Covid‐19 Response: Feeding Mississippi Children During School Closure, Emily Broad Leib, Suzanne Donahue, Emma I. Scott
Covid‐19 Response: Feeding Mississippi Children During School Closure, Emily Broad Leib, Suzanne Donahue, Emma I. Scott
Delta Directions: Publications
Across the country, states have needed to use school closures and remote learning as strategies for reducing the spread of COVID‐19. On April 14, 2020, Mississippi leaders announced that children would stay home from their school facilities for the rest of the academic year. Extended school closures make it difficult to meet children’s nutritional needs: students who rely on free and reduced‐price meals from the National School Lunch Program (NSLP) and School Breakfast Program (SBP) lose their best source of daily nutrition. About 74% of Mississippi public school students qualify for free or reduced‐price meals; the change could thus negatively …

Evaluation Of Metal Contamination And Soil Properties At Former Mine Sites In Poland, Kaitlyn Mcclung, Emily Brooks
Evaluation Of Metal Contamination And Soil Properties At Former Mine Sites In Poland, Kaitlyn Mcclung, Emily Brooks
Research and Creativity Symposium
Surface mining dramatically affects the environment, both where the resource extraction takes place and in the areas where mining wastes and overburden are deposited. Poland is Europe’s top coal producing country and is also home to many mines for pyrite, sand, and other mineral resources. We studied soil samples from three former mining areas in Poland: the Bełchatów and Smolnica coal mines, and the Piaseczno sulfur mine. Various substrates, amendments, and trees had been used for remediation, with activities taking place up to 36 years previously. The success of reforestation and soil development varied greatly, especially in pH, organic matter, …

A Systematic Search And Review On The Efficacy, Safety, And Cost-Effectiveness Of Utilizing Lactobacillus Probiotics In Concurrence With Prescribing Antibiotics To Reduce Clostridium Difficile Infection Rates In Hospitalized Patients, Laura Sheehan
Nursing Masters Papers
Incidence of Clostridium difficile infection, (CDI) in patients receiving antibiotics is significant. In 2017, there were approximately 223,900 cases of CDI in hospitalized patients alone (Center for Disease Control [CDC], 2017). Despite enhanced infection control measures, CDI rates remain prevalent and are associated with increased costs to healthcare. An integrative literature review and synthesis was performed. Studies were analyzed to delineate if Lactobacillus containing probiotics, when administered concurrently with high risk antibiotics, decrease CDI rates for patients in the inpatient hospital setting. Additional analysis of probiotic safety and a cost versus benefit analysis was researched. The purpose of the review …

Sustainability Trends In Higher Education: An Analysis Of The International Journal Of Sustainability In Higher Education, Jessica Poling
Honors Theses
Since the onset of the Industrial Revolution, human activities have substantially harmed the biosphere and, if continued, pose a substantial risk to life on Earth. Recognizing this, educated people have advocated widespread adoption of sustainable practices and, in particular, have increased the amount of sustainability efforts associated with higher education. The International Journal of Sustainability in Higher Education, established in 2000, is devoted to such practices. For my honors thesis, I examined articles published in the journal from 2010 through 2019 to determine the countries, and the institutions within those countries, that were the primary contributors to the journal. …

Student Capstone Papers
Alzheimer’s disease is a degenerative form of dementia, which can impair an individual’s executive functioning, orientation, and memory; ultimately leading to mood and behavior changes (Alzate, 2018). Alzheimer’s disease is the most common form of dementia, affecting approximately 60% to 70% of the older adult population aged 65 and older (Santos da Silva, de Oliveira Alves, Barros Leite Slagueiro & Bezerra Barbosa, 2018). Currently, the number of individuals with dementia is estimated at approximately 50 million people worldwide and is expected to climb to 152 million people by the year 2050 (Rathbone, et. al, 2019). Damage to the brain develops …

An Examination Of How Environmental, Social, Governance (Esg) Investing Influences A Company's Stock Return, Sam Marty
Undergraduate Honors Thesis Projects
Using a random sample of 184 companies traded on the New York Stock Exchange in 2019, this paper investigates the impact of Environmental, Social, Governance (ESG) investing on a company’s stock return. The results show that ESG investing has a positive and statistically significant impact on a company’s stock return. An increase in one ESG rating leads to an increase between 0.4% and 3.6% in the return of a company’s stock. Additionally, the results show that individual ESG factors are each statistically insignificant. This indicates that the three ESG factors need to be viewed together rather than individually. Lastly, the …

Vegetarians Versus Vegans, Hannah Kaplan
Vegetarians Versus Vegans, Hannah Kaplan
Senior Honors Theses
There is a gap in literature related to studies that explicitly compare vegetarians to vegans, as existing studies typically group these diets together and examine carnivorous and omnivorous diets in order to identify similarities and differences. The purpose of this study is to look at vegetarian and vegan diets to see if differences in attitudes towards animals, perceptions of animal usage, consumption, and morality exist. Participants included vegetarian and vegan Liberty University students (graduate and undergraduate, online and residential) who were at least 18 years old. Overall, one hundred students took part in the study, 50 of them were vegetarian …

Can Yeast Survive In The Mars-Like Environment?, Mia Jang
Can Yeast Survive In The Mars-Like Environment?, Mia Jang
SACAD: Scholarly Activities
Since yeasts have the most similar way of doing its cellular respiration to humans, we were interested in investigating if yeasts could survive in the Mars-like environment. Preparing for the future life, we thought that if yeast could survive, there would be a high possibility that humans can find a way to survive, too. By differing the variables, radiation and temperature, we did the activation experiment to compare the CO2 production, which indicates whether yeasts can survive in the harsh environment.
