Adding Value To Fruits And Vegetables: Know The Risks, Joan Hegerfeld
SDSU Extension Extra Archives
Local growers are looking to expand their customer base; they seek the opportunity to have a greater portion of their revenues derived from “value-added” activity. Value-added activities often involve food processing or the manufacturing of a local commodity (e.g., pickles, jams and jellies, salsa, whole grain breads). Growers considering adding value-added products to their busi¬ness have questions about regulations, as well as about food handling practices that reduce or eliminate possible health and safety risks.

Cal Poly Organic Farm Business Plan, Eric Ryan Mccarthy
Agribusiness
This study was undertaken to determine which strategies would allow the Cal Poly Organic Farm to operate as a profitable business without compromising educational and agricultural objectives. Three strategies were analyzed to determine the most profitable approach. The first strategy, expanding CSA sales, emphasizes marketing efforts to increase products and services awareness. This should increase CSA, CPOF, merchandise, and farmers’ markets sales. The second strategy implements new CSA produce boxes that cater to specific groups. Existing produce boxes will remain available to CSA members. Expanding produce boxes can be done with the produce on hand or expanding crop selection. The …

Coase-Sandor Institute for Law & Economics Research Paper Series
This article explores the spectacular prevalence, and failure, of the single most common technique for protecting personal autonomy in modern society: mandated disclosure. The article has four sections: (1) A comprehensive summary of the recurring use of mandated disclosures, in many forms and circumstances, in the areas of consumer and borrower protection, patient informed consent, contract formation, and constitutional rights; (2) A survey of the empirical literature documenting the failure of the mandated disclosure regime in informing people and in improving their decisions; (3) An account of the multitude of reasons mandated disclosures fail, focusing on the political dynamics underlying …
Climate Change And Human Health Consequences, Jennifer Alford
Climate Change And Human Health Consequences, Jennifer Alford
Social Sciences
The intent of this project is to highlight the human health ramifications of climate change and the strategies for coping with this challenge. Possible effects may include reduction in agricultural outputs, dwindling freshwater aquifers, intensification of tropospheric ozone, and expanding areas of disease-carrying vectors. Because humans are closely connected with their environment, we are directly affected by any environmental disturbance. Consequently, human health is vulnerable to the effects of climate change. The questions are: what are those consequences, how will we adapt, and what does the future hold?

Journalism
The relationship between the community and the organization is looked at and analyzed through two types of interpersonal relationships. The exchange relationship and the communal relationship help evaluate the relationship or the organization compared to the community by researching the organization and the public. The farmer’s market located in the Madonna shopping center has a certain public attracting clientele based on their needs within the community, and it is the job of a public relations practitioner to help perceive the organization based on these publics. In this case, the main demographic was senior citizens, numerous case studies and research shows …

Complying With Proposition 2 Chore-Time Modular Belt Cage System Modifications And The Effects, Angela Coelho, Andrew Demler
Agribusiness
The California poultry industry is at a turning point due to the approaching deadline of Proposition 2 taking effect in 2015. The method of choice to be implemented to stay in business is called an enriched colony cage system. This system is very popular in E.U production, however has yet to be implemented in the United States. Thus, for the purpose of this project the modification of Chore Time® equipment at the Cal Poly poultry unit to resemble colony cages was the taken approach.
The fiscal impact the new law will have on California egg farmers can only be estimated. …

Can 4-H/Fcs Curricula And Program Activities Increase Self-Esteem In At-Risk Youth Ages 8-15?, Walter Barker, Elizabeth Curry
Journal of Youth Development
Nationally, 4-H programs develop educational strategies and provide opportunities for youth and adults to work in partnership as they develop life skills. This reported study looks at some curricula that enhance self-esteem in at-risk youth ages 8 to 15. The Coopersmith Self-Esteem Instrument (CSI) measures changes in participants’ self-esteem while the Massachusetts Youth Screening Instrument (MAYSl), used only at the onset of the study, alerted the staff of potential mental/emotional distress and other behavior that might require an immediate response. Girls showed a higher increase in self-esteem over the boys in the reported study.

Exercise and Sport Studies: Faculty Publications
Perilipins are lipid droplet-coating proteins that regulate intracellular lipolysis in adipocytes. A haplotype of two perilipin gene (PLIN) single nucleotide polymorphisms, 13041A>G and 14995A>>T, has been previously associated with obesity risk. Furthermore, the available data indicate that this association may be modified by sex. We hypothesized that this haplotype would associate with body fatness, aerobic fitness, and a number of cardiovascular (CV) risk factor phenotypes before and after a 6-mo endurance exercise training program in sedentary older Caucasians. The major haplotype group (13041A/14995A; n = 57) had significantly lower body mass index (BMI) and body fatness compared with …

Protein expression profiles in rat corporal smooth muscle tissue were compared between animal models of streptozotocin-induced diabetes mellitus (STZ-DM) and agematched controls (AMCs) at 1 week and 2 months after induction of hyperglycemia with STZ treatment. At each time point, protein samples from four STZ-DM and four AMC rat corpora tissues were prepared independently and analyzed together across multiple quantitative two-dimensional gels using a pooled internal standard sample to quantify expression changes with statistical confidence. A total of 170 spots were differential expressed among the four experimental groups. A subsequent mass spectrometry analysis of the 170 spots identified a total …

Journal Articles: Biochemistry & Molecular Biology
p66Shc, a 66 kDa proto-oncogene Src homologous-collagen homologue (Shc) adaptor protein, is classically known in mediating receptor tyrosine kinase signaling and recently identified as a sensor to oxidative stress-induced apoptosis and as a longevity protein in mammals. The expression of p66Shc is decreased in mice and increased in human fibroblasts upon aging and in aging-related diseases, including prostate cancer. p66Shc protein level correlates with the proliferation of several carcinoma cells and can be regulated by steroid hormones. Recent advances point that p66Shc protein plays a role in mediating cross-talk between steroid hormones and redox signals by serving as a common …

Learning Sustainable Development: Chimeneas De La Esperanza, Miriam V. Mollan Gundersen
Social Sciences
Social inequality and environmental degradation are motivating informed young people into action and connecting impoverished regions of the world with students in more developed nations. This Social Sciences senior project is to analyze an alternative development model designed by a group of Californian university students. The project, named Chimeneas de la Esperanza, is designed to help impoverished Nicaraguan women start a ceramics business. The major hurdle of this mission is to establish a market for the ceramics product. Energy efficient ceramic stoves and smoke ventilating chimneys would benefit the community and avoid an impacted crafts market. The project encompasses ideas …

Improved Dietary Variety And Adequacy But Lower Dietary Moderation With Acculturation In Chinese Women In The United States, Amy Liu, Zekarias Berhane, Marilyn Tseng
Kinesiology and Public Health
Acculturation is associated with increased chronic disease risk among Asian Americans, but its association with different aspects of diet quality remains unclear. Associations of acculturation with diet quality were examined in a convenience sample of 243 Chinese participants in a study of diet and mammographic density in the Philadelphia region between January 2002 to May 2003. An acculturation index was created based on self-reported English proficiency and within-and cross-ethnicity social interactions. Diet Quality Index-International (DQI-I) scores were based on responses to an 88-item food frequency questionnaire. Odds ratios (ORs) for falling into a higher vs lower quartile for DQI-I and …
