To investigate the relationship between dietary quality and mental health status of young adults in an Appalachia college setting we 1) assessed the overall dietary quality of students 2) assessed the frequency of depression and anxiety symptoms of students and 3) assessed the relationship between these factors and food insecurity of students. A cross-sectional design was used in a large, Appalachian college population in fall 2017. Survey items included the Dietary Screener Questionnaire (DSQ), experience of depression or anxiety symptoms over the past 30 days, and the US Adult Food Security Survey Module, demographic variables and BMI. The purpose of this study was to examine teacher perception of student school meal preferences in an elementary school setting. This was a cross-sectional mixed-methods study that is part of a larger study to develop a nutrition education program for elementary school children. Focus groups and surveys were administered to faculty at a charter school in downtown Orlando to gain insight into the types of food offered at school and student response to these food items. The global population, including the United States, is experiencing a demographic shift with the proportion of older adults (aged ≥ 65 years) growing faster than any other age group. This demographic group is at higher risk for developing nutrition-related chronic conditions such as heart disease and diabetes as well as infections such as influenza and pneumonia. As a result, an emphasis on nutrition is instrumental for disease risk reduction. Unfortunately, inadequate nutrient status or deficiency, often termed hidden hunger, disproportionately affects older adults because of systematic healthcare, environmental, and biological challenges. This manuscript describes the development of a “learn by actively participating” curriculum for youth and their adult caregivers (dyad pair) to increase gardening skills, culinary competence, and family meal time. The curriculum was developed by integrating “iCook 4-H” and Junior Masters Gardener “Health and Nutrition from the Garden”, and “Essential Elements of 4-H Youth Development” curriculums with additional resources for gardening activities from the USDA’s My Plate and garden-based recipes. This study assessed the risks of different management practices to increase pregnancy rate in beef cow-calf systems, aiming at assisting decision-making. The perception of 18 experts on animal sciences regarding the risks of 32 nutritional, breeding, and general management practices applied to increase pregnancy rate were evaluated through questionnaires. The experts were selected by a non-probability sampling of researchers on veterinary and animal sciences. In addition, five farmers and eight technical consultants were also selected. Research Note Prediction Model For Manure Zinc Excretion In Laying Hens, Kelli M. Martin, N. Vargas-Jurado, S. E. Purdum

The objective of this research trial was to compare 2 sources of zinc and different levels of supplementation on manure zinc excretion in laying hens. Bovan White Leghorn hens were used in this study and fed one of 6 dietary treatments. Treatments were in a 2 × 3 factorial arrangement with 2 sources of zinc (zinc sulfate or Availa R < Zn) and 3 levels (40, 80, or 120 ppm) and were randomly assigned to 48 cages with 5 hens/cage and 8 replicates/treatment. Hens were housed in a tiered manure-belt housing system providing 627.1 cm2/hen and were given access to 110 g/hen/d of feed. Manure samples were collected, and manure zinc content was calculated at 10- week intervals. Data were analyzed using the Glimmix procedure in SAS. There was a significant overall effect of source (P < 0.0001) for zinc content, such that hens fed zinc sulfate had lower amounts of zinc excretion. There was also a significant level effect (P < 0.0001) in which hens fed 120 ppm zinc excreted the greatest amount of zinc. A significant source by level interaction was observed (P < 0.0001) for both the overall and individual analyses, such that 120 ppm Availa R < Zn showed the highest zinc excretion, and both 40 ppm zinc sulfate and Availa R < Zn showed the lowest zinc excretion. Based on these results, a prediction equation was written for an estimated amount of zinc excretion based on the amount of zinc provided in the diet.

Physical activity (PA) is beneficial to people of all ages and ethnicities. Regular physical activity can reduce the risk of multiple chronic diseases, improve mood and sleep and allows your body to function better overall (CDC, 2018). However, populations that are more vulnerable to adverse health risks may benefit more than others from regular physical activity. Effects of enzymatically hydrolyzed yeast (EHY) and supplementation frequency (FREQ) on immune parameters among beef cows and calves was evaluated. Eighty multiparous (parity = 4.2 ± 0.3) cows were fed a common brome hay-based diet (CP = 8.0 ± 0.17%). Cows were blocked by expected calving date and stratified by body condition score (BCS) before random assignment of treatment. Beginning 88 ± 5 d prior to parturition, cows were provided 1 kg daily or 3 kg every 3 d of a soybean hull-based supplement (CP = 34.0, % of DM) that contained 0 or 3 g/kg EHY. The daily supplement …

Watertown for All Ages is a group of residents working to improve the livability of Watertown for residents of all ages and abilities. They work closely with the Watertown Council on Aging/Senior Center. The Watertown Council on Aging/Senior Center provides a variety of social, health, educational, recreational, advocacy, and support programs designed to help Watertown’s older adults age well in the community. The paving of the Interoceanic Highway (IOH) brought rapid development to the Madre de Dios (MDD) region in the Peruvian Amazon. Development brings concerns of toxic trace element exposures, and road development has been a major driver of the transition from traditional to calorie-dense processed ‘Western’ diets in lower and middle-income countries. The number of farms in America has decreased, but the average size of farms has increased. These larger farms are increasingly more industrialized and produce a short list of profitable, subsidized commodity crops. Migratory and non-migratory ungulates often coexist in partially migratory populations, but the mechanisms that drive and maintain different migratory behaviors within the same herd are poorly understood. In western North America, increasing numbers of elk (Cervus canadensis) reside on low-elevation winter range year-round. These residents can cause issues associated with crop damage, potential for disease transmission to livestock, and reduced effectiveness of harvest management strategies. Because migrants transfer nutrients, alter carnivore distributions, and structure vegetative communities across seasonal ranges, reductions in migratory behavior raise ecological as well as management-related concerns. This study evaluated characteristics of food blogs and food bloggers that potentially affect food choices. It was hypothesized that most food bloggers would not have a nutrition-related degree and food blog environments wouldn’t be supportive of health-conscious food choices. A cross-sectional study was conducted using a novel evaluation tool on 187 blogs, out of which 100 blogs met inclusion criteria. Because some blogs had multiple bloggers, two samples were investigated: 111 bloggers (n1 = 111) and 100 food blogs (n2 = 100). Exposure to environmental pollutants poses numerous risk factors for human health, including increasing incidence of cardiovascular disease and diabetes. Persistent organic pollutants, such as polychlorinated biphenyls (PCBs) have been strongly linked to the development of these chronic inflammatory diseases and the primary route of exposure is through consumption of contaminated food products. Thus, the gastrointestinal tract is susceptible to the greatest levels of these pollutants and is an important facet to study.

Due to socioeconomic disparities and geographic isolation, rural Kentucky residents bear a greater burden of poor health compared to national averages. Specifically, rural Kentucky residents are at greater risk of becoming obese and suffering from comorbidities of obesity such as type 2 diabetes, hypertension and cardiovascular disease. The purpose of the present study was two-fold. First, we the barriers to nutrition and physical activity unique to rural Kentucky counties which high proportions of obese adults (< 40%) were examined and extrapolated. Second, this information was used to develop a health and wellness app tailored to rural Kentucky counties. The objective was met via a formative assessment regarding causes for obesity in three rural Kentucky counties using focus groups. From these discussions, two major themes arose: barriers to good nutrition and physical activity, and desired web‐app features. From this assessment, FitFaceoff was developed and released into the same counties. Usage and user interaction were assessed using GoogleAnalytics™ software. Analysis revealed poor user liking and unsuccessful implementation of FitFaceoff, however further qualitative research is needed to evaluate poor user reception of FitFaceoff and possible future directions.

Consumers have a variety of ice cream available for purchase through retail stores, including: standard commercial, specialty store, organic, and premium commercial options. This study used a sensory analysis to solicit responses from a group of adults to determine consumer preference and acceptance of four vanilla ice creams based on taste. Consumers preferred (i) organic ice cream to standard, commercial ice cream and (ii) specialty store ice cream to standard, commercial ice cream. The pirarucu (Arapaima gigas) from Amazon basin is currently the largest farmed fish species and its production is increasing rapidly in Brazil. However, there is a concern about bacterial disease outbreaks and resulting mortalities in pirarucu farms. The use of probiotic bacteria as prophylactic method is recognized as beneficial practice to enhance fish production. Background: Intense-exercise has demonstrated an appetite suppressing effect post-exercise, however the involved mechanisms are not well understood. Lactate appears to be one viable mechanism as it has been found to bind to receptors on acylated ghrelin to inhibit release in cell culture. As sodium bicarbonate (NaHCO3) can alter lactate accumulation post-exercise without manipulating exercise-intensity, it presents an intriguing means to investigate lactate’s potential role. Purpose:The purpose of this pilot intervention study was to provide farmers market (FM) education coupled with FM voucher to assess FM awareness, attendance, and voucher use. Methods:Kindergarten through 3rdgrade students attending a summer school program participated in this three-week FM pilot intervention study. A pre/post intervention questionnaire was distributed to students to assess FM awareness and attendance. In addition, an $8 FM voucher was provided to children for purchases of fruit and vegetables at the local FM. European starlings are an invasive bird species in North America that are known to cause damage to commercial dairies through the consumption of total mixed rations (TMR) destined for dairy cows. We hypothesized that large foraging flocks of starlings alter the physical composition of TMR, and that this change may be significant enough to affect milk production. Predation impacts development, behavior and morphology of prey species thereby shaping their abundances, distribution and community structure. Non-lethal threat of predation, specifically, can have a strong influence on prey lifehistory characteristics. The honey bee is a widely managed crop pollinator that provides the agricultural industry with the sustainability and economic viability needed to satisfy the food and fiber needs of our society. Excessive exposure to apicultural pesticides is one of many factors that has been implicated in the reduced number of managed bee colonies available for crop pollination services. iCook 4-H is a lifestyle intervention to improve diet, physical activity and mealtime behavior. Background: Rural communities experience unique barriers to food access when compared to urban areas and food security is a public health issue in rural, high poverty communities. A multi-leveled socio-ecological intervention to develop food policy councils (FPCs), and improve food security in rural communities was created. Background: Psychological well-being is associated with longevity and reduced risk of disease, but possible mechanisms are understudied. Health behaviors like eating fruits and vegetables may link psychological well-being with better health; however, most evidence is cross-sectional. Purpose: This study investigated psychological well-being’s longitudinal association with fruit and vegetable consumption across as many as 7 years. Feed intake is the primary determinant of nutrient and energy acquisition for most metazoans. Satiety regulates feed intake and may have cascading effects on nutrient acquisition and health. Satiety of many higher organisms involves complex processes and a variety of signaling molecules that are responsive to many factors associated with nutrient intake. Cricket (Acheta domesticus), silkworm pupae (Bombyx mori), and locust (Locusta migratoria) dry flours were obtained to examine the biochemical properties and composition of the flours. This study aimed to characterize the protein and lipid components of three insect species utilizing proximate composition analyses, amino acid composition analysis, protein solubility, SDS-PAGE, fatty acid composition analysis, and thin layer chromatography to determine lipid classes, and lipid extraction efficiency. Kjeldahl determined the cricket, locust, and silkworm flours contained 72.0%, 53.1%, and 71.2% protein, respectively. All proximate composition analyses were significantly (p< 0.05) different between species. Amino acid composition analysis revealed that the flours contained 3.6-3.9% and 0.90-1.5% of lysine and methionine, respectively. Many countries have cereal grains and legumes as a staple in their diet that contain these limiting amino acids. Essential amino acids were 22% of total amino acids. Protein solubility revealed that the three species studied were most soluble in alkaline environments with highest protein solubility occurring at pH 13 at 66% solubility in silkworm. Lowest solubility occurred in more acidic conditions between pH 4-5. SDS-PAGE revealed five major protein fractions with estimated molecular weights of 27 (cuticle proteins), 41 (arginine kinase), which has been identified as an allergen in shrimp, 42 (actin), 71 (hemocyanin), and 220 myosin) kDa. Soxhlet extraction determined cricket, silkworm, and locust flours contained 15.4%, 33.3%, and 11.4% lipid, respectively. The only omega-3 fatty acid found in the flours was α-linolenic acid. Silkworm flour contained the most α-linolenic acid at 33.3% of total fatty acids, followed by locust (13.7%), and cricket (0.6%). TLC resolved lipids for typical lipid classes. The four major lipid classes noted were triacylglycerol, free fatty acid, cholesterol, and phospholipid. Lipid extraction efficiency found that the organic solvents chloroform and methanol had the highest lipid extraction yield in both cricket (69.3%) and locust (93.0%). Methyl-tertiary-butyl ether (MTBE) extracted lipids most efficiently in the silkworm. Proteins and lipids found in insects need to be isolated to further or commercial use.
