Obesity is an epidemic in the United States. Over 61% of U.S. adults and 58% of Nevada adults have Body Mass Index’s (BMI) that classify them as either overweight or obese (Behavioral Risk Factor Surveillance System [BRFSS], 2005). According to a recent article published in the Journal of the American Medical Association, obesity was the second leading cause of preventable death in the United States behind tobacco use (Mokdad, Marks, Stroup & Gerberding, 2004).

Creative Democracy And Teacher Education: The Task Before Us, Mark Lacelle-Peterson, Phillip J. Vanfossen

This essay is organized around three issues. First, through a comparison of the current social situation with that of the 1930's and early 1940's, we show why we believe that, current apparent economic prosperity notwithstanding, the 'creative imperative' of democracy must be re-asserted to counter clear and evident threats to democracy. Second, drawing on 'Creative Democracy,' we outline a vision of democratic individualism that focuses on personal beliefs and characteristics that are, we argue, 'teachable' in the sense that teachers and teacher educators can—and should—view them as requisite outcomes of their educational endeavors. Combining Behavioral Weight Loss Treatment And A Commercial Program: A Randomized Clinical Trial, Angela Marinilli Pinto, Joseph L. Fava, Debra A. Hoffmann, Rena R. Wing

Commercial weight loss programs such as Weight Watchers (WW) offer widely recognized and accessible treatment, but typically produce weight losses that are modest relative to professionally delivered programs. This study tested the hypothesis that a novel weight loss approach that combined the fundamental components of professionally delivered behavioral weight loss (BWL) treatment with the existing WW program would produce better weight losses than WW alone; no differences were expected between the novel treatment and BWL alone. Inundation Depth, Duration, And Temperature Influence Fremon Cottonwood (Populus Fremontii) Seedling Growth And Survival, L. C. Auchincloss, J. H. Richards, C. A. Young, M. K. Tansey

Western North American Naturalist

Fremont cottonwood (Populus fremontii) is an early successional foundation species found in riparian forest ecosystems in the North American Southwest. Along rivers, the upper limit of the seedling establishment zone depends on the proximity of seedling roots to the declining water table. The lower limit is a function of the maximum elevation of inundation or scour. Fremont cottonwood seedlings are likely to experience short-term (1- to 5-week) inundation during their first year of growth under both natural and human-influenced hydrologic regimes. Previous studies show that inundation can account for more than 70% of seedling mortality during this time. …

Olfactory Detection Of Caches Containing Wildland Versus Cultivated Seeds By Granivorous Rodents, Jennifer L. Hollander, Stephen B. Vander Wall, William S. Longland

We conducted a study to examine the ability of granivorous rodents to detect caches made with wildland (native and nonnative) and cultivated seeds at 3 locations in western Nevada with different vegetation types and rodent community structures. We established artificial caches containing either 2 or 3 species of wildland seeds or cultivated seeds. Five seed species were tested at each site. Under dry conditions, rodents found caches containing cultivated seeds much more rapidly than caches containing wildland seeds. Wet conditions resulted in a similar order of detectability; however, all species of seeds were located much faster in wet conditions than …

The Economics Of Health And Vitamin Consumption, Christiane Schroeter, Sven Anders, Andrea Carlson

We estimate the impact of vitamin supplement intake, lifestyle, health indicators, food culture, and demographics on diet quality outcomes as measured by the Healthy Eating Index–2005 (HEI). Our data consists of U.S. adults who participated in the 2003–2004 National Health and Nutrition Examination Survey. Alternative instrumental variable estimators explicitly address issues of endogeneity and complex sample design. Our empirical analysis demonstrates that diet quality is strongly interrelated with food culture. We suggest that vitamin consumption serves as another marker for healthy eating. This finding emphasizes the need to employ economic modeling when developing public policy to reduce obesity.

Wanda Shockey, a native of Monroe, Louisiana, began her child nutrition career in Bastrop, Louisiana, first as the home economics teacher and then becoming the child nutrition director. After moving to Arkansas, Shockey was child nutrition director for Little Rock School District for nine years and had fifty schools. Later she moved to the Arkansas Department of Education where she has been director of child nutrition for the past fifteen years.

The population served by early interventionists has changed to include more migrant families. Although there has been much research concerning Caucasian families, less is known about culturally and linguistically diverse families. Forming partnerships with families can be aided by understanding how to identify families' needs and support networks. The purpose of this study was to assess the group differences between Hispanic migrant families of young children with and without disabilities (ages birth - 5) regarding their perceptions of needs and use of support systems. Objective. Nevada women with unfavorable health insurance status may face greater barriers than women in the rest of the nation, since the development of healthcare infrastructure in Nevada is running behind population growth. This study examines the relationship between health insurance status and adverse maternal outcomes in Nevada.

Methods. Hospital discharge information of 33,149 women aged 13 or older who delivered in 2004 was abstracted from the 2004 State Inpatient Data for Nevada. Training and competing in desert environments may exacerbate concerns related to disordered eating, supplement use, and hydration in some student athlete populations. A survey administered equitably to both genders solicited self-reported responses from members of 18 different teams over four years from a southwestern United States university athletic program. More than 1,700 athletes responded to 42 items on the questionnaire. Teams, not individual student athletes, were the units of measure for statistical analyses. Children’s food choices are influenced by the media, television advertising, focusing directly at infants and toddlers. This literature review presents multiple studies that explain how TV advertising of fast food, sugary cereals and other foods high in calories, fat, sugar, sodium and low in nutrients are contributing to the increase rates of childhood obesity. Arsenic and cadmium (Cd+2) are well established environmental pollutants. Human exposure to arsenite (As+3) and Cd +2 have been associated with many types of cancers including skin, bladder, liver, prostate, stomach and lung. Epidemiological studies have associated Cd+2 exposure with breast cancer development while As +3 has not been directly associated with breast cancer development, although both As+3 and Cd+2 have been implicated in estrogen receptor mediated gene transcription and endocrine disruption. Purpose: The worksite health promotion literature has shown that successful nutrition communication programs call for making small changes to diet, one at a time. The use of observational learning (role models) and a “challenge” scenario for behavior change is supported by Social Cognitive Theory. The significance of these small changes in worksites is underscored by a recent Harvard Business Review article suggesting workplace wellness programs can return up $2.71 on every $1.00 invested. When Do Fat Taxes Increase Consumer Welfare?, Jayson L. Lusk, Christiane Schroeter

Previous analyses of fat taxes have generally worked within an empirical framework in which it is difficult to determine whether consumers benefit from the policy. This note outlines on simple means to determine whether consumers benefit from a fat tax by comparing the ratio of expenditures on the taxed good to the weight effect of the tax against the individual's willingness to pay for a one-pound weight reduction. Our empirical calculations suggest that an individual would have to be willing to pay about $1500 to reduce weight by one pound for a tax on sugary beverages to be welfare enhancing. …
