In cold temperature storage, Parmesan cheese can develop an undesirable browning defect. Certain pyrazine compounds converted from methylglyoxal have been identified and associated with the brown pigmentations in Parmesan cheese samples. This study focused on creating a cheese model system to study variables that caused browning and variables that helped reduce or alleviate browning. The cheese making steps for the cheese model system were monitored by measuring pH and TA and the final composition for % fat, % moisture, % salt and pH. Cover crops (CC) are widely gaining attention and implementation by producers. Much of this is due to the positive influence that CCs can have. Increases in crop yield, biological diversity, water infiltration, and nutrient cycling have been observed as well as reductions in wind and water erosion. Oats and barley are unique cereals owing to their nutritional and health benefits. Soluble dietary fiber components, especially β-glucan found in both grains, have been associated with the reduction of cholesterol, normalization of blood sugar levels and suppression of hunger. These nutritional and therapeutic attributes are ideal for production of novel and more diversified food products from these cereals. β-glucan, however, imparts high viscosity in food systems particularly in high moisture foods, thus impairing their sensory characteristics. The ability of high intensity ultrasound to produce stable emulsions without the addition of surfactant was evaluated in a dairy-based formulation. The formulation consisted of protein (4.33 ± 0.05%, whey protein concentrates (WPC80), carbohydrates (21.52 ± 0.75%, sucrose and maltodextrin), oil (2.90 ± 0.05%, soybean oil), and surfactant (0-.05%). Pre-emulsions formulated with either 0, 0.025, and 0.05% of soy lecithin were treated for 5 min at an acoustic intensity of either 42.58 ± 2.98, 56.83 ± 3.01, or 70.48 ± 2.97 W cm-2. Precision agriculture can play an important role in preserving the environment and improving the economic conditions of agricultural producers. This thesis analyzes the determinants of adoption and adoption intensity of precision agriculture technologies in South Dakota. The purpose of this study was to determine whether anterior cruciate ligament (ACL) rupture and reconstruction would lead to any significant changes in subchondral bone at the proximal tibia within 1 to 5 years post-surgical repair. Fifteen individuals (3 male, 12 female), aged 18 to 29 years old, who had sustained an ACL rupture and subsequent repair within the last 5 years were recruited for this study. An age and sexmatched control was recruited to match each participant. Through the lens of the Job Demands-Resources (JD-R) Model, potential moderating effects of Self-Determination Theory (SDT) needs were investigated for the relationships between developmental opportunities and both turnover intentions and burnout in a sample of healthcare employees. SDT needs include the need for competence, the need for relatedness, and the need for autonomy, which are all theorized to be important pieces of optimal psychological functioning. Results indicated that developmental opportunities were negatively related to both turnover intentions and burnout, and these effects were moderated by the employee’s sense of relatedness, such that those with low relatedness appreciated even more reduction …

Influenza remains a global health risk and challenge. Currently, NA inhibitors are extensively used to treat influenza, but their efficacy is compromised by the emergence of drug resistant variants. Antibodies targeting influenza A virus surface glycoproteins are critical components of influenza therapeutic agents and may provide alternative strategies to the existing countermeasures. This study characterized both polyclonal and monoclonal antibodies produced from the transchromosomic (Tc) cattle platform. A polyclonal antibody, designated SAB-100, was generated from Tc cattle after immunized with H1N1,H3N2, and influenza B virus. Little is known about Miscanthus for bioenergy in the northern Great Plains. This study compared 10-year-old stands of Miscanthus x giganteus to switchgrass (Panicum virgatum L.) and prairie cordgrass (Spartina pectinata Link) for biomass on marginal cropland in eastern South Dakota. This study was conducted during 2017 and 2018 at Brookings, SD. Day of year (DOY), species, and N fertility were evaluated for effects on biomass yield and related components (tillers m-2, plant height, and weed biomass). Fusarium head blight (FHB) is a severe disease of wheat (Triticum aestivum L.). It not only reduces the quantity of the harvested grains but also decreases the grain quality due to mycotoxins contamination, especially Deoxynivalenol (DON). Qfhb1 (or simply called Fhb1) is the most important quantitative trait locus (QTL) for FHB resistance. Our lab has previously identified wheat gene WFhb1-1 (aka. There is a lack of research on how the home environment may affect this health disparity. The high fiber content of corn dried distillers’ grains with solubles (DDGS) can limit its utilization in swine diets. Student retention has historically been an important discussion in higher education. While the importance of student retention remains, a new generation of students have filled colleges and universities. This study examines how interactions with faculty influence Generation Z college students’ overall satisfaction and student retention. The quantitative study used the NSSE survey instrument at a public land-grant institution in the Midwest. The results of a Mann-Whitney U analysis indicated a significant difference in student satisfaction reported between students who returned to the same institution the following year and students who did not return. Anabaena sp. PCC 7120 is a filamentous, nitrogen-fixing cyanobacterium that uses spatial separation to perform photosynthesis and nitrogen fixation simultaneously. Under fixed nitrogen limiting conditions, Anabaena 7120 forms specialized cells, called heterocysts, to fix nitrogen. In this research, I sought to add to the knowledge surrounding the process of heterocystous nitrogen fixation in Anabaena 7120. Several decades of above average precipitation in South Dakota has increased the area of saline and sodic soils, which reduce crop yields and inhibit sensitive plant growth. Saline and sodic soils are difficult to remediate using traditional agricultural crops. Establishing salt tolerant perennial species may restore productivity to salt affected areas. Two perennial grass mixtures (mix 1: slender wheatgrass, beardless wildrye; mix 2: slender wheatgrass, western wheatgrass, green wheatgrass, creeping meadow foxtail) were dormant frost seeded along a topographic gradient in Clark Co., SD. This thesis connects late nineteenth-century southern Democrat and former Confederate L.Q.C. Lamar to the status politics of the Northeastern “small imperialist elite.” Moreover, this work traces Senator, Secretary of the Interior, and Associate Justice Lamar’s legacies in American political thought, such as a regional memorialization and the example of his national influence through the policies of President Theodore Roosevelt specifically. Though he inspired generations of politicians with varying views, Lamar himself maintained a strict constructionist political philosophy and worked for home rule throughout his career. Scholars argue for Lamar as a moderate symbol of national reconciliation due to his eulogy …
