Background Information The global misuse and overuse of antibiotics in human medicine and the animal production industry is contributing to the development of antibiotic resistance in bacteria. This is a serious threat to modern medicine and public health. Antibiotic resistant organisms can cause severe infections in humans which are difficult to treat, and in some cases impossible to resolve which can lead to premature death. NASA’s future missions involve sending astronauts back to the moon, and further. Challenges associated with this goal are not limited to the science involved with propelling these astronauts to their destination. Life support systems must also advance to improve astronaut health during their long flights in space. Currently, food consumed in space is processed to be shelf stable, and recent experiments have shown that nutrients of these shelf stable foods decay over time. In the United States, the number of visually impaired and blind Americans will rise drastically as the population continues to age; and, yet little is known about how the impact of blindness affects an individual when it comes to the experience of food provisioning and preparation. This thesis presents the study of how the blind and the visually impaired experience food provisioning and preparation. It explores how modern technology and sensory training help these groups of people traverse kitchen and grocery store environments. Current research shows that foods high in sugar, salt, and fat can illicit addictive responses (Pursey, Stanwell, Gearhardt, Collins, & Burrows, 2014). Although measures of overeating pathology exist, only a few are dedicated to food addiction. Two of these measures are the Yale Food Addiction Scale (YFAS; Gearhardt, Corbin, & Brownell, 2009b) and the Eating Behaviors Questionnaire (EBQ; Merlo, Klingman, Malasanos, & Silverstein, 2009). Given the shortage of food addiction measures, the Humboldt Food Addiction Questionnaire (HFAQ) was developed to supplement the need for additional tools. In low-income, suburban Black communities, the prevalence of diet-related chronic illnesses is alarming. Various influences often increase diet-related illnesses among this population. One influence is the use of SNAP benefits to purchase food. In this study, the influences of SNAP as well as other influences affecting food purchase decisions among the study population was examined. A qualitative multicase study approach was used and, face-to-face interviews were conducted, to understand the experiences of 20 low-income, current recipients of SNAP who were Black and lived in suburban, New York. One-third of all food produced for human consumption is lost or wasted globally. In North America and Europe, 280-300 kg of food is wasted per capita each year, with more than 40% of the losses occurring at the retail and consumer level. In this paper, I compare the amount of food wasted in the United States to the amounts wasted by different societies around the world, and discuss the reasons for the food waste, and the consequences that the waste has on our society, in terms of resource consumption and production of pollution. Pacific sleeper shark relative abundance indices in the eastern Bering Sea and Gulf of Alaska were developed from sablefish longline surveys and the sustainability of a plausible range in Pacific sleeper shark incidental exploitation rates in the Gulf of Alaska was evaluated with a risk analysis using Monte Carlo simulation for use in fisheries management. A significant increase in Pacific sleeper shark relative abundance was identified in the Gulf of Alaska during the years 1989-2003. The aggregate risk of ending in an overfished condition in the Gulf of Alaska increased from 0% under a low exploitation rate scenario to 59% …

Harbor seals (Phoca vitulina) that use tidewater glaciers in the summers to molt, pup, and breed have declined in recent years, which could be attributed to reduced prey availability caused by regime shifts in the coastal marine environment. Recording seasonal dietary trends of harbor seals in different years could improve our ability to test if regime shifts caused these declines. However, such analysis has not been possible, because wild harbor seals are difficult to recapture. Stable isotope analysis of serial sections of growing whiskers (mystacial vibrissae) can be used as a tool to assess diet over different seasons, but uncertainty …

Eelpouts of the genus Lycodes are an abundant group of demersal fishes in the U.S. Beaufort Sea. Currently eelpout diet and the exact role of eelpouts in the Arctic food web are poorly understood. Additionally, if and how eelpouts avoid intra- and interspecific competition for resources is unknown. In this study, diets of four common Beaufort Sea eelpout species were analyzed with respect to along-shelf (longitude) gradients, across-shelf (depth) gradients, and ontogeny (fish body length) to determine diet composition and patterns of resource partitioning. Arctic fishes and ice seals are key components of the Alaskan Arctic ecosystem. Bearded (Erignathus barbatus), spotted (Phoca largha) and ringed (Pusa hispida) seals are consumers of Arctic marine fishes. Little is known about the sizes of fish that ice seals consume because prey items are digested quickly once exposed to stomach acids. Otoliths, fish ear bones, are often the only parts of a fish that remain in a seal stomach. Otolith length relates directly to fish length, making size estimations of consumed fish possible for piscivore diet studies. Food accessibility was determined for each Mississippi County, based on data obtained from the Retail Survey regarding common fruits and vegetables in available in food stores. Availability data were correlated with four social-economic/demographic variables: race, median household income, SNAP enrollment, and education. There were negative low magnitude correlations between percentages of Africans American and fresh fruit and vegetables availability, and percentages of SNAP benefits recipients and fresh fruit and vegetables availability. Positive low magnitude correlations were found between income and fresh fruit availability, and education and fruit availability. Human population, its number and distribution on our planet, has a seemingly direct linkage to how much food we consume and how we practice agriculture. How this population-foodenvironment interface manifests across the globe is complex, non-linear, and both local- and scale-dependent. This essay is an overview of the population-food-environment nexus, providing recent history and statistics on these processes at several crude scales. Using empirical and numeric data, this study explores the use of food as a proxy to understand the cultural-historical geography of southern Spain. After spending three months in Granada, Spain, I compiled the most commonly used thirty-five ingredients from a selection of Spanish cookbooks and contextualized them within the broader history of Spain. The elements of traditional Andalucían cooking fit into three primary chapters of Iberian history: Roman occupation, the Moorish invasion beginning in the 8th century, and the Columbian exchange, or the exchange of goods that took place between the Americas and Old World following European discovery of …

The science fiction genre has always been a hotbed for questions about the existence of life and what it means to be human. Food, like water and oxygen, is necessary to sustain life, but also is a key indicator of culture. One of the things that fascinates us about science fiction is how an imagined future culture might look. Blade Runner 2049, although not centred around food, interweaves food and agriculture into a dystopian narrative on evolution and a bio-engineered labour force, while asking us what it means to have memories and to be human.

Across the Arctic, taller woody shrubs, particularly willow (Salix spp.), birch (Betula spp.), and alder (Alnus spp.), have been expanding rapidly onto tundra. Changes in vegetation structure can alter the physical habitat structure, thermal environment, and food available to arthropods, which play an important role in the structure and functioning of Arctic ecosystems. GMOs are the links of our centralized food system, largely dependent on international trade. GMOs are inherently unsustainable because they reduce biodiversity, harm the environment, and empower positive feedback loops between monocultures, industrial agriculture, and biodiversity depletion, thereby jeopardizing food safety, security, and sovereignty. Conglomerates of multi-national companies, in short BigAg, shape multi-lateral food trade and flood international markets with their small array and enormous volumes of crops, while controlling large aspects of agriculture and food production world-wide. This article discusses a dairy advertising campaign featuring skeptic Derren Brown. I explore the various health claims made in the ads as well as a report Brown featured on his website that claimed consumption of cow’s milk is linked to longevity. I discuss how dairy consumption is largely linked to race and ethnicity. It is a practice enjoyed primarily by European whites as most nonwhites are lactose intolerant. Lactose intolerance is a normal biological process associated with weaning, but it is medicalized and made deviant because it is not part of the white experience. I also mention comments made by …

Objective: Lower body mass index (BMI) and higher dietary quality reduce the risk of colorectal cancer (CRC). A full understanding of how these associations vary by sex and weight is lacking. Methods: We used data from the National Institutes of Health - American Association of Retired Persons (NIH)-AARP) Diet and Health Study for 398 458 persons who were 50-71 years old in 1995-1996 and followed through 2006. Exposures were dietary quality as reflected by the Mediterranean Diet, the Healthy Eating Index-2010 and the Dietary Approaches to Stop Hypertension score, stratified by BMI category. Food and beverage class action litigation has increased tremendously over the last five years. While many have ridiculed these lawsuits as ploys to extort money from wealthy food producers, plaintiff consumers maintain that the surge of food litigation suits evidence their growing desire for transparency. Many food-based class actions allege companies are purposefully deceiving consumers with misleading marketing campaigns. Defendants argue that a reasonable consumer should know better than to take their advertising at face value. Even still, defendants are often eager to resolve conflicts without admitting liability and, in turn, rush to settle the matter. Courts are then faced …
