Enriching The Vision Of Campus Kitchen: A Recipe For Justice, Bryan W. Sokol, Melissa A. Apprill, Liam D. John, Ashlei Peterson
Experiential Learning & Teaching in Higher Education
Campus Kitchen provides an environment that is ripe for community-based, experiential-learning experiences, especially on the topic of Eco-Justice. Student volunteers have substantive opportunities to investigate and promote various food justice and hunger advocacy initiatives, as well as form meaningful personal relationships with those whom they serve. Volunteers are encouraged to learn everything from the practical skills of food preparation to the social forces that underlie food insecurity in the community. Still, many Campus Kitchen participants remain unaware of the seriousness of food waste and “throwaway” cultural attitudes that perpetuate hunger. This paper presents data illustrating the different levels of understanding …

Fostering Self-Authorship And Changemaking: Insights From A Social Entrepreneurship Practicum, Anke K. Wessels, Sarah J. Brice, Kelsey P. Chan, Emily S. Desmond, Deana Gonzales, Chelsea Lee, Ryan J. Stasolla
Experiential Learning & Teaching in Higher Education
The question we are explore in this paper is how a collaboration between a practicum-based course and a social enterprise encourages students to examine, discuss, and apply complex social justice concepts and frameworks. We also investigate how this fosters in them a sense of self as changemaker, a form of self-authorship that includes the confidence to tackle justice issues in collaborative and practical ways. Applying the framing of Baxter Magolda’s Learning Partnerships Model, we first describe our experiential pedagogical practice and then illustrate outcomes by drawing exemplars from student reflections. These reflections confirm that a community-based learning practice can support …
Nitrogen Cycle Chemistry With Metal-Pincer Complexes Relevant To Electrochemical Nitrogen Fixation, Gannon Patrick Connor
Nitrogen Cycle Chemistry With Metal-Pincer Complexes Relevant To Electrochemical Nitrogen Fixation, Gannon Patrick Connor
Yale Graduate School of Arts and Sciences Dissertations
The large-scale industrial fixation of N2 to NH3 through the Haber-Bosch process has cemented itself as the primary means to provide N for fertilizer and commodity chemicals globally. However, our dependence on this process is unsustainable in the long term due to its reliance on fossil fuels to generate H2 and to provide the substantial energy input for the reaction, paired with high infrastructure requirements that necessitate centralized synthesis plants and sophisticated transportation networks. As an alternative, electrochemical fixation of N2, coupling water oxidation to provide proton (H+) and electron (e–) equivalents with the N2 reduction reaction (NRR) to achieve …

Sequentialdynamics Of Stearoyl-Coa Desaturase-1(Scd1)/Ligand Binding And Unbinding Mechanism: A Computational Study, Anna B. Petroff, Rebecca L. Weir, Charles R. Yates, Joseph D. Ng
Faculty and Student Publications
Stearoyl-CoA desaturase-1 (SCD1 or delta-9 desaturase, D9D) is a key metabolic protein that modulates cellular inflammation and stress, but overactivity of SCD1 is associated with diseases, including cancer and metabolic syndrome. This transmembrane endoplasmic reticulum protein converts saturated fatty acids into monounsaturated fatty acids, primarily stearoyl-CoA into oleoyl- CoA, which are critical products for energy metabolism and membrane composition. The present computational molecular dynamics study characterizes the molecular dynamics of SCD1 with substrate, product, and as an apoprotein. The modeling of SCD1:fatty acid interactions suggests that: (1) SCD1:CoA moiety interactions open the substrate-binding tunnel, (2) SCD1 stabilizes a substrate conformation …

Introduction:
The duodenoscope elevator mechanism has been considered a culprit for multiple outbreaks from contaminated reusable patient-ready duodenoscopes. These outbreaks necessitated FDA to issue various Safety Communications and recommend endoscopy units to transition to duodenoscopes with innovative designs that ease or eliminate reprocessing. However, numerous studies have documented microbes in the channels of reprocessed gastrointestinal (GI) endoscopes, including duodenoscopes and linear echoendoscopes. Our aim is to estimate the channel contamination rate of patient-ready reprocessed GI endoscopes based on the currently available data.

Orthorexia: When Healthy Eating Becomes Problematic, Courtney R. Retzlaff
Orthorexia: When Healthy Eating Becomes Problematic, Courtney R. Retzlaff
Counselor Education Capstones
Counselors must help clients differentiate between healthy eating and disordered eating. Thus, this review of the literature examines when healthy eating becomes dangerous, and in some cases, life threatening by comparing a condition known as orthorexia to identified mental health disorders. Orthorexia nervosa (ON) is defined as, “a pathological obsession with proper nutrition that is characterized by a restrictive diet, ritualized patterns of eating, and rigid avoidance of foods believed to be unhealthy or impure” (Koven & Abry, 2015, p.385). Orthorexia is not included in the current Diagnostic and Statistical Manual of Mental Disorders (DSM) as a disorder. Even so, …

Cbd And Gluten-Free: Compliance Challenges And Regulatory Action In New Areas Of Food And Drug Law, Christine Abely
Cbd And Gluten-Free: Compliance Challenges And Regulatory Action In New Areas Of Food And Drug Law, Christine Abely
Florida State University Law Review
This Article examines the challenges of regulating new areas of food and drug law and promoting industry compliance by considering two case studies: the U.S. regulation of cannabidiol (CBD) products and that of gluten-free items. Gluten-free claims on packaged foods have been subject to a set of U.S. Food and Drug Administ ration rules since those rules became effective in 2014. This new regulatory standard has improved the ability of consumers who need to rely on gluten-free labeling for health reasons to do so. Some concerns remain, however, about the mislabeling of foods that legally cannot be termed as gluten-free …

Validation Of High-Resolution Melting Assays For The Detection Of Virulent Strains Of Escherichia Coli O26 And O111 In Beef And Pork Enrichment Broths, Frank J. Velez, Joseph M. Bosilevac, Prashant Singh
Roman L. Hruska U.S. Meat Animal Research Center: Reports
Extensive validation of diagnostic assays using widely collected surveillance samples is critical for developing pathogen detection assays. The detection of potentially virulent E. coli strains is critical to the red meat industry. We previously developed two high-resolution melting (HRM) assays for detecting potentially virulent and avirulent E. coli O26 and O111 strains. Assays were validated using enriched beef (n = 36) and pork (n = 36) samples collected as part of a U.S. federal regulatory surveillance program. Data from this study showed more than 90% sensitivity and specificity for both the HRM assays, demonstrating suitability for the red meat industry …

Virginia Journal of Public Health
Objective: Despite its effectiveness in preventing several cancers, there are marked disparities in HPV vaccination initiation and series completion. The present study sought to understand disparities in HPV vaccinations among patients in northern Virginia (ages 9-26) and the impact of patient and provider gender concordance, in lieu of CDC’s vaccine recommendation changes in 2016, which reduced the recommended doses from three to two, in this population. Design: Analyses of electronic medical records collected from 2012 to 2017. Setting: A large health care system in Northern Virginia. Participants: A total of 37,427 patients, ages 9 to 26, were included in analyses. …
Natural Goodness, Sex, And The Perverted Faculty Argument, Christopher Arroyo
Natural Goodness, Sex, And The Perverted Faculty Argument, Christopher Arroyo
Philosophy Faculty Publications
There is a longstanding and widely held view, often associated with Catholicism, that intrinsically nonprocreative human sex acts are intrinsically immoral. Some philoso- phers who hold this view, such as Edward Feser, claim that they can defend the view on purely philosophical grounds by relying on the perverted faculty argument. This paper argues that Feser’s defense of the perverted faculty argument does not work because Feser fails to recognize the full implications of the species-dependence of natural goodness. By drawing on the work of Peter Geach and Philippa Foot, this paper presents a view of natural goodness that adequately accounts …

Optimization Of Sds Page Analysis Of Parvalbumin Protein In Fish, Nguyen Le
Optimization Of Sds Page Analysis Of Parvalbumin Protein In Fish, Nguyen Le
Undergraduate Research (Journal)
SDS PAGE technique plays an essential role in the study of protein. However, this analytical method occasionally suffers from limitations such as poor separation, signal reduction, or total absence of target bands. This research aims to develop a protocol to improve the consistency of the technique while quantifying 10-12kDa parvalbumin proteins. It is a major fish allergen associated with neurodegenerative diseases, yet, the amount of parvalbumin in different kinds of fish has not been published. In this research, proteins in flounder, white, catfish and tilapia were extracted with PBS and quantified with Bradford assay and SDS PAGE. The results supported …

Modulation Of T Cell Response Hierarchy By Coinhibition And Costimulation With Cancer Immunotherapy, Yu Zhang
Modulation Of T Cell Response Hierarchy By Coinhibition And Costimulation With Cancer Immunotherapy, Yu Zhang
Yale Graduate School of Arts and Sciences Dissertations
Cancer is a significant cause of morbidity and mortality worldwide. Cancer immunotherapy with coinhibition antagonist antibodies blocking the Program Death 1 (PD-1) and Program Death Ligand 1 (PD-L1) coinhibitory pathway (anti-PD therapy) have improved the survival for millions of patients with advanced cancers providing the possibility of achieving a prolonged durable response. However, few patients are considered to be clinically cured with anti-PD therapy. Many patients who initially respond to anti-PD therapy eventually develop tumor progression or recurrence in a clinical observation collectively called acquired immune resistance (AIR). Many potential mechanisms of AIR are being studied, such as the loss …
