As lawmakers concerned with problems as diverse as childhood obesity, animal cruelty, and listeria have increasingly focused their attention on consumers, legal issues surrounding food choice have recently attracted much broader interest. Bans on large sodas in New York City, fast food chains in South Los Angeles, and foie gras in California and Chicago have provoked national controversy, as have federal raids on raw milk sellers. In response, various groups have decried restrictions on their ability to consume the food products of their choice. A few groups have organized around the principle of what we might call liberty of palate, …
Production Of Canola As A Biofuel Feedstock In The Piedmont Region Of North Carolina, Matthew Rhyan Miller
Production Of Canola As A Biofuel Feedstock In The Piedmont Region Of North Carolina, Matthew Rhyan Miller
Theses
Canola in the past and present has been evaluated as a domestic fuel source and a means to stimulate rural economic development. In order to ease the transition of the economy in North Carolina new rotational crops can be looked upon as sources of additional revenue. Canola Brassica napus (L.) production was evaluated for cultivation in a Piedmont soil (Mecklenburg Sandy Clay Loam) at NC A&T State University research farm located in Greensboro, NC (Guilford County). The experiment was conducted using a split plot design with main plot factor cultivar (Virginia and DKW 46-15) and subplot factor fertilizer: (N-P2O5-K2O) in …
Eliminating The Shortage Factor: Modeling The Behavior Of Future Donations Using Forecasting Techniques To Improve The Distribution Efficacy Of A Food Bank, Jessica Rena Terry
Eliminating The Shortage Factor: Modeling The Behavior Of Future Donations Using Forecasting Techniques To Improve The Distribution Efficacy Of A Food Bank, Jessica Rena Terry
Theses
Food insecurity is defined as the inability to provide food for oneself. As of 2011, more than 14.9% of American households suffered from food insecurity. Many individuals suffering from food insecurity obtain assistance from governmental programs and nonprofit agencies. Food Banks are one of many non-profit organizations assisting in the fight against hunger. They serve communities by distributing food to those in need through charitable agencies. Many of the food distributed by the food bank come from donations. These donations are received from various sources in uncertain quantities at random points in time. Due to this variability, predicting the quantity …

The Importance Of Female Choice: Evolutionary Perspectives On Constraints, Expressions, And Variations, David Frederick, Tania A. Reynolds, Maryanne L. Fisher
Psychology Faculty Books and Book Chapters
This chapter introduces the reader to some of the influential perspectives on female mate choice in human evolutionary biology, including parental investment theory. We then present two key theories in evolutionary psychology that have been applied to understand variations in women’s mating preferences and choices: sexual strategies theory and strategic pluralism theory. Although the importance of female choice has gained widespread acceptance in the biological sciences, the influence that female choice has on mating systems can be limited by many factors, such as control over mating decisions by parents and men’s control over women’s sexuality. Despite these constraints on female …

The protective effect of family meals on unhealthy weight gain and diet has been shown across multiple age groups; however, it is unknown whether a similar effect is present among diverse immigrant populations. In addition, little research has focused on factors associated with the frequency of evening family meals, such as feeding styles (how parents interact with their child around feeding). Therefore the goals of this paper are to explore the 1) association between the frequency of evening family meals and child weight status among new immigrant families, and 2) influence of immigrant mothers’ feeding styles on the frequency of …

Understanding The Motivations Of Teachers At High-Poverty Schools What Draws Them And How Do We Keep Them?, Julie Ann Owens
Doctor of Education (EdD)
The purpose of this narrative qualitative study was to explore the motivation of teachers who enter the teaching profession and stay in the profession in a high-poverty, diverse, Title I school. This study involved interviews with a small sample of elementary teachers and included the use of personal self-reflections. Through purposive and snowball sampling, the researcher selected six licensed, elementary teachers from a school in the Willamette Valley in Oregon. Each of these participants had more than three years of teaching experience in the identified setting. Through interviews with and reflective journal entries from each participant, this researcher explored three …

Seminary Masters Theses
This thesis is concerned with the current ecological realities and the inability of current stewardship construct's to adequately address these problems. This study addresses the underlying weaknesses of current articulations of stewardship theologies. It also engages with the scientific theories that form the basis for stewardship theologies, as well as those theories that might offer alternative narratives for ecological and biotic understandings. This study also addresses the underlying ethical realities of current ecological crises. Finally this thesis seeks to offer an alternative to traditional Christian understandings of the relationship of humanity to nature. Chapter one introduces the reader to the …

Acceptability Of Brownies Supplemented With Black Bean Puree By College Students At Indiana State University, Amanda Fleischer
Acceptability Of Brownies Supplemented With Black Bean Puree By College Students At Indiana State University, Amanda Fleischer
All-Inclusive List of Electronic Theses and Dissertations
Studies have shown that legumes can be an effective fat replacer in baked goods. However, little research has been conducted addressing black beans as a fat replacer in brownies. The purpose of this study was to determine the overall acceptability, palatability, and nutrient content of brownies made using black bean puree as a replacement for shortening. Using black beans as fat replacers in baked goods reduces total calories and fat content yielding a more nutritionally acceptable product. Today's obesity epidemic justifies exploring lower calorie options for baked products. Black beans were chosen due to their dark color which will unlikely …

Cultivating Seeds, Nourishing Minds: : A Study Of Gardening Instruction And The Impact Of Student Fruit And Vegetable Intake, Wesley Caleb Ellison
Capstone Projects and Master's Theses
School gardening can and should be an activity that deepens the development of students’ healthy eating habits. Because healthy eating habits improve the quality of physical well-being, the young years of life are a vital period for reinforcement of this understanding. The purpose of this study was to investigate how school gardening activities impacted student health knowledge and preferences for fruits and vegetables. Students involved in a rural high school garden class located on the California Central Coast were surveyed to discover how gardening affected their fruit and vegetable intake. Results revealed that while gardening activities are beneficial, discussing the …

Obesity has reached epidemic proportions in the United States. Almost two-thirds of
our adult population is overweight, and more than one-third are obese. The
obesity rate is twice what it was in 1970. Most local health departments try to
address this problem with nutrition and weight control clinics, but these clinics are often
underutilized. This study examined the effects of nine independent variables on a person's
inclination to use a nutrition/weight control clinic at ·a local health department in one of Utah's
twelve health districts. It was undertaken to identify the types of individuals who were most
likely to use …

The Adjustment Of Asian American Families To The U.S. Context: The Ecology Of Strengths And Stress, Yan Ruth Xia, Kieu Anh Do, Xiaolin Xie
Department of Child, Youth, and Family Studies: Faculty Publications
The number of Asian American families is on the rise, making it 4.6% of the total US population. Asian American families are also a diverse group, comprising many different ancestries, cultural variations, and countries of origin. However, there remains a paucity of research focusing on Asian American Families. The media’s depiction of them as a Model Minority is doing a disservice to this population group. Because of this stereotype, many issues and challenges that this group encounters may not gain adequate attention. Some of these issues include acculturative stress, intimate partner violence, lack of a social support network, and intergenerational …

Refundable credits, particularly the earned income tax credit (EITC) and the child tax credit, serve an important anti-poverty measure for low-income taxpayers. Annually, millions of taxpayers who do not owe any federal income tax must file a tax return in order to claim these credits that are in the nature of social benefits. The eligibility requirements for refundable credits are complex, and these returns are particularly prone to audit: EITC audits comprise one-third of all individual income tax audits. Because of the large dollar amounts at stake, a taxpayer’s mistaken understanding of the eligibility requirements for these refundable credits can …

Ultrasound Imaging Of The Sciatic Nerve Division In The Popliteal Fossa: A Volunteer Study, Eric P. Chiang, Paul Dangerfield, Daniel Asay, Anita Cucchiaro, Jeffrey S. Berger
Anesthesiology and Critical Care Medicine Faculty Publications
Background and Objectives: A sciatic nerve block at the level of the popliteal fossa is frequently administered for post-operative analgesia for surgery below the knee. While ultrasound continues to gain popularity as the technique of choice for guiding needle positioning during peripheral nerve blocks, practitioners can begin to utilize ultrasound to look for patterns of anatomical significance. Recognizing anatomical variations among different demographic populations can help practitioners improve in performing nerve blocks. We aim to determine if predictable variability exists in sciatic nerve bifurcation location and depth at the level of the popliteal fossa.
Methods: After IRB approval, eligible subjects …
Wellness Incentives: Can The Use Of Financial Incentives And Penalties Be Effective For Motivating Participation In Wellness Programs And Sustaining Health Behavior Modification?, Donna Moschetti
Seminar Research Paper Series
Employer-based health promotion programs have been around for about four decades, but in recent years increasing attention is being given to the use of financial incentives and penalties as ways to encourage employees to become more accountable for their own health. The use of wellness incentives has been gaining traction, and employer-sponsored programs that incorporate these types of strategies have been growing rapidly. With the passage of the Affordable Care Act, the upcoming change to federal rules on wellness incentives is likely to drive up participation rates. However, this is not without controversy and it has raised some very important …

CGU Faculty Publications and Research
Human immunodeficiency virus (HIV) infection has frequently been associated with vitamin D deficiency as well as chronic inflammatory response. We tested the hypothesis of an independent relationship between serum concentrations of 25-hydroxyvitamin D [25(OH)D] and high-sensitivity C-reactive protein (CRP) in a cohort of HIV-positive people. A cross-sectional survey was conducted among 316 HIV-positive people (181 men and 135 women) aged 16 to 60 years residing in the Kathmandu Valley, Nepal. Serum high-sensitivity CRP concentrations and serum 25(OH)D levels were measured by the latex agglutination nephelometry method and the competitive protein-binding assay, respectively. The relationship between serum CRP concentrations and 25(OH)D …
