Seventy percent reduced fat Cheddar cheese was manufactured with homogenized cream and sweet cream buttermilk powder in an effort to improve flavor and texture characteristics. Manufacturing procedures, as well as the chemical, physical and sensory attributes. Pasteurized cream was homogenized (15.8 MPa) with and without the addition of buttermilk powder. The cream was added to pasteurized skim milk to produce two vats of cheese, one with and one without buttermilk powder. After milling, each vat was split to produce a washed curd and normal curd cheese. The four cheeses were sampled at week one, and months one, two and four. …

This research was conducted to obtain a better understanding of the amino acid needs of finishing pigs. Twelve experiments were conducted using the urea nitrogen method to determine the lysine requirement of gilts and barrows. Two experiments were conducted to determine the optimum ratio of total sulfur amino acids to lysine for finishing pigs (74 to 111 kg); and three experiments were conducted to evaluate the net energy content of low crude protein, crystalline amino acid supplemented diets for finishing pigs (70 to 117 kg). Dip-nets, test traps and experimental drop samplers were evaluated for their potential to predict crawfish (Procambarus spp.) yields and size distribution at harvest. Field studies were conducted at the Rice Research Station, LSU Agricultural Center, Crowley, Louisiana, between 1991 and 1996 in 82 (0.16-0.2 ha) earthen impoundments. Fields were managed to simulate rice-crawfish systems typical of the southwestern and south-central Louisiana. Multiple linear regression analysis was used to determine the relationship among catch-per-unit-effort (CPUE) of sampling gear (alone and in combination) with respect to yield in weight (kg/ha), yield in number (crawfish/ha) and size distribution at harvest. Aflatoxins and fumonisins, secondary mold metabolites, occur naturally as co-contaminants in corn. Health and economic risks associated with this contamination of food and feed have been the focus of much research worldwide. Research programs resulting from the discovery of aflatoxins in the 1960's has been used to guide study programs for fumonisins. The establishment of food safety programs, including mycotoxin decontamination procedures, must be evaluated for further application. The channel catfish industry has experienced tremendous growth over the last several years. This growth has triggered more intensive culture practices resulting in disease outbreaks and devastating mortalities. Medicated feeds and vaccination have been of limited use. This research presents studies on techniques to produce disease resistant channel catfish by gene transfer. The gene used was the cecropin B gene from the giant silkworm moth Hyalophora cecropia, controlled by an acute phase response (APR) promoter also from H. cecropia. Tip Blight
Tip blight, caused by the fungus Sphaeropsis sapinea (formerly Diplodia pinea), is a serious disease of mature Austrian, Scots (Scotch), and Mugo pines in Kentucky. In the landscape, tip blight is normally not observed until pines reach about 12 years old and begin to bear cones. Severe infections year after year can greatly weaken and eventually kill affected pines.

The aim of the paper is to identify the outstanding issues in Nigeria's agricultural policy in the context of the macroeconomic policy reforms adopted in the last ten years. Beset partly by macroeconomic policy distortions, agricultural sector performance was grossly inadequate in the 1970s and up to 1985. The macroeconomic policy reforms adopted in 1986 were aimed at removing the distortions to enhance macroeconomic stability and sectoral performance. A major finding of the study is that agricultural sector performance improved significantly especially during the initial phase of the policy reforms. The primary objectives of experiment 1 were to determine the effects of changes in feed intake associated with the periparturient period (late gestation to early lactation) on passage of nitrogen fractions and amino acids to the small intestine and to determine if changes occurred in the profile of amino acids presented to the small intestine that could not be explained by diet composition. An abandoned animal feeding facility is a significant threat to the environment. Procedures to minimize the risk are discussed.
Feedlot abandonment occurs for various reasons, including economic and social changes, environmental concerns, consolidation for more cost effective management and operation, and modification of personal goals. Whether a feedlot is abandoned for a short time until some crisis passes, or permanently, steps are necessary to minimize the risk of environmental degradation.
Under both scenarios, an abandoned feedlot poses an immediate threat to surface and groundwater quality. The unused facility is also a potential nuisance and source of health problems for humans …

The paper outlines changes in agricultural production and rural policies in Cambodia since 1953, when the country gained independence from France, and considers whether current rural conditions are different from those that existed during the 1960s, prior to the Khmer Rouge insurgencies. Economic and political reforms begun in 1989 by the Khmer People's Revolutionary Party government have not yet created a sound economy and acceptable living conditions for the majority of Cambodians. About 85 percent to 90 percent of Cambodia's population continues to live in rural areas, mostly as household cultivators, but that food security for peasants is not guaranteed. …

Application of composted municipal waste to agricultural lands has potential benefits to improve soil fertility and crop yield. It may lead to accumulation of heavy metals within soils and leaching of nutrients and heavy metals into the ground water. The objectives of this study were to investigate: (1) the effects of composted municipal waste and fertilizer on soil chemical properties and sugarcane elemental uptake and yield; and (2) the leachability of elements in compost amended soils. A series of experiments were designed to determine the cyclooxygenase (COX) isoform responsible for prostaglandin release during ovulation and luteolysis. Initially, a reliable, serum-free culture system was developed to produce large numbers of bovine granulosa cells originally harvested from the small antral follicles of abattoir ovaries. This method allowed adequate numbers of cells to be obtained for the subsequent study involving cyclooxygenase regulation. In a second experiment, bovine granulosa cells from small antral follicles were isolated and cultured as in the first experiment for 6 days. While brown rice is nutritionally superior to white rice, it is not shelf stable, becoming rancid in a matter of weeks. Preservation by refrigeration or freezing is expensive and not universally available. Therefore, other preservation methods, such as aqueous ethanol extraction of lipids, have been studied to overcome this problem, but these methods also have limitations. The effects of gamma-irradiation on the physicochemical properties and lipase activity in brown rice has been well documented. An understory vegetative succession study was conducted on the LSU Lee Memorial Forest near Bogalusa, Louisiana. Research blocks were established within fifteen-year-old overstocked loblolly pine (Pinus taeda) stands, in specific areas classified as with or without a history of prescribed burning for the current timber rotation. Silvicultural treatments involved precommercially thinning randomly selected blocks to various stand densities, along with the establishment of unthinned control areas. Growth rates of residual trees were determined from tree diameter measurements, on all timbered plots. The first objective of this research was to develop a decondensation treatment for bovine spermatozoal DNA that worked consistently across bulls and breeds. The second objective was to use the decondensed DNA for polymerase chain reaction analysis of levels of Y-bearing spermatozoa in different ejaculates and in sex sorted spermatozoa. Decondensation of spermatozoa with dithiothreitol and potassium hydroxide was compatible with in vitro amplification and did not inhibit amplification. The polymerase chain reaction and image analysis were used to differentiate between proportions of Y spermatozoa by measuring fluorescent intensities of electrophoresed, polymerase chain reaction-amplified DNA. The parameters of bioconversion of limonene to $\alpha$-terpineol by Penicillium digitatum were determined. This bioconversion was carried out stereo-specifically and selectively by this fungus. (R)-(+)-limonene was selectively converted to (R)-(+)-$\alpha$-terpineol by mycelia of this fungus during early growth phase. Immobilization of the fungal mycelia for use in continuous production of this product was possible. Aeration was critical to this bioconversion. The optimum aeration was about 1.6 mg/L for growing cells and immobilized cells. Substrate inhibition of the bioconversion was not observed when the substrate concentration was below 4% (v/v). End product inhibition was observed. The $\rm Ki\sb{app}$ was 12.08 mM. …

Reduction And Management Of Vibrio Vulnificus In Gulf Coast Oyster (Crassostrea Virginica)., Yu-Pin Chen

The AmeriPure Process (AmeriPure Oyster Company, New Orleans, Louisiana), which is a mild heat treatment for a specific time period, proved effective in eliminating Vibrio vulnificus from the Gulf Coast oysters (Crassostrea virginica), thus reducing the risk of possible V. vulnificus infections. The treatment was effective in the reduction of V. vulnificus in both $1.5\times10\sp5$ MPN/g (high artificially contaminated level) and $2.4\times10\sp3$ MPN/g (low artificially contaminated level) to undetectable level (MPN $<$ 3/g). The mild heat treatment also reduced naturally occurring V. vulnificus $(8.9\pm3.7\times10\sp4$ MPN/g) present in shellstock oysters harvested in warmer months to undetectable levels. The D value for V. vulnificus present in shellstock oyster averaged 45.6 $\pm$ 3.3 seconds at the AmeriPure Process temperature. Mild heat treatment can also control aerobic plate count numbers during refrigerated storage (0-2$\sp\circ$C) and extend the shelf-life of raw oysters for at least 7 days over unprocessed samples. Mild heat treated oysters need to be refrigerated (${<}4\sp\circ$C) to ensure the safety and quality, as well as shelf-life. Oysters treated according to the AmeriPure Process when exposed to an average room temperature of 27$\sp\circ$C were found unacceptable after 24 hours due to the high number of aerobic plate count (10$\sp7$ CFU/g) and were considered not safe to eat. Although there was a slight lightening in color, sensory panels, composed of both traditional raw oyster consumers and infrequent consumers, found the treated product to be comparable in flavor, texture and smell to untreated oysters. According to the result of sensory evaluation, the good oyster flavor of treated samples increased and the off-flavor and off-odor of the treated oysters were significantly lower than the control samples after 7 days of storage on ice. Possible temperature variations, which could occur during the transportation and storage were studied in a temperature abuse study. The result showed that no Vibrio vulnificus was recovered and no significant microbiological quality change was observed after 10 hours of exposure to the room temperature of $22\pm2\sp\circ$C.

A genetic analysis was conducted on preweaning and postweaning growth and carcass composition records from steers produced in two long-term crossbreeding studies. In phase I, Angus (A), Brahman (B), Brangus (BR), Charolais (C) and Hereford (H) sires produced straightbred, F$\sb1$, back-cross, three-breed cross and 2- and 3-breed rotational crossbred steers (N = 708) from 1960 to 1968. Straightbred, F$\sb1$, back-cross, three-breed cross and 2-, 3- and 4-breed rotational crossbred steers (N = 1530) were produced from 1970 to 1988 by A, B, C and H sires in phase II. Direct and maternal additive and non-additive genetic effect contrasts were obtained. …
