The ability of acivicin (AT-125), probenecid, and aminooxyacetic acid (AOAA), to ameliorate 1-cyano-3,4-epithiobutane (CEB)-induced nephrotoxicity and karyomegaly was evaluated by histopathology and histomorphometry. Epithelial cell necrosis and karyomegaly were observed in the renal proximal tubules at 24 and 48 hours in all of the treated groups with the exception of AOAA pretreated rats at 24 hours. A predominant urinary metabolite of CEB was identified as the mercapturate, N-acetyl-S-(4-cyano-2-thio-1-butyl)-cysteine. Evidence of other urinary metabolites was also demonstrated. The influence of inhibitors on the GSH-enhancing effect of CEB was determined through measurement of tissue GSH levels and $\gamma$-glutamyl-cysteine synthetase (GCS) activity. Hepatic …

The shelf-life of ground beef in modified atmosphere packaging (MAP) with exchange of gases before retail display was compared with conventional vacuum packaging (VP) and overwrapping with polyvinylchloride film (PVC) for display. Ground beef patties in MAP with distribution gases of 20% $\rm N\sb2:80\%\ CO\sb2,\ 50\%\ N\sb2:50\%\ CO\sb2,\ or\ 80\%\ N\sb2:20\%\ CO\sb2$ and display gases of 80% $\rm O\sb2:20\%\ CO\sb2,\ 50\%\ O\sb2:20\%\ CO\sb2:30\%\ N\sb2,$ or 20% $\rm O\sb2:20\%\ CO\sb2:60\%\ N\sb2$ had decreased weight loss, microorganism growth rate, metmyoglobin formation, and color degradation compared with patties in VP-PVC. The demand for breast meat has caused a surplus of broiler legquarters, which cannot be easily or efficiently deboned by hand. Oxidative stability and texture of mince recovered with two mechanical deboners, a belt/drum separator with 5 mm (BD5), 2 mm (BD2), and 5 mm followed by 2 mm (BD5/2) drum or auger/sieve (SD) deboner with slit openings of 0.25 mm, were evaluated. Mechanical deboned chicken meat (MDCM) had higher fat, ash and lower moisture than hand deboned meat. BD2 meat contained calcium at levels below those allowed by USDA, but had higher fat that decreased oxidative stability. Washing of …

Three experiments were conducted with pigs and four experiments were conducted with chickens to determine the effects of supplemental dietary Cr on growth performance, carcass characteristics, tissue minerals and plasma metabolite and hormone concentrations. In pigs (Exp. 1) 200 ppb Cr from seven different sources tended to decrease performance during the grower phase and increase growth performance during the finisher phase. Dietary Cr had minimal effects on plasma metabolite and hormone concentrations and Cr did not affect carcass characteristics. Preharvest infection by Aspergillus flavus Link ex Fries and subsequent aflatoxin contamination of maize (Zea mays L.) grain are major production problems. Ear moisture loss rate (EMLR) is an important component of hybrid performance and maturity, and to some extent determines the suitability of a hybrid for a geographical area. A 10-parent diallel experiment was conducted in 1992 and 1994 to study the genetic nature of both percent kernel infection (PKI) by A. flavus and EMLR. General combining ability (GCA, V$\sb{\rm g}$), specific combining ability (SCA, V$\rm\sb{s}$), and reciprocal mean squares for PKI were significant. Gonadal recycling of oyster broodstock, salinity effects during induction, and cytochalasin B (CB) dosage were investigated as factors affecting the production of triploid oyster larvae in Louisiana. These factors were studied at an oyster hatchery on Grand Isle, LA during 1992-1994 to help transfer triploid oyster technology to the Gulf region. Oyster broodstock were held nearshore in Caminada Bay, Louisiana and histologically analyzed between induced spawnings and during the winter of 1992-1993. Gametogenesis was analyzed qualitatively by developmental staging and quantitatively using mean gonad/body ratios (GBR) per section. A critical problem associated with the production of sweetpotato puree is the inconsistency of final product. Two possible factors, amylase activity and carbohydrate content in sweetpotatoes during storage, were investigated. It was found that $\alpha$- and $\beta$-amylase activities do not significantly change during storage, and have no significant effects on viscosity of sweetpotato puree. The inconsistent products in sweetpotato puree processing are mostly due to the change of alcohol insoluble solids (AIS) in sweetpotatoes during storage. The influences of lipid peroxidation and pigment autoxidation in beef and liposome model systems were examined in modified atmosphere packaging containing oxygen (O$\sb2).$ Ground beef of 75 and 90% lean were packaged in 80% nitrogen (N$\sb2){:}20\%$ carbon dioxide (C$\sb2)$ for distribution and storage atmospheres were exchanged for 80% $\rm O\sb2{:}20\%\ CO\sb2$ at 15, 18, 20, 22, 25, 27 or 29 days postpackaging before retail display. On the same postpackaging day, samples from longer gas exchange, but shorter display times had lower lipid oxidation, psychrotrophic growth, metmyoglobin formation, discoloration and odor scores when compared with samples from shorter gas exchange times …

This research assessed fecal bacteria trapping in surface runoff by grass filters and their potential to enhance NO3- removal via denitrification. Grass filter strips 9.0 m long trapped over 99% of the soil in surface runoff in 1992. Fecal coliform removal was less than 75%. In 1993, 9.0 and 4.5 m grass filter strips trapped 99 and 95% of the sediment, respectively. Fecal coliform trapping efficiency was 90% in 9.0 m grass filters and 75% in 4.5 m filters. Fecal streptococci trapping efficiency was 77% in 9.0 m grass filters and only 56% in 4.5 m filters. Fecal …

Agriculture Without Farmers?: Is Industrialization Restructuring American Food Production And Threatening The Future Of Sustainable Agriculture?, Neil D. Hamilton

Northern Illinois University Law Review

This article addresses the rapidly changing face of American agriculture. The author identifies a series of contradictions in American attitudes concerning agriculture and discusses the potential threat to the future of farming in the shape of the coming industrialization. He also addresses the movement toward the concept of sustainable agriculture and suggests a number of steps which can be taken to confront the changing structure of agriculture. The author concludes by setting forth a number of current developments in agriculture which may be considered signs of optimism for the future of farming.

Phosphorus in agricultural runoff is often a major cause of accelerated eutrophication of lakes and streams. Previous research has indicated that the amount of dissolved P (DP) in runoff is directly related to P content of the surface soil. Decades of fertilizer application at rates exceeding those of crop uptake have elevated soil test P (STP) levels in areas of intensive crop and livestock production, making this the major source of DP loss in runoff. All crop plants produced in Kentucky have the potential to become diseased under certain conditions. Diseases of crops can affect yield and/or quality of the harvested commodity. This can impact profitability and increase the risks of farming.

A plant is diseased when it is affected by some agent that interferes with its normal development. Some disorders are caused by noninfectious factors, such as temperature extremes or nutrient deficiencies. However, this publication focuses on diseases caused by infectious microorganisms.

Estrogens may protect against coronary artery disease (CAD) as women have less CAD than age-matched men, and postmenopausal women on estrogen have less CAD than those without replacement therapy. To elucidate potential benefits of 17 beta-estradiol on atherogenesis, female swine and hamsters were treated to yield three groups: (1) ovariectomized (ovex), (2) ovariectomized with estradiol replacement (ovex + estradiol), and (3) sexually intact. Postoperatively, animals were switched from a low fat to a high fat diet for measurement of acute estradiol effects in swine and chronic effects in hamsters. Five, multiparous, Holstein cows fitted with ruminal and duodenal cannulas were assigned to 5 x 5 Latin squares at peak, early, and mid lactation to determine the required level of Met in duodenal digesta for maximum synthesis of milk protein. Cows were fed corn-based diets, formulated to be most limiting in Met and Lys, and were infused with incremental amounts of Met and a basal amount of Lys. The calculated required contributions of Met to total essential AA passing to the duodenum for maximum milk protein synthesis exceeded 5.5 and 5.2% of essential AA for the peak and early lactation …

The identification of and disease cycle of wheat scab is described along with its management. Guidelines for using wheat contaminated with vomitoxin also are included.

Scab or Fusarium head blight is an important disease of wheat, barley, oats, rye and wheatgrasses. Scab manifests itself by the premature death or blighting of spikelets in the wheat head. Direct yield losses are often minor, but can be higher than 50 percent in severely infected fields. The economic significance is magnified by the possibility that the low quality, shriveled grain also can become contaminated by mycotoxins (e.g. vomitoxin, zearalenone).

The ultimate goal of any breeding operation should be both maximal foaling and a high survival rate of foals. Most mares will have a normal parturition if left unattended, however, the value of broodmares and their progeny can make leaving parturition to nature an expensive gamble. As the value of mares and foals rise, it becomes more desirable to have someone present during foaling, allowing for immediate assistance to both mare and foal if needed.

Crawfish processing by-products (CPBs) were hydrolyzed using protease to evaluate the potential for bioflavor production. Ten commercial proteases (neutral and alkaline) were tested at both 37$\sp\circ$C and their optimum temperatures using CPBs as substrate. Of these, APL-440 was selected for enzymatic hydrolysis of CPBs on the basis of activity per cost. Response surface methodology (RSM) was used to optimize the hydrolysis of CPBs using APL-440. Optimum hydrolysis conditions for enzymatic hydrolysis of CPBs with APL-440 were determined to be pH 8-9, 65$\sp\circ$C, 2.5 hr reaction time, 75% substrate concentration, and 0.3% APL-440. Race 1 isolates collected from tomato roots were used to develop an orange mutant of Fusarium oxysporum f. sp. lycopersici (FOL) for use in competitive infection tests against nonpathogenic F. oxysporum isolates. Eighty one color mutants were induced by exposure to ultraviolet light. The mutant ORA-22 retained pathogenicity and growth habit similar to the wild-type. Preliminary competitive infection tests indicated differences within the nonpathogenic population in the ability to suppress or enhance infection by FOL orange mutant ORA-22. Four vegetative compatibility groups (VCGs) were tested to determine if competitive infection ability was associated with VCG designation. Results from these tests …

This study was conducted to: (1) determine the effects of stocking density and dietary protein:energy ratio on survival, growth, feed consumption, feed conversion, lipo-somatic index, dress-out percentage, and productive protein value of common snapping turtles; and (2) determine the fatty acid composition of muscle, liver, and fat bodies of wild common snapping turtles and common snapping turtles fed a diet of known fatty acid composition. Hatchling common snapping turtles, Chelydra serpentina, were stocked at five or 10 animals per container (29 and 58 turtles/m$\sp2$, respectively), and fed one of seven prepared diets.
