การศึกษาครั้งนี้มีวัตถุประสงค์ 1) เพื่อศึกษาลักษณะข้อมูลประชากรศาสตร์ของประชาชนต่อพฤติกรรมการบริโภคในกรุงเทพมหานคร 2) เพื่อศึกษาลักษณะข้อมูลประชากรศาสตร์ของประชาชนต่อสถานการณ์ความมั่นคงทางอาหารในกรุงเทพมหานคร 3) เพื่อศึกษาพฤติกรรมการบริโภคของประชาชน ต่อระดับสถานการณ์ความมั่นคงทางอาหารในกรุงเทพมหานคร 4) เพื่อศึกษาแนวทางการบริหารจัดการความมั่นคงทางอาหารของกรุงเทพมหานคร ผลการศึกษาพบว่า ข้อมูลประชากรศาสตร์ของประชาชนและพฤติกรรมการบริโภคของประชาชน ส่งผลต่อสถานการณ์ความมั่นคงทางอาหารในภาพรวมของกรุงเทพมหานครอยู่ใน “ระดับปานกลาง” โดยมีค่าเฉลี่ยความมั่นคงเท่ากับ 1.96 และกรุงเทพมหานครได้มีการบริหารจัดการความมั่นคงทางอาหารภายใต้แผนพัฒนากรุงเทพมหานครระยะ 20 ปี (พ.ศ. 2556 - 2575) โดยมีเป้าหมายให้กรุงเทพมหานครเป็นมหานครแห่งเอเชียข้อเสนอแนะจากการศึกษา คือ 1) ด้านนโยบาย 1.1) กรุงเทพมหานครควรเพิ่มโครงการปรับเปลี่ยนพฤติกรรมการบริโภคอาหารให้ประชาชนทั่วไปโดยแบ่งกลุ่มเป้าหมายตามช่วงวัย และจัดทำโครงการฉลากอาหารทางเลือกเพื่อสุขภาพ (Healthier Choice) 1.2) รัฐบาลควรให้กรุงเทพมหานครเป็นโครงการนำร่องด้านความสะอาดและปลอดภัยของอาหารเพื่อให้มีเป็นมาตรฐานเดียวกันทั่วประเทศ 2) ด้านบริหาร กรุงเทพมหานครควรปรับเปลี่ยนหลักเกณฑ์การจ้างบุคลากรให้เหมาะสมและเพียงพอต่อการทำงาน 3) ด้านวิชาการกรุงเทพมหานครควรต้องมีการศึกษาและวิจัยเกี่ยวกับความมั่นคงทางอาหารเพื่อเตรียมรับมือกับความไม่มั่นคงทางอาหารทั้งในระยะสั้นและระยะยาว

การวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของการฝึกออกกำลังกายแบบฟังก์ชันนัลที่มีต่อสารชีวเคมีในเลือดและสุขสมรรถนะในผู้ใหญ่ที่มีภาวะก่อนเป็นโรคเบาหวานและเพื่อเปรียบเทียบผลของการฝึกและไม่ฝึกออกกำลังกายแบบฟังก์ชันนัลที่มีผลต่อสารชีวเคมีในเลือดและสุขสมรรถนะในผู้ใหญ่ที่มีภาวะก่อนเป็นโรคเบาหวาน กลุ่มตัวอย่างเป็นผู้ใหญ่ที่มีภาวะก่อนเป็นโรคเบาหวาน โดยมีค่าน้ำตาลในเลือดหลังอาหาร 2 ชั่วโมง 140–199 มิลลิกรัมต่อเดซิลิตรอยู่ในเกณฑ์ที่มีภาวะก่อนเป็นโรคเบาหวาน อายุระหว่าง 43-59 ปี จำนวน 17 คน ทำการแบ่งกลุ่มตัวอย่างเป็น 2 กลุ่ม ได้แก่ กลุ่มควบคุม จำนวน 9 คน ใช้ชีวิตประจำวันตามปกติและกลุ่มทดลอง จำนวน 8 คน ฝึกออกกำลังกายแบบฟังก์ชันนัล ที่ระดับปานกลาง ใช้การควบคุมจังหวะ 100-110 BPM เป็นระยะเวลา 12 สัปดาห์ ใช้เวลา 50 นาทีต่อครั้ง รวมอบอุ่นร่างกายและคลายอุ่นร่างกาย การฝึกออกกำลังกายแบบฟังก์ชันนัล แบ่งเป็น 4 ช่วงสัปดาห์ ได้แก่ ช่วงสัปดาห์ที่ 1-3 ใช้แรงต้านจากน้ำหนักตัว ช่วงสัปดาห์ที่ 4-6 ใช้แรงต้านจากน้ำหนักตัวและขวดทรายหนัก 335 กรัม ซึ่งใช้ท่าฝึกแบบเดียวกัน จำนวน 12 ท่าฝึก เป็นเวลา 6 สัปดาห์ ช่วงสัปดาห์ที่ 7-9 ใช้แรงต้านจากน้ำหนักตัวและขวดทรายหนัก 500 กรัม และช่วงสัปดาห์ที่ 10-12 ใช้แรงต้านจากน้ำหนักตัวและขวดทรายหนัก 750 กรัม ซึ่งใช้ท่าฝึกแบบเดียวกัน จำนวน 12 ท่าฝึก เป็นเวลา 6 สัปดาห์ ปฏิบัติสัปดาห์ละ 5 ครั้งๆ ละ 30 นาที ปฏิบัติ 3 รอบ ท่าละ 10 ครั้งต่อเซท พักระหว่างท่าฝึก 10-15 วินาที พักระหว่าง รอบ 60-90 วินาที ฝึกออกกำลังกายเป็นกลุ่ม 3 ครั้งต่อสัปดาห์ และฝึกออกกำลังกายที่บ้านด้วยตนเอง 2 ครั้งต่อสัปดาห์ กลุ่มตัวอย่างทั้งสองกลุ่มได้รับการทดสอบตัวแปรสารชีวเคมีในเลือด …

ผลของการฝึกเสริมที่ความเข้มข้นสูงแบบหนักสลับเบาที่มีต่อความสามารถด้านแอโรบิกและแอนแอโรบิกของนักกีฬามวยสากลสมัครเล่น, บริรักษ์ ปะกาสี

วัตถุประสงค์ เพื่อศึกษาผลของการฝึกเสริมที่ความเข้มข้นสูงแบบหนักสลับเบาที่มีต่อความสามารถด้านแอโรบิกและแอนแอโรบิกของนักกีฬามวยสากลสมัครเล่น และเปรียบเทียบผลของการฝึกเสริมที่ความเข้มข้นสูงแบบหนักสลับเบาร่วมกับการฝึกปกติและผลของการฝึกปกติ กลุ่มตัวอย่างที่ใช้ในการวิจัยครั้งนี้เป็นนักกีฬามวยสากลสมัครเล่นเพศชายของโรงเรียนกีฬาจังหวัดสุพรรณบุรีที่มีอายุระหว่าง 12-18 ปี โดยทำการคัดเลือกกลุ่มตัวอย่างแบบเจาะจง (purposive sampling) จำนวน 24 คน จากนั้นแบ่งกลุ่มตัวอย่างออกเป็น 2 กลุ่ม กลุ่มละ 12 คนเท่าๆกันด้วยใช้วิธีการจับคู่ (Matched pair) โดยใช้ค่า Vo2max และอายุเป็นเกณฑ์ ดังนี้ กลุ่มทดลองเป็นกลุ่มที่ได้รับการฝึกปกติร่วมกับการฝึกเสริมที่ความเข้มข้นสูงแบบหนักสลับเบา โดยกลุ่มทดลองจะทำการฝึกเสริมด้วยการชกกระสอบทรายที่ความหนัก 90-95% ของชีพจรสูงสุด 20 วินาที และพักแบบมีการเคลื่อนไหว (Active Recovery) โดยการเต้นฟุตเวิคร์ (Boxing Footwork) อยู่กับที่ที่ความหนัก 65-70% ของชีพจรสูงสุด 10 วินาที ทำทั้งหมด 6 รอบ รวมเป็น 1 เซ็ต ฝึก 3 เซ็ต โดยมีการพักระหว่างเซ็ต 2 นาที โดยทำการฝึก 2 ครั้ง ต่อสัปดาห์ เป็นเวลา 6 สัปดาห์ และกลุ่มควบคุมที่ได้รับการฝึกปกติเพียงอย่างเดียว ก่อนและหลังการฝึก สัปดาห์ที่ 6 ทำการวัดค่าตัวแปร ได้แก่ ความสามารถด้านแอโรบิก คือความสามารถในการใช้ออกซิเจนสูงสุด ความสามารถด้านแอนแอโรบิก คือ ความสามารถสูงสุดแบบแอนแอโรบิกและพลังแบบแอนแอโรบิก นำข้อมูลที่ได้มาหาค่าเฉลี่ยและส่วนเบี่ยงเบนมาตรฐาน และวิเคราะห์ข้อมูลทางสถิติ โดยใช้การทดสอบค่าที (t-test) กำหนดระดับความมีนัยสำคัญที่ระดับ .05 ผลการวิจัย ก่อนการฝึกทั้งสองก่อนมีค่าตัวแปรพื้นฐานทางสรีรวิทยาต่างๆ ได้แก่ อายุ น้ำหนัก เปอร์เซ็นไขมันในร่างกาย อัตราการเต้นหัวใจขณะพัก อัตราการเต้นหัวใจสูงสุด ความสามารถด้านเเอโรบิกและแอนแอโรบิกของกลุ่มฝึกเสริมที่ความเข้มข้นสูงแบบหนักสลับเบาและกลุ่มที่ฝึกแบบปกติ ไม่เเตกต่างกันอย่างมีนัยสำคัญทางสถิติที่ระดับ .05 หลังการฝึกสัปดาห์ที่ 6 พบว่า กลุ่มทดลองมีค่าเฉลี่ยความสามารถด้านแอโรบิกและแอนแอโรบิกสูงกว่ากลุ่มควบคุมแต่ไม่เเตกต่างกันอย่างมีนัยสำคัญทางสถิติที่ระดับ .05 สรุปผลการวิจัยโปรแกรมการฝึกที่ความเข้มข้นสูงแบบหนักสลับเบาในนักกีฬามวยสากลสมัครเล่น ในการวิจัยครั้งนี้มีแนวโน้ม สามารถพัฒนาความสามารถด้านแอโรบิกและแอนแอโรบิกได้ดีกว่ากลุ่มที่ฝึกแบบปกติ ซึ่งแสดงให้เห็นว่าโปรแกรมการฝึกเสริมฯ มีแนวโน้มที่จะพัฒนาความสามารถด้านแอโรบิกและแอนแอโรบิกในนักกีฬามวยสากลสมัครเล่นได้

การกำหนดความรับผิดอาญาเพื่อคุ้มครองผู้เยาว์จากความเสี่ยงในการกระทำผิดของบุคคลอื่น, วรกัญญา เอกมฤเคนทร์

วิทยานิพนธ์ฉบับนี้มีวัตถุประสงค์เพื่อศึกษาการกำหนดความรับผิดบุคคลสองประเภท อันได้แก่ บุคคลผู้ใกล้ชิดกับเด็กหรือผู้เยาว์ และ บุคคลผู้มีอำนาจในองค์กรซึ่งดำเนินกิจกรรมเกี่ยวข้องกับเด็กหรือผู้เยาว์ ในกรณีที่บุคคลดังกล่าวนั้นรับรู้ถึงความเสี่ยงกรณีมีความเป็นไปได้อย่างมากที่เด็กหรือผู้เยาว์นั้นอาจจะตกเป็นผู้เสียหายจากการกระทำผิดของบุคคลอื่น รวมทั้งศึกษาแนวคิดและเนื้อหาของมาตรการทางกฎหมายของต่างประเทศ อันได้แก่ สหรัฐอเมริกามลรัฐแคลิฟอร์เนีย นิวยอร์กประเทศนิวซีแลนด์ เครือรัฐออสเตรเลียรัฐวิกตอเรีย และรัฐนิวเซาท์เวลส์ เพื่อวิเคราะห์เปรียบเทียบและเสนอแนวทางแก้ไขเพิ่มเติมกฎหมายต่อไป จากการศึกษาพบว่าบทบัญญัติที่เกี่ยวข้องกับการกำหนดหน้าที่ในการที่บุคคลใดจะต้องกระทำเพื่อปกป้องเด็กหรือผู้เยาว์จากความเสี่ยงที่จะเกิดอันตรายตามกฎหมายไทยนั้นปรากฎอยู่ในประมวลกฎหมายอาญา 2 มาตรา คือ ความผิดฐานทอดทิ้งเด็กตามมาตรา 306 และความผิดฐานทอดทิ้งผู้ซึ่งพึ่งพาตนเองไม่ได้ตามมาตรา 307 แต่อย่างไรก็ตามทั้งสองมาตรานี้ใช้บังคับเพื่อคุ้มครองความเสี่ยงที่น่าจะเป็นอันตรายจากการกระทำที่เป็นการทอดทิ้งเท่านั้น เช่นนี้จึงไม่อาจปรับใช้กับกรณีที่เด็กหรือผู้เยาว์มีความเสี่ยงในการที่จะตกเป็นผู้เสียหายจากการกระทำผิดในลักษณะอื่นได้ และในขั้นตอนที่เพียงแต่รับรู้ว่ามีความเสี่ยงเช่นว่านั้นหากบุคคลทั้งสองประเภทที่ได้กล่าวไปละเลยไม่ดำเนินการใดๆให้เหมาะสมเพื่อกำจัดความเสี่ยงให้พ้นไปจากตัวเด็กหรือผู้เยาว์ เช่นนี้บุคคลดังกล่าวไม่มีความรับผิดทั้งตามประมวลกฎหมายอาญาและพระราชบัญญัติคุ้มครองเด็ก พ.ศ.2546 ซึ่งในกรณีเดียวกันนี้เองตามกฎหมายของต่างประเทศได้มีการบัญญัติความรับผิดแก่บุคคลทั้งสองประเภทไว้โดยเฉพาะ โดยไม่ใช่แค่การคุ้มครองเด็กจากความเสี่ยงอันเกิดจากการทอดทิ้งเด็กเพียงอย่างเดียวเหมือนมาตรา 306 และ307เท่านั้น แต่เป็นการคุ้มครองความเสี่ยงที่อาจจะเกิดการกระทำความผิดต่อเด็กโดยบุคคลอื่นด้วย ดังนั้นผู้เขียนจึงเสนอให้ประเทศไทยมีการกำหนดมาตรการทางกฎหมายดังกล่าวเพื่อคุ้มครองเด็กจากความเสี่ยงที่จะตกเป็นผู้เสียหายจากการกระทำความผิดของบุคคลอื่นเพื่อเป็นการคุ้มครองเด็กต่อไป

เครื่องหมายการค้ารสชาติถือเป็นหนึ่งในเครื่องหมายการค้ารูปแบบใหม่ที่ได้รับความนิยมอย่างมาก เนื่องจากผู้ผลิตและผู้ประกอบการหลายรายเริ่มนำสิ่งที่ไม่สามารถมองเห็นได้ด้วยตามาใช้ในฐานะเครื่องหมายการค้าเพื่อสร้างความแตกต่างให้กับสินค้าของตน ซึ่งรวมถึงรสชาติด้วย ดังนั้น เครื่องหมายการค้ารสชาติจึงถูกนำมาใช้อย่างแพร่หลายมากขึ้น และในหลายประเทศได้ให้ความคุ้มครองเครื่องหมายการค้ารสชาติแล้ว แต่อย่างไรก็ตาม พระราชบัญญัติเครื่องหมายการค้า พ.ศ. 2534 ของประเทศไทยไม่ได้ให้ความคุ้มครองรสชาติในฐานะเป็นเครื่องหมายการค้าแต่อย่างใด เพื่อให้สามารถเสนอแนะแนวทางในการให้ความคุ้มครองเครื่องหมายการค้ารสชาติในประเทศไทยได้อย่างเหมาะสม ผู้เขียนจึงได้ทำการศึกษาบทบัญญัติแห่งกฎหมายเครื่องหมายการค้า คำพิพากษา และหลักเกณฑ์ของประเทศสหรัฐอเมริกา สหภาพยุโรป ประเทศแคนาดาและประเทศนิวซีแลนด์ ซึ่งเป็นประเทศที่ให้ความคุ้มครองเครื่องหมายการค้ารสชาติ ตลอดจนดำเนินการสัมภาษณ์บุคคลที่เกี่ยวข้องกับการให้ความคุ้มครองเครื่องหมายการค้า โดยแบ่งบุคคลที่ให้สัมภาษณ์ออกเป็น 4 กลุ่ม ดังนี้ กรมทรัพย์สินทางปัญญา ที่ปรึกษากฎหมาย ผู้ผลิตและผู้ประกอบการ และผู้บริโภค โดยนำข้อมูลมาวิเคราะห์และแบ่งเป็นปัญหาต่าง ๆ ได้ดังนี้ ความเหมาะสมในการนำรสชาติมาใช้เป็นเครื่องหมายการค้า บทนิยามคำว่า “เครื่องหมาย” ลักษณะบ่งเฉพาะและการแสดงลักษณะบ่งเฉพาะ ลักษณะต้องห้ามของเครื่องหมายการค้ารสชาติ การพิจารณาความเหมือนหรือคล้ายกับเครื่องหมายการค้าของบุคคลอื่นที่จดทะเบียนแล้ว ตลอดจนความพร้อมในการรับจดทะเบียนเครื่องหมายการค้ารสชาติ ผู้เขียนเสนอแนะให้มีการแก้ไขปรับปรุงพระราชบัญญัติเครื่องหมายการค้า พ.ศ. 2534 เพิ่มเติมหลักเกณฑ์ต่าง ๆ ที่เกี่ยวข้อง ตลอดจนแนวทางในการให้ความคุ้มครองเครื่องหมายการค้ารสชาติ ได้แก่ การนำเทคโนโลยี วิทยาการ หรือเครื่องมือที่ทันสมัย และการว่าจ้างผู้ที่มีความรู้ความเชี่ยวชาญเฉพาะทางเข้ามาช่วยในกระบวนการขั้นตอนต่าง ๆ ตั้งแต่การยื่นคำขอจดทะเบียน การพิจารณาและตรวจสอบเพื่อรับจดทะเบียนเครื่องหมายการค้า รวมถึงการเก็บรักษาตัวอย่างเครื่องหมายการค้า เพื่อให้ประเทศไทยมีความพร้อมในการให้ความคุ้มครองเครื่องหมายการค้ารสชาติและเป็นไปอย่างมีประสิทธิภาพ

Riceberry rice (Oryza sativa L.), is a crossbreed of Kao Hom Nin, a local non-glutinous purple rice and Khoa Dawk Mali 105. Its pigment contains high amount of antioxidant compounds, especially anthocyanins. Previously, riceberry rice exhibited its food application with high antioxidant activity. However, the potential of food application of riceberry rice extract (RBE) in yogurt and beverage products and its postprandial effect on humans remains unknown. In this study, RBE was prepared from a mixture of riceberry rice and distilled water in 1:2 w/v ratio following the freeze-drying process. However, the effects of long-term supplementation on general biological parameters in healthy adults is still insufficient. Whole-genome sequencing (WGS) performed to evaluate potential probiotic properties of Bacillus species (6-2, 63-11 & 78-1) pre-reflecting antimicrobial properties, identified them as Bacillus velezensis (98.16%), Bacillus infantis (91.21%) and Bacillus amyloliquefaciens (99.06%) respectively. The aims of this research were to study the effect of different cooking conditions on bioactive compounds and biological activities of cooked adzuki beans and cooking water. The different encapsulation methods to entrap adzuki beans hydrolysate were investigated. The release characteristics of different freeze-dried alginate particles were investigated after in vitro simulated gastrointestinal digestion. The results showed that all cooking conditions (60-min boiling, 10-min autoclaving and 60-min autoclaving) caused a significant reduction in crude protein, TCA-soluble peptides, free amino groups, total phenolic content (TPC) and total flavonoid content (TFC) in cooked adzuki beans (p ≤ 0.05). Materials and methods: Fifty-three elderly participants were enrolled and interviewed for medical history, subjective dry mouth symptoms, oral hygiene practice and denture information. This study aims to assess the prevalence of Mild Cognitive Impairment (MCI) and its oral health-related factors in elderly dental patients at Geriatric dentistry clinic and Prosthodontic clinic of Faculty of Dentistry, Total 248 dental patients aged 60 years and above were recruit. Average age of participants was 68.68 years with 73.0 % female. Cognitive functions were assessed by Montreal Cognitive Assessment Thai version (MoCA-T). Individual data were obtained by self-reported interview. Oral examinations were evaluated by a dentist. Oral Health-Related Quality Of Life And Related Factors In The Elderly Patients Who Received Dental Treatment, Teerawut Tatiyapongpaiboon

This thesis is a cross-sectional study which explores underlying determinants of elderly patients. The study examines related factor that impaired Oral Health-related Quality of life (OHRQoL) and analyzes the characteristics of elderly patients at our clinic. 46 participants are patients who completed dental treatment more than 6 months during May 2016 to December 2018. Underlying determinants information were recorded by interview, patient chart review and oral examination. There were collected self-evaluation and Oral Impacts on Daily Performances (OIDP). Descriptive statistics was used to describe the characteristics of patients. Spearman correlation and Kruskal-Wallis test at P-value < 0.05 were performed. From the results, the participant’s OIDP scores showed the majority in no severity and no more than 2 impacts activities. The major activities that were impacted were eating activity and speaking activity due to ill-fitting dentures but less impacts in psychological and social performance. There was poor denture satisfaction that impaired participant’s OHRQoL. However, there were differences between dentist and patient evaluation. The authors suggest that the dental treatment should focus on the recall system, the frequency of dental recall visits, procedures to successful oral hygiene instruction and skills to handle the denture problems.

This study investigates the impact of economic development on health, using a panel of 217 countries (139 high-income and 78 low-income countries for the period 1995-2018). Five dependent variables are included, which are life expectancy at birth, infant mortality, under-5 mortality, survival to age 65 for the female and the male population. The main objective of this research is finding out whether the country of origin effect, the branding of “Made in Thailand” for Chili paste product has any leverage on local and foreigner customers upon their purchase intention. The methodology of this research is an online google survey with a total of 160 respondents. As a result, regardless of nationality, 72 percent of all respondents have chosen a package with "Made in Thailand" logo.
