The rapidly rising incidence of overweight and obesity in Australia, particularly among young children has led to an urgent need for effective prevention. Recent figures indicate that 15% of preschool children in Australia are overweight, and a further 6% are obese1,2, with rates rising steadily especially among children from lower socioeconomic groups.
Family, childcare, primary health care, early childhood education and the community are influential environments for young children3-7 with the potential to engage in an integrated approach to promote healthy weight and development of healthy eating and active lifestyle habits during the pre-school years5,8,9.

The application of nanotechnology in the food and feed industry offers many potential benefits for both consumers and manufacturers.The ultrafine dimensions of nanoparticles, and consequently their very large surface area, enable them to function more effectively than conventional macro-scale structures in many applications. Seasonal Variation In Diet Of The Cotton Rat (Sigmodon Hispidus) Based On Fecal Analysis, Lynn A. Walker

Cotton rats, Sigmodon hispidus, live in oldfields, habitats with a variety of mostly herbaceous plants. Based on other studies, the hispid cotton rat eats predominantly grasses, but grasses rarely are the only food. Fecal samples were collected each month during an ongoing capture-mark-release demographic study of the rodent community at a location in southern Chesapeake, Virginia. In the lab, five fecal pellets per animal were stained, placed on a microscope slide, and covered with starch-gel medium and coverslip. Then a clear nail polish was applied to produce a semi-permanent slide. Using a microscope and a set of reference slides, plant …

Food Security And Hunger Among Low Income Us Households: Relations To Federal Food Assistance Program Participation, Rebecca Elizabeth Sanders

This dissertation describes the conceptual and empirical framework that guides the definition of food insecurity and hunger, the present status of federal programmatic responses, and the status of current research on the topic. It also examines relations between hunger and federal food assistance program participation. Logistic regression is utilized to build two predictor models. Model 1 predicts federal food assistance program participation from household structure, income, community characteristics, and demographics. Model 2 predicts food insecurity/hunger from household structure, income, community characteristics, demographics, and federal food assistance program participation. Results are based on 2004 Current Population Survey data from low income …

Organisms that cause food spoilage - molds, yeasts and bacteria - are always present in the air, water and soil. Enzymes that may cause undesirable changes in flavor, color and texture are present in raw fruits. When tomatoes are canned, they are heated hot enough and long enough to destroy spoilage organisms.

The article presents information on reading food labels to assist athletes in making better food choices. It discusses the six components required to appear on labels by the U.S. Food and Drug Administration (FDA), including product identity, net contents or number of servings per container, and the ingredient list. The key recommendations of the 2005 Dietary Guidelines for Americans are presented. Daily values as an expression of a food's nutrient content are discussed.

The restaurant industry now takes in over $500 billion a year, but recent courts have been skeptical of the notion that one of its most valuable assets, original recipes, are subject to copyright protection. With more litigation looming and the contours of the debate insufficiently mapped out, this article establishes the appropriate groundwork for analyzing the copyrightability of recipes. I show that, contrary to recent appellate court opinions, recipes meet the statutory requirements for copyrightability. I argue, by analogizing to musical compositions, that written recipes work to satisfy the fixation requirement of copyright law just as musical notation does for …

This paper explores the effectiveness of current foreign aid food programs in providing underdeveloped countries, particularly Sub-Saharan Africa, with the ability to solve hunger within those countries. More specifically, this paper advocates for the integration of genetically modified agricultural seeds into current foreign food aid programs. The science behind genetically modified seeds is briefly explored, along with the international covenants and declarations that deal with the "right to food." This paper discusses the advantages of providing genetically modified agricultural seeds to rural farming communities within Sub-Saharan Africa, and how such food aid would curb hunger levels in those countries. This chapter, new in the third edition, concerns how Congress, the Food and Drug Administration, and the courts have treated the definitions of "food," "drug," "cosmetic," "device," and "human biological product." The scope of FDA's power is delineated almost entirely by the list of product categories over which it has jurisdiction. As the materials in this chapter show, the product definitions are strikingly broad and thus confer jurisdiction over a vast range of goods. Furthermore, the definitions are remarkably plastic, providing FDA with great flexibility to decide whether and how to regulate products. Sometimes FDA has interpreted the definitions expansively, …

This twenty-two-panel exhibit traces Knox County's food system from farm to table. Drawing on interviews and fieldwork with dozens of local residents, including farmers, food processors, truckers, restaurant owners, and consumers, the exhibit consists of photographs and text that provide a unique perspective on the food we eat and the character of rural communities. The exhibit debuted at Kenyon College in May 2006 and has been featured at the Knox County Fair and the Centerburg (Ohio) Oldtime Farming Festival. This article reports on the B-Complex Vitamin's role in energy release. The author describes the importance of carbohydrates as a source of energy in physical activity, as well as the ways in which vitamins, minerals, and water work together to impact an athletes performance. Included are the definitions of essential chemicals, the importance of the six basic nutrients, and the role of B-complex vitamins in energy metabolism.

This nine-cube tabletop exhibit explores the implications of our food choices for us as individuals and for our community. Each cube explores a different implication of our food choices-- for nutrition, health, food production, economics, politics, and the environment. Materials presented include discussion of a food product and biographies of people related to the local food system. Copies are currently on display in restaurants, libraries, school cafeterias, medical offices, and assisted living centers.

Throughout Australia, a great number of resources have been devoted to the burgeoning billion dollar Australian olive industry. Recently a rapid increase in olive oil production has been witnessed. This growth combined with aggressive international competition will see pressure put on Australian producers to supply quality and price-effective olive oil into the Australian market. This will require a detailed understanding of consumers' perceptions of and thoughts about olive oil and a comprehension of how, when, where and why consumers utilise olive oil.

The Great Lakes fishery is highly utilized, despite known contamination. The Great Lakes Region has experienced elevated amounts of atmospheric deposition of mercury, with many of its water bodies having documented levels of mercury (ASTDR 1999, Dellinger 2004, Greib et al. 1990, Kleinert and Degurse 1971). The chemical characteristics of methylmercury contribute to high rates of absorption (highly lipophilic and readily crosses biological membranes) and low rates of elimination. As a result of the properties of methylmercury, 60-90% of the mercury in fish is methylmercury (O'Neill 1993). Methylmercury is taken in by fish from food sources, through the gills (Haydon …

Within the last 20 years, several meat-borne pathogenic microorganisms have emerged in the United States, causing numerous outbreaks of disease and death, as well as drastic economical losses.
Guidelines in this NebGuide are suggested for controlling temperature of meat and meat products in fabrication rooms so as to prevent detrimental growth of meat-borne pathogens.
