromone) and abiotic factors (temperature, humidity, and photoperiod). The majority of the phloem-feeding aphids carry Buchnera, an obligate symbiotic proteobacteria. Buchnera has a highly reduced genome size, but encode key enzymes in the tryptophan biosynthetic pathway and is crucial for nutritional balance, development and reproduction in aphids. Epigenetics is the study of any change in gene expression that is not mediated by DNA sequence. The effects of environmental stimuli on epigenetic changes have been studied extensively in recent years. Multiple reviews have provided comprehensive summations of the effects of environmental stimuli on transgenerational epigenetic changes, but few reviews have focused upon environment-induced intragenerational epigenetic changes. This review will summarize current knowledge of the intragenerational epigenetic changes that are induced by two groups of well-studied environmental stimuli: nutritional deficiencies and carcinogens. Introduction: Parkinson’s disease (PD) is a chronic progressive movement disorder, affecting primarily people over sixty years of age. With aging populations, some estimates indicate as many as nine million people will be impacted by this disease by 2030. Thus it is imperative to identify means of prevention, delay of onset, and management of symptoms. Many elements of diet and nutrition have been investigated to accomplish these goals. The Symbiosis of Creativity and Wellness project explored how holistic personal wellness practices nurture creativity, and conversely, how creativity fosters personal wellness. The project specifically explored wellness from the standpoint of sleep and circadian rhythms, somaticism and movement, nutrition and hydration, meditation and mindfulness, as well as connection and support. By immersing in research-based wellness practices and building a customized approach to personal wellness, this project not only facilitated measurable personal wellness improvements over the six-week period, but also highlighted more profound insights within the relationship between creativity and wellness. Background: The obesity epidemic has been a concern across the globe, affecting about 20% of adolescents in the U.S. Physical activity and nutrition-related behaviors that develop during adolescence carry through into adulthood. Adolescents’ perceptions of how their family functions may be associated with health behaviors, including physical activity and diet.

Objective: To determine whether there is an association between perceived family functioning and adolescent health behaviors among a national sample of adolescents aged 11 to 16 who participated in the 2009-2010 Health Behaviors of School-Aged Children survey.

Today, 85% of corn, 93% of soybeans, and 88% of cotton in the U.S. are genetically modified (GM). Using laboratory methods, genes from one species, such as a plant, can be transferred to an unrelated species, such as an animal. Genetically modified crops may lead to higher yields, have improved food quality, texture, and nutritional value, and have an increased shelf life.

Despite these promising benefits, the potential health risks relating to the consumption of GM food remain inadequately assessed. Genetically modified food is not subjected to rigorous safety testing, such as epidemiologic studies, to identify potential health risks. Two …

Objective: The purpose of this study was to explore the differences in diet and exercise patterns in sorority women from campuses with different Greek Life structures. The goal was to determine if the centralization of the sorority through the presence of a chapter sorority house altered these health behaviors for any of the women.

Methods: A cross-sectional study design was used to gather data from sorority members at two northeastern universities during October of 2014. To compete in today's online environment, Extension needs to increase its visibility through search engine results. The study reported here evaluated the impact of using Search Engine Optimization (SEO) techniques on six Web-based Extension Nutrition and Health fact sheets by examining data pre- and post-fact sheet revision from Google Analytics and rankings on Google results page. Comparing Pageviews data pre-and post-revision, the Pageviews for all six fact sheets increased, ranging from 101% to 281%, over a 3-month timeframe. Application of SEO techniques to Extension publications has the potential to increase the visibility of Extension's credible and research-based information.

Rationale: Diagnosis of autism has increased ten-fold in the last 40 years, and adults with autism remain an underrepresented population in research. Purpose: To qualitatively explore the relationship between eating behaviors and autism using a questionnaire and interviews with adults diagnosed with autism spectrum disorder. Methods: Four males aged 22-27 were interviewed with their mothers present and completed the Swedish Eating Assessment for Autism Spectrum Disorders (SWEAA). Interviews were analyzed through the process of open coding, and the questionnaires were analyzed to determine consistent findings between the interview and the SWEAA questionnaire.
