To assess the oral health status and oral hygiene habits of the dependent elderly in Muang Phitsanulok, Thailand. Methods: 70 dependent elderly with an activity of daily living score of 0 - 4 were selected for this study using a convenience sampling technique. Both participants and their caregivers were interviewed and an oral examination was carried out on all subjects. Information regarding demographics, oral health care habits, and oral health status including dental caries, remaining dentition, and occluding pairs of teeth was collected. The effects of ultrasound irradiation were studied on the phenolic compounds, color and hydroxyl radical scavenging ability of black rice wine. The results showed that the total content of phenolic, flavonoids, anthocyanins and the scavenging capacity of hydroxyl radical for the black rice wine decreased after ultrasonic treatment, while the brightness (L*), redness (a*) and yellowness (b*) of wine color had some certain increasing. Furthermore, the total anthocyanins content highly correlated with the color of a* in the black rice wine under the ultrasound irradiation, which suggests that the total anthocyanins may contribute …

[Purpose] The different influencing factors are investigated on producing AGEs by Lysine in Maillard reaction, and the different between single amino acid (Lysine, or Argine) -reducing and mixed Lys- Arg -reducing sugar system are compared. [Method] Fluorescence spectrometry (λex / λem =370 / 440 nm) is used to detect the amount of AGEs, the factors of sort and concentration of sugar, metal ion, temperature, pH and genistein concentration in Maillard reaction and proportion of lysine and arginine in Lys/Arg-reducing sugar system was discussed. To investigate the effect of wheat gluten hydrolysate(WGH) rich in glutamine prepared through the enzymatic hydrolysis by trysin on small intestinal mucosal by methotrexate induced mucositis model in rats. The results showed that the WGH can significantly increase intestinal mucosa weight, villus height, crypt depth, protein and DNA content, decrease diamine oxidase level in plasma and increase glutathione content of small intestine mucosa. The WGH can efficiently alleviate the intestinal mucosal injury in rats.

Effect Of Processing Conditions On The Functional Properties Of Antioxidant Peptides From Pseudosciaena Crocea, Zhang Ningning, Zheng Baodong, Zhang Chong, Li Zhiyu

The functional properties of antioxidant peptides from Pseudosciaena crocea under different processing conditions were studied, including the solubility, water absorption, retention properties, fat absorption, apparent viscosity, foaming and emulsifying properties. The results showed that the isoelectric point of the antioxidant peptides was pH 4.0, and at this point, the peptides possessed the lowest solubility and emulsifying activity, while the highest emulsion stability and foaming ability and stability. Moreover, it was also found that the antioxidant peptides showed higher water and fat absorptions, fluidity and lower retention properties. Therefore, the antioxidant peptides from P. crocea could be used as potential additives …

Optimization On Extraction Of Capsaicinoids Assisted By Ultrasonic-Microwave Synergistic Extracting, Pang Min, Wang Yuanhui, Liu Qian

Paprikas were soaked in 90% (V/V) ethanol to extract capsaicinoids by using ultrasonic and microwave assisted extraction (UMAE). Based on the results of single factor experiments, the optimized extraction condition were gotten with orthogonal tests: the ultrasonic power of 50 W, the microwave power of 240 W, the solid- solvent ratio of 1∶20 (g/mL), the microwave time of 480 s, the paprikas particle size of 80 mesh, and the extracting time twice. The present study obtained an extraction rate of 84.52%. Compared with the conventional water bath extraction method, UMAE has the advantages of shorter extraction time and higher efficiency, …

In this paper, the methods of fatty acid extraction and methyl esterification of beans (the main products are soy food) were reviewed. A variety of physiological functions of fatty acids are described. Moreover the differences of diverse detection methods of fatty acids were analyzed. We hope to provide testing methods for the change of fatty acids in bean product processing, and providing the basis for the development of potential function's in oil and fat products.

Fungal acquisition of resources is difficult to assess in the field. To determine whether fungi received carbon from recent plant photosynthate, litter or soil-derived organic (C:N bonded) nitrogen, we examined differences in δ13C among bulk tissue, structural carbon, and protein extracts of sporocarps of three fungal types: saprotrophic fungi, fungi with hydrophobic ectomycorrhizae, or fungi with hydrophilic ectomycorrhizae. Sporocarps were collected from experimental plots of the Duke Free-air CO2 enrichment experiment during and after CO2 enrichment. The differential 13C labeling of ecosystem pools in CO2 enrichment experiments was tracked into fungi and provided novel insights into organic nitrogen use. Specifically, …

Introduction. Diagnosing community-acquired pneumonia (CAP) in the elderly remains a clinical challenge for various reasons. The clinical manifestation in the elderly is not frank and atypical manifestations, e.g. falls, decrease of functional status and food intake or urinary incontinence, may be present. These reasons may be associated with under or over diagnosis, which consequently contribute to the higher observed mortality rate in the elderly population with CAP. Caves are some of the least-known ecosystems on Earth and long-term ecological studies and population size estimates are very rare. Genus Congeria is a Tertiary relict that comprises three species from Dinaric karst area; C. kusceri, C. jalzici and C. mulaomerovici, each with very limited distribution. They are the only known cave bivalves and in contrast to many other cave species, they form populations with high densities. We estimated that the population of C. kusceri in Jama u Predolcu is between 72,454 and 72,906 individuals. The highest density occurred between one and three meters depth, and reached maximum …

BACKGROUND: Periconception maternal nutrition and folate in particular are important factors influencing the incidence of neural tube defects (NTDs). Many but not all NTDs are prevented by folic acid supplementation and there is a pressing need for additional strategies to prevent these birth defects. Other micronutrients such as iron are potential candidates, yet a clear role for iron deficiency in contributing to NTDs is lacking. Our previous studies with the flatiron (ffe) mouse model of Ferroportin1 (Fpn1) deficiency suggest that iron is required for neural tube closure and forebrain development raising the possibility that iron supplementation could prevent NTDs.

This study analyses the determinants of working among 10-17 years children and to investigate the presence of Luxury Axiom. Child tends to work as they gets older, has biological ties to the household head and lives in a rural area. The higher levels of household heads education lead to the childrens been less likely to work. With regard to the Luxury Axiom, household income is negatively impact the work decision. Birth order is positively related to working and the probability of working decreases by the presence of employed adult. Finally, the impact of the childs activities varies by provinces.

Myo-inositol phosphates (phytates) are important biological molecules produced largely by plants to store phosphorus. Phytate is very abundant in many different soils making up a large portion of all soil phosphorus. This review assesses current phytase science from the perspective of its substrate, phytate, by examining the intricate relationship between the phytate-hydrolyzing enzymes and phytate as their substrate. Specifically, we examine available data on phytate’s structural features, distribution in nature and functional roles. CRC incidence has declined over the past several decades, however, there is a continued need for improved methods of CRC detection and prevention. Methyl group homeostasis, which is dysregulated in CRC and impacts several fundamental biological processes, represents a promising target for novel CRC detection and prevention strategies. Subadult skeletons are often underrepresented in the archaeological record but provide an abundance of information about how environment and lifestyle affect a population. This study examines indicators of stress in children from the Prehistoric to Medieval periods at Apollonia and Durres, Albania. Durres and Apollonia were initially occupied by local Illyrians, but were later colonized by the Greeks (c. 600 B.C.) and Romans (c. 250 B.C.). This study tests the null hypothesis that there will be no difference in child health across time periods, age, and location. In the past four decades, hundreds (if not thousands) of hydrological models have been developed to predict the transfer of water through landscapes. Despite this variety of models, the basic challenge for all kind of models is the same: solve the dynamic local to global water mass balance of a landscape. However, the transport processes, surface flow, subsurface flow, snow drift, evaporation and transpiration can be modelled with differing complexity, theory and parameterizations. Clark et al. Building age-friendly communities is a global as well as a national concern. The purpose of this paper is to explore fundamental tensions underlying the formulation of age-friendly goals and their implementation, based on a review of age-friendly projects and reflections on the journey towards age friendliness in one state (Rhode Island). The authors conducted a comprehensive investigation of the relevant literature on previous age-friendly initiatives, which included case studies of individual projects, meta-analyses of age-friendly work, and educational toolkits for promoting age-friendly community. The vast majority of clinical human listeriosis cases are caused by serotype 1/2a, 1/2b, 1/2c, and 4b isolates of Listeria monocytogenes. The ability of L. monocytogenes to establish a systemic listeriosis infection within a host organism relies on a combination of genes that are involved in cell recognition, internalization, evasion of host defenses, and in vitro survival and growth. Recently, whole genome sequencing and comparative genomic analysis have proven to be powerful tools for the identification of these virulence-associated genes in L. monocytogenes. Slight alterations in nanoparticles' surface properties can significantly influence the corona composition which may alter their interaction with the biological milieu. Size and porosity of silica nanoparticles (SNPs) are known to be predominant factors influencing their dose-dependent toxicity. Little is known however about the extent and type of protein adsorption on SNPs as a function of physicochemical properties and the role this might play on mechanisms of cellular uptake and toxicity. This study focuses on the Green Cart Initiative implemented by the New York City Mayor’s Office of Food Policy. The Initiative was implemented to bring fresh fruits and vegetables in a fast, cheap, and efficient way to neighborhoods considered food deserts and areas with high rates of obesity.

Disordered eating patterns and body discontent are widespread in Western society, especially among young women. Many adopt the "thin ideal," a belief that women should have very slender bodies with small waists and minimal body fat. This body image is shaped by television, social media, and magazines. Research has shown that women who internalize the thin ideal are more likely to have concerns with body image dissatisfaction and disordered eating habits.
