During a time of national and local debate over welfare reform, research is needed to determine the effectiveness of specific welfare programs and the impact on the lives of households participating in these programs. The objective of this study was to determine the effect housing and food expenditures have on the diet quality of low-income families. Participants for the study were drawn from government-subsidized housing rolls and housing assistance waiting lists. Diet quality was measured by 16 variables: percent RDA protein, fiber, vitamin A, vitamin C, iron, and calcium consumed; percent calories from protein, carbohydrates, fat, and alcohol; and the …

On January 24, 1996, after $200 million and 25 years of study by Procter & Gamble, the Food and Drug Administration (FDA) approved another fat substitute called Olestra. At this time, the product is approved for use only in snack foods such as potato, corn and tortilla chips, and crackers. The company plans to use the fat substitute under the trade name Olean. This publication discusses the facts of this fat substitute.

This study examines the interaction between moose (Alces alces gigas) and winter dormant willows (Salix alaxensis and Salix pulchra) in Alaska, emphasizing the impact of moose browsing on the forage produced by willow. In a two year field study, plant responses were examined with clipping treatments designed to simulate browsing by moose. The plant responses examined included biomass production, plant architecture, and concentration of plant tannins. Forage selection by moose in the study area is also addressed. Results suggest that a plant response of increased growth, decreased chemical defense, and redistribution of new biomass may explain the pattern of repeated …

Age-adjusted female hip fracture incidence has been noted to be higher in industrialized countries than non-industrialized countries. A possible explanation which has received little attention is that elevated metabolic acid production associated with a high animal protein diet might lead to chronic bone buffering and bone dissolution. In an attempt to examine this hypothesis, cross-cultural variations in animal protein consumption and hip fracture incidence were studied. When female fracture rates derived from 34 published studies in 16 countries were regressed against estimates of dietary animal protein, a strong, positive association was found. This association could not plausibly be explained by …

Many mule deer (Odocoileus hemionus) in Zion Canyon, Zion National Park appear to be in poor condition. In this study diet composition, nutritional value of the diet, prevalences of diseases and parasites, and herd composition were examined for further evidence of poor condition. Analysis of forage plants indicated a nutritionally adequate diet. This conclusion was also supported by serum chemistry results. Serum titer levels did not reveal any current infections, however, high eosinophil levels in 84% of animals tested were likely due to parasitism. Cysticeri of two species of Taenia, adult Elaeophora schneideri, and Sarcocystis hemionilatrantis were isolated in necropsies …

The physiological effects of the consumption of diets varying in protein and calorie content was assessed using young male Sprague-Dawley rats. Food intake (FI), water intake (WI), body weight (BW), rectal temperature (Tre), oxygen consumption (VO{dollar}\sb2{dollar}), hematocrit (Hct), Hemoglobin (Hb), plasma protein concentration (PP), and plasma levels of thyroxine (T{dollar}\sb4{dollar}), triiodothyronine (T{dollar}\sb3{dollar}), free thyroxine index (FT{dollar}\sb4{dollar}), and thyroid stimulating hormone (TSH) were measured. Food intake expressed per g BW was highest in the LP (5% protein) diet group, but body weight gain was the lower in the LP fed group compared to the Control group (22.5% protein). Several factors should be considered when feeding full-fat soybeans to swine, including nutrient composition, performance, economic considerations and diet formulations.

Soybean meal is the most common supplemental protein source used in pig diets. It is widely available, and often produces the most economical gains when compared with other protein sources. For various reasons, feeding full-fat soybeans to pigs, instead of soybean meal, may be an attractive alternative.

The purpose of this study was to determine and evaluate the dietary intake of pregnant women living in this geographical area, evaluate how their diets related to their iron status, how their nutrient intakes compared with other studies, and how their iron status and diet affected infant iron status and development, as assessed by the Bayley Scale of Infant Development.

The study involved 32 pregnant women who were between 8 to 14 weeks gestation and 20 to 35 years of age. They were followed through pregnancy and their infants were followed until three months of age.

The use of color coded prompts to influence students' food selections in choosing a balanced meal was investigated. Yellow, green, blue, and orange dots, representing the four major food groups, grains, fruit and vegetables, dairy, and meat respectively were displayed at the point-of-selection on food entree cards along the serving line of a college dining hall. Two grain servings, two fruit/vegetable servings, one dairy serving, and one meat serving, were suggested as the optimal combination for a balanced meal. The evidence is clear that the incidence of dental caries is related to the frequency of eating sugar. The use of sugar substitutes is a suggested way of reducing sugar intake. A variety of noncariogenic sweeteners exists, but most have no practical value for caries control because of their technical or safety problems, taste, or cost. Urinary bladder tumorigenic effects have been reported in experimental animals treated with saccharin and cyclamates. Because of concerns for human safety, cyclamates were banned in the U.S., and saccharin use was permitted only by special legislation. The polyalcohols sorbitol and xylitol are important sugar …

It has recently been reported that a low intake of calcium may be a risk factor for hypertension. In view of the contradictory results, even when the same survey data base has been used by different researchers, an in-depth analysis was undertaken of the data provided by the two cycles of the National Health and Nutrition Examination Survey (NHANES). Both surveys, conducted in consecutive 4-year intervals during the 1970s, were designed to examine representative samples of the U.S. civilian noninstitutionalized population. This was a quasi-experimental study designed to determine the difference in blood cholesterol and triglyceride levels of subjects post-myocardial infarction (post-MI) who practiced the high fiber-high carbohydrate diet and subjects post-MI who did not practice the diet. The researcher had hypothesized that when the blood levels of cholesterol and triglycerides of post-MI subjects who were practicing the high fiber-high carbohydrate diet were compared to those who were not practicing the d i e t , there would be no significant difference.
