Background: The Eating and Cooking Healthy (TEACH) Kitchen was founded at the Medical College of Georgia in 2015 as a nutrition-based intervention to combat the high prevalence of obesity and obesity-related chronic diseases in the area of Augusta, Georgia. Despite the importance of diet in the management of chronic diseases, inadequate nutrition education among patients and healthcare providers presents a barrier. The purpose of TEACH Kitchen is to address this gap.

Diet and chronic inflammation of the colon have been suggested to be risk factors in the development of colorectal cancer (CRC). The possible link between inflammatory potential of diet, measured through the Dietary Inflammatory Index (DII®), and CRC has been investigated in several populations across the world. The aim of this study was to conduct a meta-analysis on studies exploring this association. Data from nine studies were eligible, of which five were case-control and four were cohort studies. Results from meta-analysis showed a positive association between increasing DII scores, indicating a pro-inflammatory diet, and CRC. Individuals in the highest versus …

Dietary changes are a major lifestyle factor that can influence the progression of chronic diseases such as diabetes. Recently, flavanols, a subgroup of plant-derived phytochemicals called flavonoids, have gained increasing attention, due to studies showing an inverse correlation between dietary intake of flavanols and incidence of diabetes. Flavanoids in the cocoa plant may ameliorate insulin resistance by improving endothelial function, altering glucose metabolism, and reducing oxidative stress. Oxidative stress has been proposed as the main culprit for insulin resistance. The well-established effects of cocoa on endothelial function also points to a possible effect on insulin sensitivity. Endurance athletes are recommended to maintain energy balance and ensure adequate energy availability (EA) so that endurance performance is not compromised. Purpose: Describe and evaluate the energy balance of an athlete competing in a self-sufficient, multistage ultramarathon (MSU). Methods: A male endurance athlete (age 35 years; height 183.0 cm; body mass 78.4 kg; VO2max 66 ml/kg/min) volunteered to take part in this observational case study prior to competing in the Marathon des Sables (MdS) 2016. This discussion paper sets out the global, African, and South African contexts within which both urban development and food security agendas in Africa are framed. It argues that the pervasive rural bias and anti-urbanism identified in the international and regional food security agendas in the first decade of the 21st century have persisted into the second. The associations of nutrition factors and physical activities with adult diabetes are inconsistent; while most of these factors are inter correlated. The aims of this study are to overcome the disturbance of the multicollinearity of the risk factors and examine the associations of these factors with diabetes using the principal component analysis (PCA) and regression analysis with principal component scores (PCS). Totally, 659 adults with diabetes and 2827 non-diabetic were selected from the 2012 Health Information National Trends Survey (HINTS 4, Cycle 2). The International Society of Sports Nutrition (ISSN) provides an objective and critical review regarding the timing of macronutrients in reference to healthy, exercising adults and in particular highly trained individuals on exercise performance and body composition. The following points summarize the position of the ISSN.
- Nutrient timing incorporates the use of methodical planning and eating of whole foods, fortified foods and dietary supplements. The timing of energy intake and the ratio of certain ingested macronutrients may enhance recovery and tissue repair, augment muscle protein synthesis (MPS), and improve mood states following high-volume or intense exercise.

Previous literature on affective forecasting has studied its role in health decisions, but there is little research investigating affective forecasting in diet choices and eating behaviors. The present study collected affective forecasts from 43 college participants before eating an indulgent snack and then observed emotions immediately after eating the snack. We predicted that emotion predictions would be significantly stronger than observed emotions, in support of previous literature on the impact bias. We also predicted that optimism would predict a stronger impact bias and that extraversion and neuroticism would have a role in forecasts and observed emotions. Contrary to our hypothesis, …

The aging process makes older adults vulnerable to the detrimental health effects of environmental contaminants. Our study assessed older adults' perceptions regarding diet as protective against environmental contaminants, levels of concern about exposure to environmental contaminants, and interest in learning about protective food-related strategies. A needs assessment to collect such information had not been conducted among older adults. Health fair survey results showed that respondents perceived diet as beneficial against contaminants, were concerned about health implications of exposure, and were interested in learning how to protect health through diet-related strategies. Supporting children's self-regulation in eating through caregivers' practice of responsive feeding is paramount to obesity prevention, and while much attention has been given to supporting children's selfregulation in eating through parents' responsive feeding practices in the home setting, little attention has been given to this issue in childcare settings. This qualitative study examines childcare providers' perspectives on using responsive feeding practices with young children (2–5 years). Individual semistructured interviews were conducted with providers until saturation was reached. Data was analyzed using thematic analysis. Agricultural feeds are commonly dispersed along roads or in openings as an attractant or dietary supplement for northern bobwhites (Colinus virginianus). Quail Breeder 16e is a pelletized ration specifically developed by Lyssy & Eckel Feeds for breeding bobwhites to maximize nutritive content of diets. Captive bobwhites were used to examine relative preference of the pellets, sorghum, corn, soybean, and a mix of seeds of 8 native plant species. Determination Of True Metabolizable Energy Content Of Bobwhite Foods, M. E. Spurlock, J. E. Savage

True metabolizable energy (TME) and nitrogen-corrected true metabolizable energy (TMEn) bioassays were used to determine available energy content of several northern bobwhite (Colinus virginianus) foods. A proximate analysis and trypsin inhibitor (TI) activity were also determined for each food. Corn (Zea mays) was found to contain the highest amount ofTMEn (4.37 kcal/g dry matter) compared with Fayette soybeans (Glycine max; 3.93 kcal/g), Korean lespedeza (Kummerowia stipuki.ceae; 3.73 kcal/g), Marion lespedeza (K. striata; 3.71 kcal/g), tick-trefoil (Desmodium spp.; 3.51 kcal/g), and wild trailing (WI') soybeans (3.24 kcal/g). The higher TMEn value of corn was attributed to its high digestible carbohydrate content …

Purpose: The purpose of SNACK was to increase the fitness and health of elementary school age children and to empower parents and caregivers to encourage healthy food choices. SNACK was developed in response to the 2010 Childhood Obesity Study recognizing a 49% childhood obesity rate in Trenton, New Jersey. Lifestyle influences contributing to childhood obesity and Type 2 diabetes mellitus include poor food choices, inadequate access to healthy foods, decreased physical activity and insufficient access to safe play environments. The Department of Chemistry at Georgia Southern University provides foundation courses for nutrition majors in the Department of Health and Kinesiology. One foundation course is Nutritional Biochemistry- a one semester course that focuses on the basic principles of biochemistry as they apply to human metabolic systems. The students gain familiarity with biological molecules such as proteins, fats, and carbohydrates, and they learn how the body metabolizes each of these molecules.
