Changing Po2licy: The Elements For Improving Childhood Asthma Outcomes, Anne Rossier Markus, Meagan Lyon, Sara J. Rosenbaum

Geiger Gibson/RCHN Community Health Foundation Research Collaborative

Childhood asthma is a serious and chronic health issue that affects one in seven U.S. children and their families, compromising their health and quality of life and placing a heavy financial burden on families as well as an enormous strain on the health care system. Treating, managing, and ultimately preventing and reducing the burden of asthma represents a critical test of the ability of the U.S. health system – health insurers, clinical care providers, and public health agencies – to work together. Our investigation found that, as a country, we already know enough to act and improve life for the …

Cradle To Grave: A Study Of Sustainable Food Practices In A University Setting, Ryan Babich, Sylvia Smith Mar 2010

Cradle To Grave: A Study Of Sustainable Food Practices In A University Setting, Ryan Babich, Sylvia Smith

Posters

The goal of this research was to understand the process of food service sustainability through a limited “cradle-to-grave” analysis of Southern Illinois University’s campus dining facilities. The process of researching the dining halls’ sustainability was broken into three separate stages: food mileage analysis, food waste analysis, and vermicomposting analysis.

The first stage examined the food mileage for each food item. Using a mileage calculator and a carbon footprint calculator, we were able to determine miles traveled and the amount of CO2 produced by the university. Results showed that the dining halls were 15.67% sustainable in its food purchasing process. The …

Consumers And Benefits Of Genetically Modified Vegetables, Megan Carter Judge Mar 2010

Consumers And Benefits Of Genetically Modified Vegetables, Megan Carter Judge

Master's Theses

With the adoption of biotechnology in many agricultural products with first-generation biotechnology traits such as increased pest resistance, greater herbicide resistance, and increased yields the growers have accepted them. The next wave of biotech crops have second-generation traits, such as improved nutrient content, extended shelf life, reduced pesticide and herbicide application (a consumer demanded trait), and better taste. Will these consumer benefits offset any concern that the consumer has regarding biotechnology? What are those benefits and how should the information be communicated to the consumer?

Three focus groups give insight to the proposed questions. The focus groups were done in …

Early Childhood Feeding: Assessing Knowledge, Attitude, And Practices Of Multi-Ethnic Child-Care Providers, Marjorie Freedman, Karina Alvarez

Faculty Publications

Early childhood is a critical period for shaping and influencing feeding and lifestyle behaviors that have implications for future weight and health. With more women in the workforce, families have become reliant on child care. Thus, the child-feeding relationship has become a shared responsibility between the parent and child-care provider. Little is known about the impact of child-care providers on development of early childhood feeding behaviors and subsequent risk for obesity, especially in the Hispanic ethnic group. This research examined child-feeding attitudes, practices, and knowledge of multi-ethnic home-based and center-based child-care providers. Questionnaires were completed by a convenience sample of …

Environmental Attitudes Towards Wine Tourism, Christopher Taylor, Nelson Barber, Cynthia Deale Mar 2010

Environmental Attitudes Towards Wine Tourism, Christopher Taylor, Nelson Barber, Cynthia Deale

Hospitality Management

Wine tourism marketers frequently seek new ways to promote destinations, often executing ecologically sustainable practices. As consumer environmental knowledge of a wine tourism destination increases, consumer attitudes change, influencing perceptions of the environmental policies of a wine region. In this consumer-driven economy, it is therefore important to search for effective ways to market destinations, and one approach is selective marketing. By focusing on consumers in this manner, it is possible to understand better their concerns and motivations, which should aid in marketing and advertising efforts. This study investigated wine consumers environmental concerns and attitudes about wine regions. Results suggest environmental …

Maternal Consumption Of Canola Oil Suppressed Mammary Gland Tumorigenesis In C3(1) Tag Mice Offspring, Gabriela Ion, Juliana A. Akinsete, W. Elaine Hardman

Biochemistry and Microbiology

Background: Maternal consumption of a diet high in omega 6 polyunsaturated fats (n-6 PUFA) has been shown to increase risk whereas a diet high in omega 3 polyunsaturated fats (n-3 PUFA) from fish oil has been shown to decrease risk for mammary gland cancer in female offspring of rats. The aim of this study was to determine whether increasing n-3 PUFA and reducing n-6 PUFA by using canola oil instead of corn oil in the maternal diet might reduce the risk for breast cancer in female offspring.

Methods: Female SV 129 mice were divided into two groups and placed on …

The phase of rapid shoot bud multiplication lasted for 21 days or less, in both clones in all media. The maximum multiplication rate was 3.4× at 20 and 19 days, with 3.9% or 4.7% initial sucrose concentration being optimal for the clones 9-3 and 35-1, respectively. Dry mass increased over the entire culture period and was greatest with 4.8% or at least 6% initial sucrose concentration for the two clones, 9-3 …
