Physicochemical Changes Of Shiitake Stipe Bread And Silver Ear Bread During Storage, Ming-Tsung Yen, Joan-Hwa Yang, Ruei-Chian Li, Jeng-Leun Mau
Journal of Marine Science and Technology–Taiwan
Shiitake [Lentinula edodes (Berk.) Pegler] stipe and silver ear (Tremella fuciformis Berkeley) were used to substitute 5% of wheat flour to make bread. No difference among fresh white, shiitake stipe and silver ear breads was found in moisture contents. Total plate counts of breads were as high as 2.92 log CFU/g dry weight at day 0 and 3.69 log CFU/g after 12 days of storage at 4°C. The melting endothermic peaks of breads reached 105.2°C to 111.7°C. The range of thermal decomposition enthalpies were between 116.6 J/g and 158.4 J/g. Three wide-angle X-ray diffraction (WAXD) patterns were similar. An electron …

The Relationship Between Weight Locus Of Control, Self-Rated Abilities For Health Practices, Selfcompassion And Weight Loss Outcome Among Adults Post-Bariatric Surgery, Gina M. Kearney
Theses & Dissertations
Overweight and obesity have become growing threats to our nation’s health. Bariatric surgery, although its incidence has been reported to have reached a plateau, remains the most effective weight loss therapy available for the extremely (morbidly) obese. However, significant weight regain is often observed and evidence of weight loss maintenance has not been clearly or consistently demonstrated. Through the use of Self-Determination Theory as a theoretical underpinning and guiding model, the purpose of this study was to examine the relationship between psychological variables (weight locus of control, self-rated abilities for health practices, and self-compassion) and weight loss outcome (downward change …
The Relationship Between Body Composition And Thermal Responses To Hot And Cold Water Immersion, Jessica M. Stephens, Christos Argus, Matthew W. Driller
The Relationship Between Body Composition And Thermal Responses To Hot And Cold Water Immersion, Jessica M. Stephens, Christos Argus, Matthew W. Driller
Journal of Human Performance in Extreme Environments
The current study aimed to examine the influence of body fat percentage on thermal responses to water immersion at the two temperature extremes used in athletic recovery, by comparing the thermal responses of low- and high-fat individuals to immersion in hot water (HWI) or cold water (CWI). Thirty-nine subjects completed a body composition assessment (to determine low-fat and high-fat groups), and 15 minutes of either CWI (n = 20) or HWI (n = 19), followed by 30 minutes of passive rest. Core temperature (Tc), skin temperature (Tsk), and thermal sensation (TSS) were recorded at various time points during …
The Role Of Television On Early Onset Puberty, Salman Salman
The Role Of Television On Early Onset Puberty, Salman Salman
UROP Posters
The trend of early onset puberty has been increasing in recent years. As several studies have shown, a strong link between diet and puberty has been established in animals as well as in humans. However, not much attention has been paid to the cultural influences that have emerged recently such as television, computers, and gaming devices. Several different aspects of this trend were carefully studied and analyzed such as television and diet habits, children with early onset puberty, hormonal changes in children with early onset puberty, as well as the methodology of administering treatment. By connecting television to early onset …

Galactose-1-Phosphate Uridyl Transferase (Galt) And Galactosemia A Review Of Galt Function And Current Theories On Galactosemia Pathogenesis, Lydia R. Rehrer
Senior Honors Theses
All living organisms depend on the metabolism of carbohydrates for energy and the biosynthesis of necessary glycoconjugates. One of these carbohydrates is the monosaccharide galactose. Galactose is metabolized by humans through the Leloir pathway of galactose metabolism, which contains three enzymes to modify galactose so that it can be incorporated into glycolysis for the production of cellular energy. The middle enzyme of this pathway, galactose-1-phosphate uridyltransferase, produces uridine diphosphogalactose (UDP-gal) from galactose-1-phosphate (gal-1P), and a deficiency of this enzyme results in the human disease galactosemia. Galactosemia is diagnosed soon after an infant begins feeding, and although a galactose-restricted diet eliminates …

Blood Pressure Monitoring Of Hypertensive Patients In Primary Care: Barriers And Facilitators To Ambulatory, Office, And Home Blood Pressure Monitoring In The Context Of The Triple Aim, Elizabeth Andrews
Muskie School Capstones and Dissertations
Hypertension represents a population health issue in that many patients are misdiagnosed and over-or-under medicated. Research has indicated that overestimating the true blood pressure by 5 mmHg leads to over 30 million Americans being inappropriately treated with blood pressure medication (Handler, 2009). Blood pressure measurements taken in the office are often inaccurate due to patient behaviors, improper technique, and observer errors, yet providers are still using this method to diagnose hypertension. Therefore, considering other methods of blood pressure for the diagnosis and management of hypertension is important to the healthcare quality for millions of Americans.
The main objective of this …
Colonization Of Intestinal Pathogen Changes The Gut Microbiota, Kaitlyn Shondelmyer
Colonization Of Intestinal Pathogen Changes The Gut Microbiota, Kaitlyn Shondelmyer
Senior Honors Theses
Enterohemorrhagic Escherechia coli is a serious human pathogen causing bloody diarrhea and hemolytic uremic syndrome. It is difficult to study in animal models, but pathogenesis may be modeled in mice with the similar murine pathogen, Citrobacter rodentium. C. rodentium does not cause disease in streptomycin-treated mice, suggesting that it is competition with other facultative anaerobes that triggers pathogenesis. Streptomycin-treated mice were co-colonized with C. rodentium and a commensal E. coli strain. The intestinal microbiota of each group was observed over a 15-day period using quantitative PCR. Colon weights were also measured over the same period. Results indicate that the …

Mental Health In Jamaica: An Approach To Awareness And Treatment In Children, Sam Curran, Lilly Naqvi
Annual Undergraduate Conference on Health and Society
The awareness, perception and treatment of Autism was studied during a service study abroad class to Petersfield, Jamaica during the winters of 2013 and 2014. The program was developed to gain a basic understanding of the etiology of the disorder, and to examine the dynamic of a rural population’s outlook on health. Parents, teachers, and other community members were interviewed and engaged in discussion to share knowledge and perceptions of Autism. We will discuss our experience and findings.
Our preliminary conclusions include the following. First, the amount and availability of resources affects the parents and children, impacting his or her …
Defining Obesity: An Argument For The Social Environment Perspective, Meghan Mcinnis
Defining Obesity: An Argument For The Social Environment Perspective, Meghan Mcinnis
Annual Undergraduate Conference on Health and Society
It is well documented that obesity is a growing problem in the U.S. and worldwide. By 2010, 35.9% of U.S. adults age 20 and older were obese (Overweight and Obesity, CDC). Obesity has been associated with many health problems, including hypertension, type 2 diabetes, osteoarthritis, stroke, and cardiac disease (Lucey, 2008, p.202). What has just been described is the traditional, medicalized narrative of obesity. In this narrative, obesity is viewed as an epidemic that demands an immediate and widespread response (Lucey, 2008, p.202). The blame is placed largely on individuals, while social factors, such as socioeconomic status and neighborhood environment, …
Caring For Caregivers: Assessing Grief And Coping Of Pediatric Palliative Care Nurses, Sophia Undseth
Caring For Caregivers: Assessing Grief And Coping Of Pediatric Palliative Care Nurses, Sophia Undseth
2014-2016 Undergraduate
The definition and implementation of pediatric palliative care has been increasingly studied in recent years. Within the United States, where children generally have adequate nutrition and access to advanced technology, the population of dying children is relatively small. Nevertheless, the number of pediatric patients suffering from both cancer and other chronic and life-threatening diseases has increased. While there has been a focus upon the need for support of the child and the family, the emotional response and grief of the caregivers, especially nurses, has often gone unnoticed. The five different kinds of loss that may be experienced by caregivers help …

Marine & Environmental Sciences Faculty Articles
Tiger sharks (Galeocerdo cuvier) are a wide ranging, potentially keystone predator species that display a variety of horizontal movement patterns, making use of coastal and pelagic waters. Far less, however, is known about their vertical movements and use of the water column. We used pop-up satellite archival tags with two data sampling rates (high rate and standard rate tags) to investigate the vertical habitat use and diving behavior of tiger sharks tagged on the Puerto Rico–Virgin Islands platform and off Bermuda between 2008 and 2009. Useable data were received from nine of 14 sharks tagged, tracked over a …

Nutrition For The Body: Exploring Nourishment Of The Body During A 28-Day Daniel Fast At Southern Adventist University, Caitlin S. Hobbs
Journal of Interdisciplinary Undergraduate Research
Abstract: Although research has shown that proper nutrition is associated with improved physical health, eating healthfully is a challenge for many individuals because caloric restriction is not well-tolerated on a long-term basis. The purpose of this study was to assess the effects of the Daniel Fast—a biblically-based, ad libitum, vegan eating plan—on physical health as measured by weight and metabolism. 22 subjects (females; 18-22 years) completed a 28-day Daniel Fast following guidelines provided. Subjects reported to the lab following an overnight fast for pre-fast evaluations. After 21 days of fasting, they reported to the lab for post-fast evaluations during the …
The Effects Of Selected Drugs On The Memory Recall Of Sleep Deprived Mice, Jennifer Pauldurai
The Effects Of Selected Drugs On The Memory Recall Of Sleep Deprived Mice, Jennifer Pauldurai
Journal of Interdisciplinary Undergraduate Research
Abstract: Humans often make use of the neurotransmission altering effects of drugs such as caffeine, ephedrine, and ethanol. These drugs induce changes in memory and learning ability, specifically when used for sleep deprivation (Pilcher & Huffcutt, 1996; Malinauskas, Aeby, Overton, Carpenter-Aeby, & Barber-Heidal, 2007). English white mice (Mus musculus) have been shown to exhibit similar cognitive changes when administered drugs or when sleep deprived (Tanaka et al., 2003; Vecsey et al., 2009; Patti et al., 2010). This study revealed a counterbalancing effect when mice were both administered selected drugs and sleep deprived. A sample of 20 mice was …
