Due to their limited resources, rural, older adults in the United States are at risk for poor diet-related health outcomes. Nutrition education is a key component in improving health outcomes in older adults. Cooking Healthy, Eating Smart (CHES) is a nine-lesson curriculum designed to teach rural, older adults culturally appropriate nutrition and food safety information. Funding to hire health professionals to deliver such a curriculum is limited, presenting the need to explore a less expensive mode of dissemination. A key feature of the order Lepidoptera is the coilable proboscis, present in over 99% of lepidopteran species. The proboscis is used to obtain liquid nutrition, usually floral nectar. The proboscis is assembled from two elongate galeae immediately after emergence of the adult from the pupa. What happens if the galeae become separated? I studied the process of repair of the proboscis, behaviorally and functionally, at the organismal level. Off season high tunnel strawberry production has the potential to augment income for Arkansas fruit growers during an unproductive time of the year, however management guidelines do not exist. A series of studies were conducted to determine the effect of supplemental trace mineral source on growth performance, morbidity, and trace mineral status in growing beef cattle. The first experiment evaluated supplemental trace minerals from sulfate, organic, or hydroxy sources on growth performance and morbidity. Crossbreed beef calves were assigned to 1 of 3 treatments consisting of supplemental zinc (360 mg/d), copper (125 mg/d), and manganese (200 mg/d) from inorganic, organic, or hydroxy sources fed daily over a 42 to 45-d backgrounding phase. The objective of this thesis was to evaluate the influence of steroids and gonadotropins on reproduction in beef cattle. In experiment 1, beef heifers were used to determine the influence of growth-promoting implants on growth, reproductive development, estrous behavior, and pregnancy rate. Heifers were assigned to 1 of 4 implant treatment groups: control (CON); trenbolone acetate (TBA); trenbolone acetate plus estradiol (TBA+E2) or zeranol (ZER). Heifers were implanted once, A.I. and exposed to bull during this experiment. Body weight, BCS, HH, RTS, estrous behavior and pregnancy data were collected throughout this experiment. The purpose of this quantitative study is to gain an understanding of the powerful instructional potential of combining the practice of looping, Cognitively Guided Instruction (CGI) professional development strategies, and the impact these practices have in addition to ethnicity in elementary education. The study focused on research questions pertaining to student's Measure of Academic Progress (MAP) scores and the implementation of looping, CGI strategies, and how ethnicity impacted student achievement.

Mitochondrial dysfunction is a contributing factor to the advancement of various diseases including obesity, diabetes, and cardiovascular disease. Impairment in mitochondria brings about a diminished mitochondrial number and oxidative capacity. Leucine is known to stimulate muscle protein synthesis through transcription and translation of nuclear DNA leading to increases in mitochondrial biogenesis and fatty acid oxidation. Two broiler lines divergently selected for high (HMC) and low (LMC) muscle lightness (L*) were formed from a random bred control line (RBC). After eight generations of selection, three experimental trials were conducted to investigate the correlated response to selection and effects of pre-slaughter environment on meat quality in all three lines.

Seed carbohydrate content is an important aspect in breeding for food-grade soybeans commercialized in the soyfood market. Sucrose and stachyose are the primary carbohydrates in soybean seed. Sucrose affects the quality and taste of various soyfoods such as tofu, soymilk, and natto; however, consumption of soy-based products with high stachyose concentrations can cause diarrhea and flatulence. A mutant line (V99-5089) with high-sucrose and low-stachyose has been identified. The first objective of this study was to determine the relationship between zebra mussel densities/biomass and benthic macroinvertebrate composition and density in the Muskegon River at a site near Croton Dam, Thirteen benthic quadrat samples were taken along a range of zebra mussel and macroinvertebrate densities at a single sample location. Turbellaria was the only taxa to have a significant positive relationship with zebra mussel density and biomass, Simuliidae had a positive, non-significant relationship with both. Alcohol consumption has been recognized as a risk factor for breast cancer. Experimental studies demonstrate that alcohol exposure promotes the progression of existing mammary tumors. However, the mechanisms underlying this effect remain unclear. In the present study, the role of vascular endothelial growth factor (VEGF) in alcohol promotion of breast cancer development was investigated using a mouse xenograft model of mammary tumors and a three-dimensional (3D) tumor/endothelial cell co-culture system. Over 1 billion people globally are estimated to be infected with Toxoplasma gondii with severe or unknown consequences and no safe and effective therapies are available against congenital or persistent chronic infection. We propose that atovaquone and diclazuril synergistically protect against fetal-maternal toxoplasmosis.

METHODS: Programmed pregnant mice were treated with atovaquone and diclazuril monotherapy, or combined (atovaquone + diclazuril) therapy and infected with tachyzoites (0, 300, 600) and the course of infection was studied.

RESULTS: Infected dams with low dose (300) developed moderate toxoplasmosis complications and treatments were similarly effective with minor differences between monotherapies. In contrast, major differences were …

BACKGROUND: Chronic hypersecretion of the pancreatic hormone amylin is common in humans with obesity or prediabetic insulin resistance and induces amylin aggregation and proteotoxicity in the pancreas. We recently showed that hyperamylinemia also affects the cardiovascular system. Here, we investigated whether amylin aggregates interact directly with cardiac myocytes and whether controlling hyperamylinemia protects the heart.

METHODS AND RESULTS: By Western blot, we found abundant amylin aggregates in lysates of cardiac myocytes from obese patients, but not in controls. Aggregated amylin was elevated in failing hearts, suggesting a role in myocyte injury. Using rats overexpressing human amylin in the pancreas (HIP …

This dissertation addresses several issues related to racial health disparities in undiagnosed diabetes in American young adults in a three-article format. The first chapter examines rates of diabetes severity across age-matched samples of young adults from two large nationally representative studies. Although the purpose of this study was to explore the impact of nonresponse on prevalence estimates, I find that the prevalence discrepancies have less to do with which respondents are missing blood samples and more to do with the samples coming from initial samples that are not equivalent.

Many antibiotics and medications used in the treatment of animals have a withdrawal time; residues are a concern for the meat industry. The most recently published 2009 USDA-FSIS Residue Program Data Report listed 135,389 Inspector-in-Charge-Generated (IICG) residue samples from 43,142,500 beef and dairy cattle inspected that year at harvest. Of these samples, 1,306 contained violative antibiotic residues and 327 violative flunixin meglumine residues. Two classes of antimicrobials comprised over half of the documented violative antimicrobial residues (beta-lactams that include ceftiofur and sulfa drugs that include sulfadimethoxine). While the violative residue rate seems small, violative residues are unacceptable. Management of carcasses …

The purpose of this integrated review of the literature was to explore the postsurgical infection complications commonly occurring in individuals undergoing total knee replacement surgery, and the relationship of co-morbidities, lifestyle choices, and genetics on the risk for complication. A comprehensive search of the literature focusing on the patient surgical site infection and total knee replacement surgery using the Cumulative Index to Nursing and Allied Health Literature (CINAHL) and Medical Literature On-line (MEDLINE). Social conflict, as opposed to armed conflict, has received less attention in the field of quantitative research. This paper investigates the structural causes of political violence in 35 African states using data from the Social Conflict in Africa dataset and the Beck and Katz panel corrected standard errors time series regression model. Theoretically, a closed political opportunity structure, combined with a weak state unable to provide public goods, should together produce high levels of social conflict. Background: Low grade systemic inflammation plays a key role in atherosclerosis, and C-reactive protein (hs-CRP), interleukin-6 (IL-6), and tumor necrosis factor- alpha (TNF -a), markers of systemic inflammation, are associated with cardiovascular events and adiposity. Cardiorespiratory fitness has shown health benefits by reducing circulating levels of inflammatory markers. However, it remains uncertain whether the negative association between cardiorespiratory fitness and inflammatory biomarkers is due to cardiorespiratory fitness itself or results from lower levels of adiposity. Using a polyurethane of methylene diphenyl isocyanate and 1,3-propane diol, several new non-halogenated aromatic boron and phosphorus flame retardants were evaluated for heat release reduction potential using the pyrolysis combustion flow calorimeter (PCFC). The polyurethanes were prepared in the presence of the potential flame retardants via solvent mixing and copolymerization methods, and were then analyzed via spectroscopic methods to determine if the flame retardant was still present in the final product. PCFC testing on the resulting products showed that the flame retardant molecule can have different effects on heat release depending upon how it is mixed into the polyurethane. Some …

Head injuries are prevalent in collegiate athletics with concussions being common among contact sports, such as football. Concussion assessment and diagnosis is complicated by the lack of objective and assessment techniques. The purpose of the study was to determine if there is a relationship between the level of a concussion-related biomarker, self-report (subjective) head hits, video-analyzed head hits, and ImPACT test scores in college football athletes before and after a football practice session.

The purpose of this study was to determine if body weight support influences the stride length-speed relationship. Additionally, the purpose was to determine if impact characteristics of running are influenced by body weight support and speed. Subjects (n=10; 6 female, 4 male) volunteered to participate in this study. All subjects were injury free and were comfortable running on a treadmill for 30 minutes. The purpose of the study was to evaluate kinematics of the lower extremity during the stance phase of an endurance training run. Fifteen participants (8 male, 7 female; 30.5 ± 8.4 years; 71.8 ± 11 kg; 1.73 ± 0.07 m) reported that they were currently signed up for, or planned on signing up for, an endurance race within the next six months of participation in the study (9 half marathon, 3 marathon, 1 triathlon, 2 21k trail run).
