Books/Book Chapters/ Proceedings
Consumption of fermented food contributed to several ethnic and geographical identity since prehistoric period. Though the fermentation process was initially used as a tool for food preservation but nowadays it is commonly applied to improve the sensory properties, shelf life and nutritional quality of food products. Either in traditional foods or as new opportunities, the global scenario indicates that the consumers are more inclined towards such savoury products. The current trend in context has also generated a new spurt in the application of probiotic bacteria for the production of healthy fermented food products. Most fermented products these days are either …

Burkholderia cepacia complex (Bcc) causes chronic opportunistic lung infections in people with cystic fibrosis (CF) resulting in a gradual lung function decline and, ultimately, patient death. Bcc is a complex of eighteen species and is rarely eradicated once a patient is colonised, therefore vaccination may represent a better therapeutic option. We developed a new proteomics approach to identify bacterial proteins that are involved in attachment of Bcc to lung epithelial cells. Fourteen proteins were reproducibly identified by 2-DE from four Bcc strains, representative of two Bcc species: B. cenocepacia, the most virulent and B. multivorans, the most frequently acquired. Seven …
Factive Scientific Understanding Without Accurate Representation, Collin Rice
Factive Scientific Understanding Without Accurate Representation, Collin Rice
Philosophy Faculty Research and Scholarship
This paper analyzes two ways idealized biological models produce factive scientific
understanding. I then argue that models can provide factive scientific understanding of a
phenomenon without providing an accurate representation of the (difference-making) features of
their real-world target system(s). My analysis of these cases also suggests that the debate over
scientific realism needs to investigate the factive scientific understanding produced by scientists’
use of idealized models rather than the accuracy of scientific models themselves.

1h And 19f Spin-Lattice Relaxation And Ch3 Or Cf3 Reorientation In Molecular Solids Containing Both H And F Atoms, Peter A. Beckmann, Andrew L. Rheingold
Physics Faculty Research and Scholarship
The dynamics of methyl (CH3) and fluoromethyl (CF3) groups in organic molecular (van der Waals) solids can be exploited to survey their local environments. We report solid state 1H and 19F spin-lattice relaxationexperiments in polycrystalline 3-trifluoromethoxycinnamic acid, along with an X-ray diffraction determination of the molecular and crystal structure, to investigate the intramolecular and intermolecular interactions that determine the properties that characterize the CF3 reorientation. The molecule is of no particular interest; it simply provides a motionless backbone (on the nuclear magnetic resonance (NMR) time scale) to investigate CF3reorientation occurring on the NMR time scale. The effects of 19F–19F and …

Public access to government-funded research is an issue of tremendous importance to researchers, librarians, and ordinary citizens around the world. Based on the notion that taxpayers finance research through their tax dollars, research data should be available to them. Rapid, unfettered access to research publications provides access to medical research to patients, encourages further exploration and inquiry by other researchers, informs citizens, and advances scientific research. Scientists typically write articles that divulge the results of their government-funded research. Prior to the open access movement, these articles were published in commercially produced journals. Subscriptions to these journals are expensive, and cost …

Open Access Theses & Dissertations
Density functional theory, a quantum mechanical based electronic structure method with GGA-PBE and MGG-SCAN functionals, are used to investigate the structure and energies of singlet, triplet, and quintet spin states of FeP (iron Porphyrin), FePIm (imidazole iron porphyrin), and FePImO2 (dioxygen imidazole iron porphyrin) systems. The binding and release of dioxygen to and from hemoglobin (Hb) are the most crucial reaction takes place in human body to sustain the existence of life. FePImO2 is used to model this phenomenon. When O2 binds to FePIm, the system undergoes a conformational change. i.e. from domed structure of FePIm in which the Fe …

Huckle (2004) has argued that critical realism (CR) can provide a philosophical framework for higher education for sustainability. This paper reflects on the process of researching EESD in the Irish context and the usefulness of our approach which used mixed methods and drew on CR as its guiding philosophy. We will argue that aspects of the CR approach: its emphasis on a depth ontology, the search for causal mechanisms, its model of agency/structure relations and its emphasis on the combination of extensive and intensive methods provide tools for exploring EESD as a system. CR requires us to focus on “deeper …
Year-Round Management Of High Tunnel Production Systems: Spinach And Tomato, Connor Eaton
Year-Round Management Of High Tunnel Production Systems: Spinach And Tomato, Connor Eaton
Master's Theses and Capstones
As high tunnel production is relatively new to the Northeast, this research has helped understand knowledge-gaps in common warm and cold-season crop systems in the region. High tunnels increase crop yield and quality and extend the growing season, and are most commonly used for tomato in the warm-season and spinach in the cold-season.
Spinach was grown in unheated high tunnels throughout the cold-season to evaluate the effects of cultivar and planting date on yield and sweetness (Brix° levels). Cultivar and planting date had a significant effect on yield, where earlier planting dates resulted in higher yields. Cultivar had a significant …

We describe a snail-eating turtle, Malayemys isan sp. nov., from the Mekong River Basin in northeastern Thailand (Nong Bua Lamphu, Nong Khai and Udon Thani provinces) and the adjacent Vientiane area in Laos. The new species is readily distinguishable from M. subtrijuga by its two (vs. six to nine) nasal stripes, and from both M. subtrijuga and M. macrocephala by its thin, often discontinuous, infraorbital stripe that never reaches the loreal seam. This geographically-restricted new species is sold in several food markets throughout the species‟ distribution and is in urgent need of conservation measures.

A Comparison Of Macrofaunal And Algal Communities In Oyster Aquaculture Gear, An Eelgrass Bed, Oyster Reef, And A Mudflat In Great Bay, New Hampshire, Megan Elizabeth Glenn
Master's Theses and Capstones
Oysters (Crassostrea virginica) and eelgrass (Zostera marina) are important ecosystem engineers in Great Bay, NH, however despite restoration efforts they have been in decline. In addition to loss of the resource, this degradation results in loss of associated ecosystem services such as habitat provision. It is possible that the recent increase in oyster farming in Great Bay could help mitigate habitat loss. My research objective was to quantify the biotic communities present in three natural habitats (eelgrass beds, oyster reefs and mudflats) in Great Bay NH and compare those to communities living on the type of gear (“racks and bags”) …

Serotonergic Modulation Differentially Targets Distinct Network Elements Within The Antennal Lobe Of Drosophila Melanogaster, Tyler R. Sizemore, Andrew M. Dacks
Faculty & Staff Scholarship
Neuromodulation confers flexibility to anatomically-restricted neural networks so that animals are able to properly respond to complex internal and external demands. However, determining the mechanisms underlying neuromodulation is challenging without knowledge of the functional class and spatial organization of neurons that express individual neuromodulatory receptors. Here, we describe the number and functional identities of neurons in the antennal lobe of Drosophila melanogaster that express each of the receptors for one such neuromodulator, serotonin (5-HT). Although 5-HT enhances odor-evoked responses of antennal lobe projection neurons (PNs) and local interneurons (LNs), the receptor basis for this enhancement is unknown. We used endogenous …

Neural Crest Cell-Autonomous Roles Of Fibronectin In Cardiovascular Development., Xia Wang, Sophie Astrof
Department of Medicine Faculty Papers
The chemical and mechanical properties of extracellular matrices (ECMs) modulate diverse aspects of cellular fates; however, how regional heterogeneity in ECM composition regulates developmental programs is not well understood. We discovered that fibronectin 1 (Fn1) is expressed in strikingly non-uniform patterns during mouse development, suggesting that regionalized synthesis of the ECM plays cell-specific regulatory roles during embryogenesis. To test this hypothesis, we ablated Fn1 in the neural crest (NC), a population of multi-potent progenitors expressing high levels of Fn1. We found that Fn1 synthesized by the NC mediated morphogenesis of the aortic arch artery and differentiation of NC cells into …
Finding Relevance, Competence, And Enjoyment: The Development Of Domain Identification And Interest In First-Year Science Majors, Chloe Ruff
Education Faculty Publications
The purpose of this qualitative study was to examine how first-year college students perceive their development of domain identification with, and interest in, their prospective science major during their initial year of college. Four themes emerged from the coding and analysis of interviews with eight first-year science students: Self-Definition in Flux, Feeling Competent, Expressing Interest through Enjoyment, and Relevant to Me. These themes were mainly consistent with the current model of domain identification (Osborne & Jones, 2011) but differ from the current model of interest development (Hidi & Renninger, 2006). Theoretical and practical implications are included for faculty and advisors …
Lipoate Metabolism In Staphylococcus Aureus Pathogenesis, Maria Azul Zorzoli
Lipoate Metabolism In Staphylococcus Aureus Pathogenesis, Maria Azul Zorzoli
Master's Theses
Lipoate is an essential cofactor of several proteins involved in cellular energy homeostasis and catabolism. Lipoate metabolism has been linked to pathogenesis in some microbial species, but its role in Staphylococcus aureus infections had not been explored. In this thesis, we tested the hypothesis that lipoate acquisition mechanisms promote S. aureus infectivity. We used a bacterial genetics approach to elucidate the biological function of the S. aureus genes involved in lipoate metabolism. Our findings allowed us to propose a model for lipoic acid de novo biosynthesis and salvage pathways in S. aureus. Moreover, we detail hitherto undescribed genetic arrangements of …
Infection Of Mammalian Hepatocytes By Francisella Tularensis Lvs, Pavel Vasioutovitch
Infection Of Mammalian Hepatocytes By Francisella Tularensis Lvs, Pavel Vasioutovitch
Faculty Publications and Presentations
Francisella tularensis, the causative agent of Tularemia, is a facultative intracellular parasite. The goal of this project is to examine how F. tularensis infects and replicates within mammalian cells, and the impact of such an infection upon the signaling pathways within the host cell. The murine embryonic hepatocyte cell line TIB-73 serves as our model system for infection by F. tularensis live vaccine strain (LVS). The number of bacteria associated with hepatocytes was quantified via adhesion, invasion and intracellular replication assays. We have determined that a large multiplicity of infection (MOI) of F. tularensis LVS is required to infect …

In forested systems throughout the world, climate influences tree growth and aboveground net primary productivity (ANPP). The effects of extreme climate events (i.e., drought) on ANPP can be compounded by biotic factors (e.g., insect outbreaks). Understanding the contribution of each of these influences on growth requires information at multiple spatial scales and is essential for understanding regional forest response to changing climate. The mixed conifer forests of the Lake Tahoe Basin, California and Nevada, provide an opportunity to analyze biotic and abiotic influences on ANPP. Our objective was to evaluate the influence of moisture stress (climatic water deficit, CWD) and …

Black Boys Matter: Developmental Equality, Nancy E. Dowd
UF Law Faculty Publications
The life course of Black boys is a stark reminder of the realities of inequality. While recent attention to policing and high profile deaths of Black youth and adults has raised consciousness of life-threatening situations, this focus exposes the most visceral and deadly aspect of a much larger set of issues. Those issues begin at birth, and are powerfully framed before adulthood, creating inequality particularly when the individual is most vulnerable, in childhood. This Article confronts the inequalities of Black boys and their subordination, as a vehicle to expose inequalities more generally based on children’s identities.
