Examining Factors That Contribute To The Application Of Improved Nutritional Practices In Guatemala, Kim Proffit, Ashley Jensen, Dr. Vickie Johnsen
Journal of Undergraduate Research
Malnutrition is a significant problem in Guatemala. Malnutrition, and its related diseases, are part of most diagnoses of children in the hospital regardless of the reason for admission. Ruel, Habicht, Rasmussen & Martorell (1996, p. 671) report the severity of the problem, “Guatemala has one of the highest prevalences of stunting in the world.” In 2001 UNICEF reported that 29% of Guatemalan children under 5 years of age were underweight, 46% were stunted and 3% were wasting. Even in countries suffering with severe malnutrition, Zeitlin, Ghassemi, and Mansour, (1990) suggest that some children who live in poverty and have severely …

Highly reactive oxygen species produce DNA lesions, which are postulated to cause cancer. A particularly common lesion is that of an oxidized guanine residue, 8-hydroxyguanine (8-OHdG). This base is of particular concern because it can mispair with adenine during replication causing a mutation from G:C to A:T. This transversion is found frequently in human cancers.

Acanthamoeba And Bacteria Produce Antimicrobials To Target Their Counterpart, Junaid Iqbal, Ruqaiyyah Siddiqui, Naveed Ahmed Khan
Department of Biological & Biomedical Sciences
Background
In the microbial ecosystem, microbes compete for space and nutrients. Consequently, some have developed the ability to kill or inhibit the growth of other competing microbes by producing antimicrobial substances. As the ‘producer’ species are generally immune to these substances, their compounds act on the competing microbial species and give the producer more space and access to nutrients for growth. Many currently used antibiotics were developed by exploiting this potential of certain microbes.
Findings
Here, the free-living amoeba, Acanthamoeba castellanii, was investigated for its antibacterial activity against representative Gram positive and Gram negative bacteria, while bacterial isolates were …

Quinoa (Chenopodium quinoa) is an Andean cereal chenopod known for its ideal nutritional characteristics along with its abilities to grow in drought conditions and in soils with high salt content (Fairbanks 2002). Until recently, quinoa has received little attention from the scientific community; but due to recognition of its nutritional and agronomic potential, science is now beginning to take interest (Fleming 1995). Among the few genetic studies published, Giusti (1970) established the base chromosome number of the species to be eight or nine with varying ploidy levels. More recently, Kolano (2001) mapped the 45S ribosomal DNA (rDNA) sequences using fluorescence …

Quinoa (Chenopoduim quinoa) is a pseudograin cultivated in the Altiplano region of Bolivia and other areas of South America, where it is well adapted to harsh local conditions including high elevation, drought, frost, and saline soils. In addition to its environmental adaptations, quinoa is unique among crops in its exceptional nutritional quality. Quinoa seeds not only have high protein content, but the amino acid composition of these proteins is nutritionally complete, including all of the essential amino acids for human dietary requirements (The Quinoa Project at Brigham Young University: A five-year proposal, unpublished). However, since quinoa use and …

One of the most effective strategies in cancer control is chemoprevention. Previous studies have shown naturally occurring organosulfur compounds from garlic and onion to be effective against carcinogenesis. The effects of two of these organosulfur compounds, diallyl sulfide (DAS) and diallyl disulfide (DADS), are thought to be of especial worth. Their anti-carcinogenic effects in the human cell line HepG2 are, however, less understood. HepG2 cells are human hepatoblastoma cells that have maintained their xenobiotic metabolizing competence. Because they are similar in function to cells obtained from human liver tissue, they are ideal for research in vitro. Benzo[a]pyrene (B[a]P) is an …

Selenium Regulation Of Nf-Κb Binding In Cancerous Human Prostate Epithelial Cells, Wayne K. Nelson, Dr. Merrill Christensen
Journal of Undergraduate Research
According to the National Cancer Institute, prostate cancer is the most frequently diagnosed nonskin cancer in men. In 1997 alone, it is estimated that 209,900 men were diagnosed as having the disease. Prostate cancer is also the second leading cause of cancer related death in the United States and, in 1997, claimed the lives of an estimated 41,800 people (1).

The Effect Of Selenium And Thyroid Hormones On Body Composition In Male Rats, Merrill J. Christensen, Dr. Brian Johnson
Journal of Undergraduate Research
Introduction Selenium (Se) is an essential trace mineral needed by the body in extremely small amounts. The main sources of Se in the diet are vegetables and meats. Selenium is incorporated in the enzyme Glutathione Peroxidase (GPx). GPx is an antioxidant that scavenges hydrogen peroxide and other organic peroxides to protect the body from oxidative damage.
Selenium Alters Nf- B-Regulated Gene Expression In Human Prostate Cancer Cells, Aimee L. Taylor, Dr. Merrill J. Christensen
Selenium Alters Nf- B-Regulated Gene Expression In Human Prostate Cancer Cells, Aimee L. Taylor, Dr. Merrill J. Christensen
Journal of Undergraduate Research
The American Cancer Society estimates that prostate cancer will account for 30% of new cancers in men, totaling over 189,000 new cases, with 30,200 deaths in 2002 (1). Because of its high prevalence and long latency time prostate cancer is an ideal candidate for chemoprevention (2). Recent research suggests an inverse relationship between high dietary selenium (Se) intake or status and risk for prostate cancer. However, the mechanisms for Se’s protective effects against prostate cancer have not yet been determined. This project focused sharply on a single mechanism by which Se may alter gene expression and affect risk for prostate …

Aims: Riboflavin is a B vitamin that is required for a wide variety of cellular processes. The absorbance spectrum of riboflavin was determined at different pH utilizing several buffers. The buffer at pH demonstrating table absorbance peaks with high numerical values of molar absorptivity is followed by accurate and sensitive assay of riboflavin by spectrophotometer. Study Design: The absorbance spectrum of riboflavin is determined in an aqueous buffer at various pH values. After identifying the absorbance peaks providing maximal molar absorptivity the assay of riboflavin in the identical buffer was undertaken. Place and Duration of Study: Department of Chemistry, Durham …

The purpose of this paper is to investigate upon a diversification strategy through market creation of CJ Group, which has contributed in positioning of the firm as one of the leading conglomerates in South Korea. With such objective, the background of CJ Group, followed by its business diversification strategies were explored, with reference to several case studies. The history of CJ Group began with establishment of CheilJedang Industrial Corporation in 1953, as the first domestic sugar producer and exporter of South Korea. The corporation gradually expanded its business ever since at both national and global level, to include the fields …
