This research seeks to explore the nutritional profile of older generations living in and around Santa Elena and San Luis, Monteverde Region, Costa Rica as impacted by increased globalization. An additional goal of this study is to determine a baseline of factors that contribute to food selections among older generations. This research further seeks to understand generational changes in perceptions of food and to explore nutritional knowledge among older people in the region.

Peanuts and peanut butter are commonly consumed as a snack, meal component and ingredient in various commercial products. Their consumption is associated with reduced CVD risk and they pose little threat to positive energy balance. However, questions have arisen as to whether product form (e.g. whole nut v. butter) and processing properties (e.g. roasting and adding flavours) may compromise their positive health effects. The present study investigated the effects of peanut form and processing on two CVD risk factors: fasting plasma lipids and body weight. In 2007, 11.7 million people in the United States were living with a cancer diagnosis. Specifically, 12 in every 100,000 Americans are diagnosed with pancreatic cancer each year. The five year survival rate of pancreatic cancer in the United States is only 5.6% (National Cancer Institute, 2007). In addition to traditional pharmacological treatments, physical activity has been increasingly used to help individuals successfully cope with cancer. One area that has not been studied extensively is the use of sport psychology techniques to help athletes cope with cancer. The purpose of this study was to determine if a difference exists in hip power asymmetry between community-dwelling older adult fallers and non-fallers. Hypothesis: fallers would be more asymmetrical than non-fallers. Participants: 21 non-fallers (10 females, 11 males) and 18 fallers (14 females, 4 males) over the age of 65 (76.5 ± 6.9yrs). Method: Isokinetic peak torque during flexion, extension, abduction, and adduction at four velocities was recorded as measures of leg power. Objectives: To determine the effect of self-efficacy manipulation on the movement efficiency, rate of perceived exertion (RPE), and affective state of runners while running on the treadmill at a constant submaximal pace.
Methods: 20 trained male and female runners were randomly assigned to experimental (self-efficacy manipulation) and control groups. Participants first filled out a pre self-efficacy questionnaire and the positive affect negative affect schedule (PANAS), and then completed a 20 minute run on the treadmill running at 75% of their peak treadmill running speed. After 10 minutes, their oxygen consumption (VO2), heart rate (HR), and RPE was recorded. Participants (n=10) …

Implications Of Napping Into And Beyond Kindergarten On Sleep, Diet, And The Awakening Cortisol Response, Alyssa Anne Cairns

This study is an examination of sleep distribution, dietary intake, and endocrine function of caregiver-reported Nap and Non-Nap Groups of children before and after they transition to an all-day kindergarten where napping is reduced or eliminated. Measures were assessed the summer prior to kindergarten, within two weeks, and after a month of the transition to kindergarten. The study revealed that the transition to kindergarten was associated with changes in sleep and dietary intake. Endocrine function remained stable as children transitioned to kindergarten. On average, Nap and Non-Nap Groups equally lost total sleep time as they transitioned to kindergarten. However, the …

Aspergillus flavusis a filamentous fungusthat causes an ear and kernel rot in maize (Zea mays L.). It produces a toxic secondary metabolite, aflatoxin, on the colonized maize kernels. Aflatoxin is a carcinogen to humans and animals. The toxin is also an immunosuppressant and causes aspergillosis in immune compromised individuals. Therefore, the presence of aflatoxin in food is strictly regulated by governmental agencies. Contaminated food leads to severe loss in profit and in marketable yield. This thesis investigates infant and childhood health in the Roman period (1st to 4th centuries A.D.) cemetery at Vagnari using data on the prevalence and timing of linear enamel hypoplasias (LEH‘s). These results are examined in the context of historical and archaeological evidence for childhood health in ancient Rome. Analysis of the prevalence of LEH‘s in 48 individuals reveals a low frequency (64.6 %) of enamel hypoplasias in comparison with other Roman period skeletal samples, suggesting that political–economic or geographical variables may have contributed to the generally healthy conditions for subadults at Vagnari. This study was conducted to evaluate the effect of pulsed electric field (PEF) treatment on anthocyanin extraction from red cabbage using water as a solvent. Mashed cabbage was placed in a batch treatment chamber and subjected to PEF (2.5 kV/cm electric field strength; 15 μs pulse width and 50 pulses, specific energy 15.63 J/g). Extracted anthocyanin concentrations (16 to 889 μg/mL) were determined using HPLC. Heat and light stabilities of the control and PEF-treated samples, having approximately the same initial concentrations, were studied. Established in 1892, Denison House Settlement in Boston, Massachusetts was the third college settlement of its kind in the United States. Like other settlement houses of the time, Denison House was established as a base for community refurbishment and statistical study. Located at 93 Tyler Street in the rundown South Cove area of Boston, it offered its lower class "neighbors" a variety of activities and facilities within its perimeters. Judging only from late nineteenth-century attitudes and mores, one would assume that the women who worked and lived at Denison House would have been turned away by the poor residents of …

The Smith's Point site was a seasonally inhabited Native American encampment in Yarmouth, Massachusetts occupied from the Middle Woodland through the early Colonial periods. Excavations at the site in the early 1990s yielded the remains of a multi-component site including both an agricultural field and an adjacent living area. The macrobotanical remains from the agricultural and living area features were examined for this thesis project in order to investigate subsistence practices at the site. The findings show that Native Americans actively shaped these ecological niches for purposes such as maintaining and improving their subsistence base. These landscape management activities included …

We tested the hypothesis that risk of early mortality from cancers of the digestive system will be greater in men with, compared to men without, the metabolic syndrome (MetS). Participants were 33,230 men who were seen at the Cooper Clinic in Dallas, Texas and followed for 14.4 (SD=7.0) yrs. MetS was defined as having at least three of the following risk factors: abdominal obesity, fasting hypertriglyceridemia, low high-density lipoprotein cholesterol, high blood pressure, or high fasting glucose level or diabetes. MetS was associated with higher mortality (HR=1.90 [95% Confidence Interval=1.42-2.55]), and there was a graded positive association for the addition …

The article examines the viability of podcast use to provide financial education for college students by Extension educators. A focus group study of college students was conducted by a team of Extension educators from the University of Minnesota Extension related to the potential use of podcasts. Eight focus groups were conducted at a variety of colleges throughout the upper Midwest. Researchers found podcasts are not a stand-alone educational approach, but potentially a tool in a blended learning approach. Implications for using podcast and other technologies in Extension education are discussed.

Listeria monocytogenes is a ubiquitous gram positive food borne pathogen. Ingestion of L.monocytogenes contaminated food can cause serious infections in immune-compromised persons. In addition to planktonic growth, this pathogen can also grow as biofilms under adverse conditions, which has been proved to be more resistant than its planktonic counterpart to various eradications, such as antibiotic treatments. Compared with the extensively studied intracellular replication mechanisms, L.monocytogenes biofilm developmental process is not well understood.

Gossypol is a naturally occurring, highly colored yellow pigment indigenous to the small intercellular pigment glands of the cotton plant genus Gossypium, which is proposed to be part of plant's defense system. Gossypol is characterized by wide contraceptive, antiviral, anticancer and antifungal properties. However, the relatively high toxicity of gossypol precludes its application in medical therapy. For this reason the syntheses and tests of gossypol derivatives, have been tried to enable their application as drugs. Artificial selection for starvation resistance provided insight into the relationships between evolved physiological and life history trait responses following exposure to biologically induced stress. Investigations of alterations to body composition, metabolic rate, movement, and life history traits including development time, female egg production, and longevity in response to brief periods of starvation were conducted on genetically based starvation-resistant and control lines of Drosophila melanogaster. Analysis of the starvation-resistant lines indicated increased energy storage with increased triglyceride deposition and conversion of carbohydrates to lipid, as identified by respiratory quotient values. The effect of feeding Zilpaterol hydrochloride (ZH) with a 3 or 10 d withdrawal (WD) period to calf-fed Holstein steers (N=2993) on carcass characteristics and tenderness were evaluated in a feed lot experiment. Cattle were fed 0 or 8.3 mg/kg of ZH for the final 20 d of the feeding period, each treatment level was assigned a WD period of either 3 or 10 d. Improper food safety practices cause numerous illnesses and cost Americans billions of dollars each year. The study reported here addressed food safety issues by analyzing data from surveys with 4-H youth about their food safety attitudes, behaviors, and preferred methods of educational delivery. Analyses of gender differences indicate that males and females have distinct attitudes, behaviors, and preferences, necessitating more tailored educational approaches. Youth are most interested in food safety information that is fun, interactive, and built around cooking demonstrations. 4-H staff and others in Extension can optimize youth learning and practice change by approaching food safety from this experiential …
