Purpose: Although preclinical, epidemiological and prior clinical trial data suggest that green tea catechins (GTCs) may reduce prostate cancer (PCa) risk, several preclinical studies and case reports have reported liver toxicities and acute gastrointestinal bleeding. Based on these observations, regulatory bodies have required stringent inclusion criteria with frequent, excessive toxicity monitoring and early stopping rules in clinical trials. These requirements have impeded recruitment and retention of subjects in chemoprevention trials and subsequent progress in agent development efforts.
Experimental Design: We conducted a placebo-controlled, randomized clinical trial of Polyphenon E® (PolyE®), a proprietary mixture of decaffeinated GTCs, containing 400 mg (−)-epigallocatechin-3-gallate …

Dna Barcoding Reveals Mislabeling Of Game Meat Species On The U.S. Commercial Market, Charles Quinto, Rebecca Tinoco, Rosalee S. Hellberg
Food Science Faculty Articles and Research
Game meats represent a valuable specialty market in the United States that has high economic incentives associated with mislabeling. However, there is limited information on this topic. The purpose of this study was to conduct a market survey of game meats sold within the United States and identify instances of mislabeling using DNA barcoding. Products were also examined for the presence of threatened or endangered species. Fifty-four samples of whole-cut game meats were collected from online distributors in the United States and sequenced across a 658 base-pair region of the cytochrome c oxidase subunit I (COI) gene. The resulting DNA …

Identification Of Species In Ground Meat Products Sold On The U.S. Commercial Market Using Dna-Based Methods, Dawn Kane, Rosalee S. Hellberg
Food Science Faculty Articles and Research
The objective of this study was to test a variety of ground meat products sold on the U.S. commercial market for the presence of potential mislabeling. Forty-eight ground meat samples were purchased from online and retail sources, including both supermarkets and specialty meat retailers. DNA was extracted from each sample in duplicate and tested using DNA barcoding of the cytochrome c oxidase I (COI) gene. The resulting sequences were identified at the species level using the Barcode of Life Database (BOLD). Any samples that failed DNA barcoding went through repeat extraction and sequencing, and due to the possibility of a …
Nutrition Resources For Football Players In Division I Institutions: The Athletic Trainer's Perspective And Role, Giovanna Marie Giannini
Nutrition Resources For Football Players In Division I Institutions: The Athletic Trainer's Perspective And Role, Giovanna Marie Giannini
Honors Undergraduate Theses
Background: The importance of nutrition on athletic performance is evident. Athletic trainers (ATs), nutritionists/RDs, strength and conditioning specialists (SCSs), and other athletic department personnel may be available to student-athletes and can be solicited for nutrition advice. Multiple studies have found that although some universities have a sports nutritionist on staff, student-athletes approached an AT most often for nutrition advice rather than an SCS, nutritionist or other person. ATs have the necessary education to provide proper nutrition information to student-athletes; however, it is not the primary role of an AT.
Objective: The purpose of this study was to examine the quantity, …
The Integration Of Mobile Technology To Lower The Risk Of Developing Cervical Cancer In Hiv Positive Women, Tugce Kinik
The Integration Of Mobile Technology To Lower The Risk Of Developing Cervical Cancer In Hiv Positive Women, Tugce Kinik
Dissertations, Master's Theses and Master's Reports
Cervical cancer is the most common cancer in HIV positive women in the world [1]. According to epidemiologists, HPV infection alone will not initiate cervical cancer [2]. In addition to high risk HPV types, smoking, long term hormonal contraceptive use, high parity, HIV/AIDS infection, sexual activity before 20 years of age, multiple sexual partners, exposure to sexually transmitted disease, and family history of cervical cancer are other reasons to turn an HPV infection to the cervical cancer [3]. With the increasing global population, cervical cancer cases are expected to increase 46% until 2030 [4]. Effective prevention and control efforts will …

Uganda has an estimated 2.5 million orphans, one of the highest numbers in the world. War and HIV/AIDS has left 25 percent of all households to look after at least one orphaned child. The orphaned children that don’t end up in a household end up homeless, living and working on the street. Children living on the streets of Uganda experience violence and discrimination everyday. Many kids leave home because of domestic abuse, neglect, and poverty only to suffer the brutal realities of living on the streets. They now lack clean water, proper shelter, a nutritional diet, have health concerns and …

Two studies were conducted to evaluate the effects of sorghum wet distillers grains (SWDGS) in finishing diets on steer performance, carcass characteristics, and nutrient digestibility. In Exp. 1, 240 steers (initial BW = 379 ± 1 kg) were fed steam-flaked corn–based diets with or without 25% SWDGS and 7.5, 10.0, or 12.5% alfalfa hay. There were no effects of alfalfa hay concentration on BW, DMI, ADG, or G:F (P ≥ 0.16). Including SWDGS reduced (P ≤ 0.05) ADG and G:F. Fat thickness decreased (P = 0.03) and DP tended to decrease (P = 0.09) linearly as level of alfalfa hay …

Department of Animal Science: Faculty Publications
Two experiments evaluated feeding soybean hulls (SBH) in finishing diets that contain distillers grains plus solubles on performance and carcass characteristics. Dietary concentrations of SBH were 0, 12.5, 25, and 37.5% of diet DM. In Exp. 1, 167 crossbred yearling steers (395 ± 22 kg of BW) were fed for 117 d in a randomized block design in which pelleted SBH replaced dry-rolled corn. All diets contained 25% modified distillers grains plus solubles, 15% corn silage, and 5% liquid supplement. As SBH concentration increased, DMI decreased linearly (P = 0.04). Gain and G:F decreased linearly (P < 0.01) in response to increasing concentrations of SBH, which decreased relative energy value from 91 to 79% of corn. Hot carcass weight linearly decreased (P < 0.01) by 24 kg as SBH increased. In Exp. 2, a randomized block design used 160 backgrounded steer calves (363 ± 16 kg of BW) in a 138-d finishing study with 0, 12.5, 25, or 37.5% SBH in the meal form. Basal ingredients consisted of a 1:1 ratio of high-moisture corn and dry-rolled corn, 40% wet distillers grains plus solubles, 8% sorghum silage, and 4% dry meal supplement. There was a tendency (P = 0.12) for a quadratic increase in ADG and G:F as dietary SBH increased, with numerically greatest ADG and G:F with 12.5% SBH. Feeding 12.5 to 25% SBH with 40% wet distillers grains plus solubles (Exp. 2) had little effect on performance but decreased ADG and G:F in diets with 25% modified distillers grains plus solubles (Exp. 1).

Three experiments evaluated initial implant strategies for finishing cattle. In Exp. 1, heifers (n = 1,405; initial BW = 282 kg) were given (1) Revalor-IH followed by Revalor-200 (REV-IH/200), (2) Revalor-H followed by Revalor-200 (REV-H/200), or (3) Revalor-200 followed by Revalor-200 (REV-200/200). Intake, ADG, and G:F were not affected (P ≥ 0.14) by implant strategies, nor were HCW and LM area (P ≥ 0.16). Percent USDA Choice was greater (P < 0.01) for Rev-IH/200 compared with Rev-H/200 and Rev-200/200. Experiment 2 used steers (n = 1,858; initial BW = 250 kg) given (1) Revalor-IS reimplanted with Revalor-200 (Rev-IS/200), (2) Revalor-XS followed by Revalor-IS (Rev-XS/IS), (3) Revalor-XS followed by Revalor-S (Rev-XS/S), or (4) Revalor-XS followed by Revalor-200 (Rev-XS/200). Implanting strategies did not affect (P ≥ 0.32) DMI or G:F. Carcass traits were not different (P ≥ 0.18) among treatments, except steers implanted with Rev-XS/200 had greater (P < 0.01) LM area. In Exp. 3, steers (n = 1,408; initial BW = 305 kg) were given (1) Rev-IS/200, (2) Rev-200/200, or (3) Rev-XS/200. Gain and G:F did not differ (P ≥ 0.36) among the 3 implant strategies, nor did HCW or marbling score (P ≥ 0.15). Steers given Rev-XS/200 had greater (P < 0.01) LM area and decreased (P ≤ 0.05) 12th-rib fat and YG compared with Rev-200/200 and Rev-IS/200. Using Rev-200/200 and Rev-XS/200 increased (P = 0.03) USDA Select compared with Rev-IS/200. Using greater-initial-dose implant strategies may not affect ADG or G:F but appears to increase leanness.

Estimated Maximal Oxygen Consumption Of Transfemoral Amputees Utilizing The Ebbeling Treadmill Test, Samantha Stauffer
Senior Honors Theses and Projects
OBJECTIVE: It is reasonable to utilize kinematic data in the evaluation of amputee functional capacity. However, physiological response to activity is another aspect that should be taken into account when evaluating patient functional K-Ievel. The purpose of this study is to document the physiological responses of lower-limb amputees to clinical exercise testing and compare the results of using a simple submaximal protocol designed for non-amputees to an established method of measuring functional capacity in amputees.
METHODS: Three healthy unilateral transfemoral subjects had all previously been classified as functional K3-K4 ambulators using the Amputee Mobility Predictor. They were tested using the …
