Protein oxidation, a phenomenon that was not well recognized previously but now better understood, is a complex chemical process occurring ubiquitously in food systems and can be induced by processing treatments as well. While early research concentrated on muscle protein oxidation, later investigations included plant, milk, and egg proteins. The process of protein oxidation involves both radicals and nonradicals, and amino acid side chain groups are usually the site of initial oxidant attack which generates protein carbonyls, disulfide, dityrosine, and protein radicals. The ensuing alteration of protein conformational structures and formation of protein polymers and aggregates can result in significant …

In the recent past, there has been rising attention to systemic racism. The ensuing discussions have largely focused on COVID-19 and policing. Despite long-standing disparities in obesity across racial and ethnic groups and obesity’s important role in COVID-19 disparities, there has been minimal attention to whether obesity itself could be a manifestation of systemic racism. Nor has there been serious policy attention dedicated to alleviating obesity and its disproportionate burden on BIPOC (Black, Indigenous, and People of Color). We discuss whether obesity’s disproportionate harms to BIPOC may be attributed to systemic racism, and we provide a ten-point strategy for studying …

It has been approximately 10years since the Government Accountability Office (GAO) published its report to Congress entitled, FDA Should Strengthen Its Oversight of Food Ingredients Determined to be Generally Recognized as Safe (GRAS), which strongly criticized FDA noting that its “oversight process does not help ensure the safety of all new GRAS determinations.” Congress requested GAO to undertake this audit as a result of concerns that GRAS substances added to foods did not require FDA approval. Since 2010, FDA has addressed only a few of the criticisms regarding its process for establishing a food substance as GRAS. However, several of …

Agroforestry systems have enormous potential to mitigate climate change. These systems incorporate trees and shrubs into agricultural production, increasing both soil carbon sequestration and the amount of carbon stored in biomass. Even the most conservative estimates find that agroforestry sequesters two to five times more carbon per acre than the most effective—and better known—climate-friendly practices for annual crops, such as no-till agriculture and cover crops. Agroforestry also offers substantial environmental and economic benefits: clean water, reduced fertilizer and pesticide use, greater resiliency, and higher profitability per acre. While some teacher candidates may believe reading instruction is the responsibility of English teachers, providing teacher candidates across all content areas with opportunities to develop skills working with developing readers may impact this misconception. Since some teacher candidates have limited experience, confidence, and/or reading strategies to instruct developing readers, this study examines the individual experiences of reading mentors at a midwestern university and the effect of their experience on developing readers. This mentoring experience revealed an impact both for the teacher candidates and developing readers. This opportunity proved to be rewarding while providing a glimpse of the reality of working …

This research examines the underlying issues about mental illness, particularly depression within the Hmong community. Previous scholars have focused on the Hmong culture’s origins, mental health status of Hmong refugees arriving in the United States, martial roles and mental health on Hmong females, and comparisons of Hmong traditional healing and Westernized medicine. These studies intersect in fields including psychology, medicine and public health, Hmong history, and social work. However, one missing component to this body of scholarship has been communication. Brazil is commonly viewed as a racial paradise on the world front due to its highly mixed-race population. Compared to the United States and South Africa, race-based discriminatory laws and racially motivated violence in Brazil have been absent. Despite these factors, African descendants in Brazil have been at a socioeconomic disadvantage since the nation's birth. Brazilian anthropologist Gilberto Freyre put forth the racial democracy ideology, stating that anyone can ascend the socioeconomic ladder no matter their race. My experiences with healthcare providers, which pervade my earliest childhood memories, motivated me to become autonomous in managing my health and wellness. This autoethnographic research explores the literacy activities embedded in everyday lived experiences that informed the process of lamination in composing health literacy which influenced health practices and outcomes. By tracing textual trajectories and examining the process of chronotopic lamination to compose my health literacy across everyday literacy activities this autoethnographic thesis project highlights how nonmedically trained persons can use official and nonofficial sources to create a social and culturally contextualized health literacy. Women play an active role in all activities even though they continue to struggle in the society. Artworks have been produced by artists to project the struggles of women in the community. The world population is still facing the second wave of the COVID-19 pandemic. Such a challenge requires complicated tools to control, namely vaccines, effective cures, and complementary agents. Here we present one candidate for the role of an effective cure and/or complementary agent: lactoferrin. It is the cross-talking mediator between many organs/cellular systems in the body. It serves as a physiological, immunological, and anti-microbial barrier, and acts as a regulator molecule. Besides being a common food component broadly consumed worldwide, egg yolk immunoglobulin Y (IgY) has essential therapeutic potentials. In fact, in a time of ever-increasing risk of antibiotic resistance, it is crucial to find new ways to battle infection, and oral administration of preformed specific antibodies represents one of the most attractive approaches against infection. Treponema pallidum, an obligate human pathogen, has an outer membrane (OM) whose physical properties, ultrastructure, and composition differ markedly from those of phylogenetically distant Gram-negative bacteria. We developed structural models for the outer membrane protein (OMP) repertoire (OMPeome) of T. pallidum Nichols using solved Gram-negative structures, computational tools, and small-angle X-ray scattering (SAXS) of selected recombinant periplasmic domains. The T. pallidum “OMPeome” harbors two “stand-alone” proteins (BamA and LptD) involved in OM biogenesis and four paralogous families involved in the influx/efflux of small molecules: 8-stranded β-barrels, long-chain-fatty-acid transporters (FadLs), OM factors (OMFs) for efflux pumps, and T. pallidum repeat proteins …

Previous studies found that individuals with Autism Spectrum Disorder (ASD) tend to demonstrate poor health behaviors, including unhealthy nutrition habits and low physical activity (PA) levels. Growing research suggests the PA can improve ASD-related symptoms and attenuate the mental and physical adverse effects of the COVID-19 pandemic. Unfortunately, the stay-at-home order was put in place because of COVID-19, which negatively affected health behaviors in many individuals with ASD, including an increase in sedentary behavior and screen time and less PA participation. The United States suffers from a significant disparity in the availability of the medical resources and expertise among different regions of the country. Patients in rural areas may not have the opportunity to consult with a physician until their disease progresses to later stages, resulting in a considerable decrease in quality of life. Advances in telemedicine systems that can provide remote communication, medical data acquisition, and medical data analysis promise a significant improvement to early access to medical care and diagnoses for disadvantaged individuals.

This article examines how adult educators at an urban community college, cope with and persist in the face of dual pandemics: COVID-19 and systemic racism. It delves into the requirements they faced turning in-person instruction to distance learning platforms at a moment’s notice, how they dealt with claims of racial disparity in doing so, and how the resurgence of racial unrest across the country challenged not only their own values and beliefs but how these events impacted their ability to teach and interact with their diverse students. Nutrition intake plays a crucial role in improving athletic performance, enhancing adaptations to training, and augmenting recovery from exercise. However, research has reported that Gaelic footballers consistently fail to meet energy and carbohydrate recommendations. Sports nutrition knowledge (SNK) can influence the dietary intake of athletes, and therefore has the potential to have a significant impact on athletic performance. AIM To provide a detailed gene and protein expression analysis related to mitochondrial biogenesis and assess mitochondrial content in skeletal muscle of children with cerebral palsy (CP). METHOD Biceps brachii muscle samples were collected from 19 children with CP (mean [SD] age 15y 4mo [2y 6mo], range 9–18y, 16 males, three females) and 10 typically developing comparison children (mean [SD] age 15y [4y], range 7–21y, eight males, two females). Soil amendments with high carbon (C) content can be effective in semi-arid regions where soils are characterized by low C. A field study was conducted in 2016–2018 to evaluate the effect of char on soil chemical properties and irrigated maize (Zea mays L.) yields in sandy loam fertilized with urea or composted manure. Carbon-rich char used was a product of coal combustion residue from a local factory in western Nebraska. Standardized patient (SP) use is growing within professional athletic training programs to supplement students clinical experiences because SP encounters authentically replicate real-time patient encounters. Previous researchers have identified benefits of SP encounters, but most research focused on SP use from the educators perspective. Therefore, the purpose of this study was to examine students perceptions of SP experiences and determine what characteristics of SP encounters students perceived to be most helpful to their professional growth. We used a phenomenological qualitative design. Kequshqyerja tek fëmijët mund të shkaktojë zhvillim dhe rritje të dobët. Ushqyeshmëria adekuate është kyçe për shëndetin dhe zhvillimin e çdo gjenerate. Qëllimi i këtij hulumtimi është për të vlerësuar nivelin e nën-ushqyerjes dhe kequshqyerjes te fëmijët nën moshën 6 vjeçare në Republikën e Kosovës. Hulumtimi është kryer duke marrë për mostër 200 fëmijë në institucionet parashkollore publike dhe private. Instrumentet e përdorura për kryerjen e hulumtimit ishin: pyetësori socio-demografikë, matjet antropometrike duke përfshirë peshë dhe gjatësi, si dhe fleta kontrolluese për zhvillimin e fëmijëve.
