This review summarizes a collection of lactic acid bacteria that are now undergoing genomic sequencing and analysis. Summaries are presented on twenty different species, with each overview discussing the organisms fundamental and practical significance, environmental habitat, and its role in fermentation, bioprocessing, or probiotics. For those projects where genome sequence data were available by March 2002, summaries include a listing of key statistics and interesting genomic features. These efforts will revolutionize our molecular view of Gram-positive bacteria, as up to 15 genomes from the low GC content lactic acid bacteria are expected to be available in the public domain by …

A unique observation of foraging by an Eastern Gray Squirrel (Sciurus carolinensis) is described. The squirrel was observed consuming insects that had been impacted on automobile radiators.

This Article considers the regulation of international trade in genetically modified agricultural products. Specifically, it addresses both products released into the environment as seeds and products intended for consumption as food. The first part of the Article describes the significance of genetically modified organisms (GMOs) in modem agriculture, especially agriculture in the United States. Turkish Journal of Veterinary & Animal Sciences

During recent decades, the study of fatty acids (FAs) belonging to the n-3 family in seafood has intensified due to their beneficial effect on cardiovascular disease. This study was undertaken to determine the FA composition of muscle lipids of three different farm raised trouts (Salvelinus alpinus, Salmo trutta fario and Oncorhynchus mykiss) fed the same diet and raised under the same conditions. Palmitic acid (16:0) in total saturated fatty acid (SFA) and oleic acid (18:1 n-9) in monounsaturated fatty acid (MUFA) were the most abundant FAs and significant differences (P < 0.05) were observed between fish species. The differences in total SFA among the trouts were significant (P < 0.01), and O. mykiss had the highest (31.92%) SFA content while S. trutta fario showed the lowest in their edible muscle tissue. However, there was a significantly (P < 0.01) opposite observation for MUFA among the trouts, in which S. trutta fario had the highest content (41.90%) of MUFA in their muscle tissue while O. mykiss had the lowest (30.81%). The differences for the polyunsaturated fatty acid (PUFA) content among the species were not significant (P > 0.05). O. mykiss had the highest n-3 PUFA (22.41%) while …

The Effect Of Anaerobic Exercise On The Thermic Effect Of Food, Charlene Marie Denzer

The thermic effect of food (TEF) is the increment in energy expenditure above resting metabolic rate associated with the cost of absorption, metabolism, and storage of food. Previous studies have shown that TEF is enhanced by aerobic exercise. The purpose of this study was to determine if a similar effect occurs with anaerobic exercise (weight lifting). VO2 was measured after ingestion of a 660 kcal meal with and without prior completion of a weight-training regimen. TEF was 42% higher after the exercise trial (t = 2.539, p < .017), compared with the control trial. These results indicate that prior anaerobic exercise also leads to an enhanced TEF.

Objective: Because the percentage of missing portion sizes was large in the Aerobics Center Longitudinal Study (ACLS), careful consideration of the accuracy of standard portion sizes was necessary. The purpose of the present study was to investigate the consequences of using standard portion size instead of reported portion sizes on subjects' nutrient intake.

Methods: In 2307 men and 411 women, nutrient intake calculated from a 3-day dietary record using reported portion sizes was compared with nutrient intake calculated from the same record in which standard portion sizes were substituted for reported portion sizes.

Honoring Everyday Alimentation: The Case Of Pablo Neruda's Odas Elementales And Food, Mark J. Mascia

This article examines the ways in which Neruda poeticizes and celebrates different foodstuffs in his Odas Elementales, and connects these ways to the larger themes present in his general corpus of work. These odes, which ennoble and glorify everyday food and drink items, are treated as animate, living entities, and are at times frequently linked to a political or social cause as well.
