Glucose-Fructose Likely Improves Gastrointestinal Comfort And Endurance Running Performance Relative To Glucose-Only, P. B. Wilson, S. J, Ingraham

This study aimed to determine whether glucose-fructose (GF) ingestion, relative to glucose-only, would alter performance, metabolism, gastrointestinal (GI) symptoms, and psychological affect during prolonged running. On two occasions, 20 runners (14 men) completed a 120-min submaximal run followed by a 4-mile time trial (TT). Participants consumed glucose-only (G) or GF (1.2:1 ratio) beverages, which supplied ~1.3 g/min of carbohydrate. Substrate use, blood lactate, psychological affect [Feeling Scale (FS)], and GI distress were measured. Differences between conditions were assessed using magnitude-based inferential statistics. Participants completed the TT 1.9% (−1.9; −4.2, 0.4) faster with GF, representing a likely benefit. FS ratings were …

The responses of two different commercial strains of broilers to diets varying in overall amino acid levels and metabolizable energy levels were observed. Amino acid levels used were 80%, 90%, 100%, 110%, 120%, and 130% of Ross recommended minimum digestable levels of essential amino acids. Energy levels used were either below or above Ross recommended metabolizable energy levels. Diets were fed for 56 days. The two strains were a fast growing broiler strain and a slower growing broiler strain. A selection of birds from each pen was processed at 35, 43, and 56 days of age. This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.

Abstract
Incarceration and substance abuse are two of the largest public health issues in America. While the U.S. makes up only 5% of the world’s population, it accounts for 25% of its prisoners. Incarceration affects more than 2.2 million individuals who will eventually return to their families and communities with ongoing family, social and health issues. Women in prison are a particularly vulnerable and underserved population, generally of low education and socio-economic status and although they account for a small percent of the prison population, many are mothers of young children who are likely to become incarcerated themselves. Entomopathogenic nematodes (EPNs) (genera Heterorhabditis and Steinernema) kill their invertebrate hosts with the aid of a mutualistic bacterium. The bacteria (Xenorhabdus spp. for steinernematids and Photorhabdus spp. for heterorhabditids) are primarily responsible for killing the host and providing the nematodes with nutrition and defense against secondary invaders. Photorhabdus is a Gram-negative bacterium in the Enterobacteriaceae family with high virulence towards their insect hosts. To achieve high mortality rates Photorhabdus produces a variety of virulence factors such as toxins, lipases, proteases, secretion systems, and fimbriae. EPNs are amenable to laboratory rearing and mass production for biocontrol applications against insects …

The obesity epidemic continues to be a problem both in the US and worldwide. A number of factors have been attributed including: frequency of fast-food consumption, increased portion sizes, increased consumption of sugar-sweetened beverages, increased sedentary lifestyles, lack of nutrition knowledge, and lack of cooking skills. This mixed-method study examined rural U.S. food service directors' perceptions of and experiences with voluntary school meal programs, which have the potential to improve school nutrition but have not been widely adopted in rural areas of the United States. Little is known about how rural food service directors perceive these programs. Interview and survey instruments examined how rural food service directors characterize barriers and facilitators to participation in voluntary school meal programs like farm-to-school and school garden programs. Sports drinks provide nutrients that improve athletic performance. This study investigated whether a preference in taste leads to an increased consumption of a sports drink prior to and after an endurance event in athletes. Male amateur soccer players (n=16) first participated in a blind sensory evaluation to determine their taste preference for two (designated as Drink A and Drink B) similarly flavored sports drinks. Subjects were divided into two groups based on their taste preference for either drink. Community-university partnerships can lend themselves to the development of tools that encourage and promote future community health development. The electronic manual, "Building Farmacies," describes an approach for developing capacity and sustaining a community health center-based farmers' market that emerged through a community-university partnership. Manual development was guided by the Knowledge to Action Framework and experiences developing a multivendor, produce-only farmers' market at a community health center in rural South Carolina. The manual was created to illustrate an innovative solution for community health development. Consumers want timely, research-based information available online. The project objective was to develop a user-friendly nutrition and health website for Colorado Extension consumers. An electronic survey (n=381) was administered to current and potential Extension consumers to understand their: use of the Web and electronic devices; topics of interest; and preferred mode of information delivery. Results, in conjunction with best practices for website usability and health literacy, were used to develop the Live Eat Play Colorado website. Audience-centered websites with content packaged in small doses and delivered via multiple modalities may enhance reach and use of university and Extension resources.

There are conflicting results from previous research evaluating the effects of dietary omega-3 fatty acid supplementation on IgG concentration of colostrum, milk and foal blood. No research has been done on the effect of omega-3 fat supplementation on the placental efficiency of horses or the nitrite concentrations of the placenta as an indicator of vascularization. This study examined the effect of dietary omega-3 supplementation on composition of milk, mare and foal serum and if it will result in transfer of fatty acid in utero as well as providing the foal with adequate IgG concentrations in the milk and colostrum. In wild primates, feeding competition is believed to influence female social relationships, patterns of dispersal, energy gain, and reproductive success. When high– quality foods are distributed in monopolizable patches, high– ranking females can use aggression to exclude low– ranking females from patches, thereby consistently gaining more food. Rank– related differences in female energy gain are expected to arise, and selection for aggression is thought to lead to unidirectional female agonistic relationships and a linear dominance hierarchy. The study reported here describes a Virginia Family Nutrition Program's target population's perceptions of barriers to using a farmers market to access local foods. Mothers from a rural county photographed their shopping experience. Using a photo elicitation process to develop themes related to food access, the mothers identified barriers to shopping at farmers markets. The results can provide guidance to agents, program assistants, and farmers market coordinators on promoting use of farmers markets by low-income populations. The development of experiential learning opportunities to overcome barriers is critical if farmers markets are encouraged as an avenue for promoting healthy eating.

Objective: Dietary guidelines are important education and policy tools to address local nutrition concerns. The current paper presents a comparative analysis of nutrition messages from three Spanish-speaking Caribbean countries (Cuba, Puerto Rico and Dominican Republic) to explore how these dietary guidelines address common public health nutrition concerns, contextualized in different changing food environments and food culture similarities.
Design: Qualitative, comparative analysis of current dietary guideline documents and key recommendations.
Results: Key recommendations were categorized into sixteen themes (two dietbased, ten food-based and four ‘other’). Only the Cuban dietary guidelines included diet-based key recommendations. Of the ten food-based …

Calcium, vitamin D, fiber, and potassium are widely underconsumed in the U.S. This study analyzes nutrition information from quick service restaurants to determine the fast-food industry⁰́₉s contribution of these nutrients to the American diet. The menu offerings of top-grossing quick-service restaurants in each of seven categories, McDonald's℗ʼ (burger), Subway℗ʼ (sandwich), Taco Bell℗ʼ (Mexican), Pizza Hut℗ʼ (pizza), Chick-fil-A℗ʼ (chicken), Panda Express℗ʼ (Asian), and Long John Silver's℗ʼ (seafood), were analyzed for calcium, vitamin D, fiber, potassium, and calories. Climate change leading to a drastic decline in caribou populations has prompted strict hunting regulations in Canada’s Northwest Territories since 2010. The Dene, a subarctic indigenous people, have responded by turning to tradition and calling for more respectful hunting to demonstrate respectful reciprocity to the caribou, including a community-driven foodways project on caribou conservation and Dene caribou conservation which I co-facilitated in 2011. In these ways the caribou is approached as a person. Dene responses to caribou decline can best be understood by ontological theories of an expanded notion of indigenous personhood.
