The greater sage-grouse (Centrocercus urophasianus; sage-grouse) is the largest grouse species in North America and an indicator species for the condition of sagebrush (Artemisia spp.) ecosystems. The Box Elder Sage-Grouse Management Area (SGMA) in northwestern Utah encompasses one of the state’s largest sage-grouse populations.

To fill knowledge gaps regarding the population inhabiting the Raft River subunit of the Box Elder SGMA, I captured, radio-marked, and monitored 123 (68 female, 55 male) sage-grouse from January 2012 through December 2013. Alfalfa is the fourth largest commodity grown in the Western U.S., representing 20% of the crop acreage over the past twenty years. In the last five years alfalfa hay price has doubled from what it was previously, indicating a possible structural change in the market. This research project was completed to test for this structural change using econometric analysis of the important demand components of alfalfa price. In addition to this, simulations of an average Utah dairy were completed to examine which ratio of forage crops provided the highest economic return to the operation.

Due to the increasing cost of soybean meal and concerns of excess N being excreted into the environment, new protein supplements have been developed. Two products that have shown potential in increasing N utilization efficiency are slow release urea (SRU; Optigen) and ruminal escape protein derived from yeast (YMP; DEMP). We recently showed a critical role of Trpm5 in the transduction pathway for long chain polyunsaturated fatty acids. In the present study, I have begun to investigate dietary fat preference and the propensity to develop dietary-induced obesity in Trpm5-/- mice. My preliminary data shows that in male mice placed on a high fat diet, Trpm5-/- mice did not enhance their caloric intake as observed in wild type mice. Most surprisingly, however, was that I did not observe the same differences in between female mice, which posits a potential gender effect of this pathway on dietary fat intake. Also, …

Quaking aspen is an ecologically valuable deciduous tree species in the high elevation environment typical across many parts of western North America. It is a clonal tree species which primarily depends on vegetative regeneration by root suckering after an aboveground disturbance, e.g., wildfire, removes the stems. A flush of suckers will be stimulated after a disturbance and the resulting regeneration relies on available resources from the undamaged root system for resprouting. As data collection and modeling improve, ecologists increasingly discover that interspecies dynamics greatly affect the success of individual species. Models accounting for the dynamics of multiple species are becoming more important. In this work, we explore the relationship between mountain pine beetle (MPB, Dendroctonus ponderosae Hopkins) and two mutualistic fungi, Grosmannia clavigera and Ophiostoma montium. These species are involved in a multipartite symbiosis, critical to the survival of MPB, in which each species benefits.

Extensive phenological modeling has been done to determine how temperature affects the timing of life events and cold-weather mortality of MPB. The fungi have also …

There has been little research conducted on the physiological response of calves to temperatures outside thermal neutrality and its effects on intake and weight gain. The effects of ambient temperature on Holstein dairy calves intakes and weight gain were evaluated over a 12-month period at the Utah State University Caine Dairy.

Ambient temperature was monitored using a weather station located 1.3 kilometers from the dairy. Calf health was monitored daily using the University of Wisconsin-Madison School of Veterinary Medicine scoring criteria. Calves were fed whole milk and free choice calf starter. Glyphosate-containing herbicides such as Roundup® are a common and highly effective method to terminate alfalfa stands. With the development of glyphosate-resistant (Roundup Ready®) alfalfa, this tool is no longer an option. The purpose of this research was to determine the optimal termination methods to use when rotating from glyphosate-resistant alfalfa into silage corn. Ghrelin was first extracted from human and rat stomachs, and identified as an endogenous stimulator of growth hormone release. Ghrelin is synthesized and produced in several tissues, but the gastric mucosa remains the major source of circulating ghrelin. Orofacial clefts (OFCs) are birth defects characterized by immediately recognizable disruption of normal facial structure caused by abnormal facial development during the first six to eight weeks of gestation, causing a cleft in the lip or the palate. OFCs are among the most common structural birth defects and a public health problem. Hypertension is a serious medical condition. Although men and women of all racial groups in the US suffer from high blood pressure, black women have the highest rates of hypertension. For instance, the age-adjusted prevalence of hypertension among black women ages 20 and over is 44.3, compared to 28.1 among white women, 40.5 among black men, and 31.1 among white men.

Fireweed (Senecio madagascariensis) is a noxious and invasive weed affecting pastures in Hawaii, Australia, and South America. Fireweed contains compounds called pyrrolizidine alkaloids that are toxic to most grazing mammals. Toxic effects to cattle include irreversible damage to liver cells, hardening of the liver, and loss of liver function, which may lead to jaundice, swelling, and the accumulation of fluids in the stomach and other physiological malfunctions. External effects include rough appearance, diarrhea, low energy and dullness, photosensitization, and abnormal behavior, many of which can lead to death. As bison are considered to be ecologically extinct, and negative interactions between bison and cattle are perceived to limit bison restoration and cattle production, I designed a series of studies to test for potential competition between bison (Bison bison) and cattle (Bos taurus) for forage on the Henry Mountains in southern Utah. These studies provide insight into key information gaps previously identified by the Utah Division of Wildlife Resources (UDWR), Bureau of Land Management, and the local grazing association. Acetone-butanol-ethanol (ABE) fermentation from wastewater microalgae by Clostridium saccharoperbutylacetonicum N1-4 is a novel bioprocess that utilizes waste substrate to generate valuable solvents. Butanol, the most abundant product resulting from ABE fermentation, is an environmentally safe and high performing fuel that can be utilized as a drop-in-fuel; however, high operational costs and low ABE yield present challenge in scale-up of the process. Sucrose esters have an established use in food industry as emulsifiers. Two novel lactose esters (lactose monodecanoate and lactose monomyristate) were synthesized and studied for their antimicrobial and emulsification properties. Lactose is a byproduct in cheese production and is an inexpensive carbohydrate source.

The antimicrobial activity of lactose monodecanoate (LMD) and lactose monomyristate (LMM) was tested against the growth of seven different bacteria. Both esters, when dissolved in dimethoxy sulfoxide (DMSO), proved bactericidal against Bacillus cereus, Mycobacteria KMS and Streptococcus suis. LMM/DMSO was bactericidal against B. cereus at concentrations between 1 and 3 mg/ml. LMM/DMSO was bactericidal against …

As overweight and obesity numbers continue to climb around the world, consumers continue to search for reduced-fat alternatives to foods they often consume. Given that cheese is naturally high in fat, this is one food that is often targeted for fat reduction. However, as fat plays an important functional role in the texture of cheese by breaking up the continuous protein matrix, reduced-fat products tend to be very chewy and rubbery compared to their full-fat counterparts.

Implementation science is a relatively new field focused on ensuring that programs are planned well and then delivered as planned. This thesis describes the implementation process for a nursery-level charity school in Kigali, Rwanda, focusing on the facilitators and difficulties encountered in establishing this school.

The research process consisted of interviewing 13 individuals that are a part of the school in question. The researcher transcribed the interviews using an implementation science framework and found trends in their statements that shed light on the establishment of the school. Homelessness among unaccompanied youth is a unique, yet pervasive, social problem. Youth often become homeless through three central pathways: conflict with family, involvement in the foster system, and involvement in juvenile justice systems. As youth experience homelessness during important developmental period(s), vulnerability to mental illness may occur if not already present. The present study examined the type and prevalence of mental illness. Characteristics of homelessness, health and mental health service utilization, and pathways to homelessness were examined in relation to the occurrence of mental illness. The Western diet is commonly consumed by industrialized societies and characterized by an increased consumption of vegetable oils rich in omega-6 (n-6) fatty acids. This results in a higher ratio of omega-6 to omega-3 (n-3) fatty acids in the diet. Omega-6 polyunsaturated fatty acids (PUFA) are believed to induce a pro-inflammatory response in the body. Therefore, this change in PUFA concentration and/or ratio of n-6:n-3 in the Western diet may contribute to colorectal cancer (CRC) risk. To achieve this goal, a program that has proven effective in the UK called the Food Dudes (FD) program was implemented in six local schools. Orofacial clefts (OFCs) are facial malformations that happen during early pregnancy and have a complex and heterogeneous etiology, involving both genetic and environmental risk factors. This project examined the association between maternal nutrition, folate-related biomarkers, candidate genes involved in one-carbon metabolism (OCM), and OFCs in order to achieve more comprehensive knowledge of how nutrition and genetics influence OFC risk. All studies performed in this project used the data collected in the Utah Child and Family Health Study (UCFHS) and the Johns Hopkins International Cleft Consortium.

Stem Development, Seeding Rate, And Establishment Of Birdsfoot Trefoil (Lotus Corniculatus) For Organic, Grazing-Based Dairies, Sara Hunt

Birdsfoot trefoil (BFT, Lotus corniculatus L.) is a non-bloating, productive forage legume well suited to grazing-based ruminant production. This thesis presents three studies conducted in the Mountain West applicable to organic management and cultivation of BFT. The first is an analysis of lignification in BFT stems that supports recommendations to harvest BFT at approximately 6 weeks of regrowth, or early bloom. Lignification decreases digestibility and is correlated with high shear force required for grazing animals to break BFT stems.
