Investigations On Improvement Of Acceptability And Evaluation Of The Nutritive Value Of Processed Cabbage And Its Effects On The Tumorigenicity In Mice, Chareonsri Srisangnam

The objectives of this investigation have been to study the acceptability and nutritive value of processed cabbage and to elucidate the effects of chronic administration of cabbage on the activity of a colon tumorigen, 1,2-dimethylhydrazine (DMH). The organoleptic unacceptability of cabbage in spite of its high nutritional and economic values governed the choice of this cruciferous vegetable for this work.

Cabbage samples were blanched with steam, chemical solutions, and microwaves. Microwave blanching led to a "burnt spot" effect and to a relatively greater loss in weight of the vegetable. Blanching in solution involved boiling of cabbage with a chemical solution …

On March 9, 1977, the Food and Drug Administration (FDA) announced that a study in laboratory rats conducted by the Canadian government confirmed that saccharin is an animal carcinogen. For this reason, the agency stated, the sweetener must be banned from human food.

The studies which Congress mandated, to be accompanied by the recommendations of the Secretary of HEW, are likely to generate a fundamental reexamination of the nation's current food safety policies. The relative sweetness, flavor, texture and overall acceptance of sucrose and fructose was determined at various sugar levels in sugar cookies, white cake, vanilla pudding and lemonade. Because of the reported increased sweetness of fructose and its increased tolerance in individuals with diabetes mellitus, the study was designed to investigate the possibility of fructose as an alternative sweetener.

Taste panel members were used to evaluate the products. All products were served in duplicate and only data from those judges who had sampled both replications were used for the statistical analysis. Each product was prepared at 100%, 50% and 25% of …

I measured three variables of coyote-food base relationships in Jackson Hole, Wyoming, during the period July, 1973, to July, 1975. Field work provided estimates of relative coyote and prey abundance as well as observations on coyote feeding behavior during winter. Laboratory analysis of 1,500 coyote scats revealed feeding patterns while feeding trials with captive coyotes allowed refinement in interpretation of scat analysis.

Deer mice and chipmunks comprised most of the rodent biomass captured in traps in the fall, while ground squirrels accounted for much of the rodent biomass in the spring. Field voles declined from 1973 to 1974 throughout much …

Two judicial decisions in the early 1950s construing the FTC's section 13 (a) power produced a conflict that has not been resolved either by later courts or by the amendments to section 13 enacted in 1973. The dispute basically concerns the depth of the courts' inquiry into whether an advertisement violates- section 12 and the applicability of traditional equitable concepts in the context of the statutory injunction procedure. This Note contends that the legislative history of pertinent provisions of the Act suggests an appropriate resolution of the conflict through a two-step approach that would relax the scrutiny ordinarily accorded petitions …

The Index of Food Quality (IFQ) is a simple computerized tool based on a concept of nutrient density. The IFQ was designed to organize and clarify the present body of food composition data into a form that is directly applicable to dietary problems.

A study of the summer ecology and behavior of the Arctic Grayling was undertaken on the summer population of McManus Creek, Alaska. An effort to determine the distribution and the patterns of the fish’s movements in the stream was made. The grayling spent the summer months in pools where they established feeding territories. Within each feeding territory a feeding range, where all feeding activities took place, was found. In each pool a hierarchial ordering based on a dominant subordinate relationship existed. Cheese Fondue is a Swiss national dish which combines cheese and bread. In years past, quantities of bread and cheese were made during the winter for use throughout the year. Gradually, both became very hard. To make them more edible, the cheese was melted and the bread dunked in this mixture.

Fondue to served informally in a festive atmosphere. Each person spears a piece of crusty bread with a fork, going through the soft part first to secure the points in the crust. The bread is dunked in the fondue with a stirring motion.
