The food industry separates food products into different parts to better utilize the functional and nutritional benefits of each fraction. The overall focus of this thesis is on separating and utilizing fractions and co-products from food manufacturing as functional ingredients. Therefore, the objective of this research was to 1) evaluate the effectiveness of water degumming to separate omega-3 PUFA-rich phospholipids from other lipids found in krill oil and 2) determine how different organic solvents would affect physiochemical and functional properties of egg yolk protein recovered from spray-dried egg yolk using a novel one-step organic solvent extraction method.

West Virginia is one of the top coal-producing states in the nation, which has resulted in over 500,000 acres of highly disturbed, anthropogenic mine soils caused by surface mining. Mine soils are often rocky and contain low organic matter content, low plant-available nutrients, and toxic metals, which could result in poor soil health and low productivity. Soil health has been defined as the continued capacity of soil to function as a living ecosystem that sustains plants, animals, and humans. The deep subsurface environment has been known to host microbes as early as 1926 and has also been suggested to potentially account for as much as 50% of the Earth`s biomass. Researchers have shown that microbes alter their membrane lipid components in response to physiological stress, producing stress indicative lipid biomarkers. Background
Dental caries is the most common chronic disease in the US and disproportionately affects racial/ethnic minorities. Caries is heritable, and though genetic heterogeneity exists between ancestries for a substantial portion of loci associated with complex disease, a genome-wide association study (GWAS) of caries specifically in African Americans has not been performed previously.
Methods
We performed exploratory GWAS of dental caries in 109 African American adults (age > 18) and 96 children (age 3–12) from the Center for Oral Health Research in Appalachia (COHRA1 cohort). Caries phenotypes (DMFS, DMFT, dft, and dfs indices) assessed by dental exams were tested for association …

Coenzyme A (CoA) is an essential cofactor required for hundreds of metabolic processes. Because it is such a critical cofactor, CoA levels are tightly regulated. In the fasted state and in diabetic mice, the concentration of CoA increases dramatically in the liver. This phenotype is associated with constitutively low CoA degradation, a process that is emerging as a potentially important mechanism for CoA regulation. Nudt7 and Nudt19 are two mammalian peroxisomal enzymes with CoA-degrading activity, which are highly expressed in the liver and kidney, respectively. Legumes play a crucial role in sustainable agriculture because of their intrinsic ability to reduce atmospheric N2 into NH3 via symbiotic nitrogen fixation (SNF). SNF is carried out in the symbiosome, a quasi-organelle containing endosymbiotic rhizobial bacteria in the cytoplasm of infected cells of the nodule. Therefore, the bacteria are surrounded by a symbiosome membrane (SM), which is derived from the plant plasma membrane during infection. SNF requires constant nutritional exchanges between symbionts, including reduced carbon (dicarboxylates) from the plant for reduced nitrogen (NH4+) from the bacteroids. Experiments were conducted to investigate the effects of exogenous enzymes in poultry diets. In Chapter 4, a study was conducted to determine the effects of a corn-expressed recombinant carbohydrase (AC1) on broiler performance and digesta viscosity in high non-starch polysaccharide (NSP) diets through 21 days of age. One day-old Hubbard × Cobb 500 chicks were assigned to 6 dietary treatments. Each treatment consisted of 12 replicate pens of 10 birds. Numerous studies have shown that students learn best when theory is applied to hands-on experiences. Traditionally, vocational agriculture, which evolved into agricultural education, has incorporated hands-on learning. For example, students typically raise livestock and crops as part of supervised agricultural experiences; learn to use chain saws, tractors, hay rakes, balers and other equipment found on farms; and basic metal working skills. Ramps (Allium tricoccum) is a traditional plant in the eastern Appalachian Mountains. Ramps have been used in Appalachian folk medicine for its health promoting roles in lowering blood pressure and cholesterol. Information on the chemical composition of bioactive components responsible for the potential health benefits are scarce. Analysis of the chemical composition in similar Alliumplants showed that flavonols, induced similar health benefits. Context: Iron deficiency is a concern in distance runners due to the implications that hemoglobin production becomes impaired limiting oxygen uptake and tissue oxidation in the body. Ferritin is a biomarker used to diagnose iron deficiency. The related signs and symptoms of iron deficiency are associated with decreased performance and prolonged recovery. Human skeletal muscle is a highly metabolic tissue necessary for mobility and coordination. Responsible for approximately one-fifth of the resting human metabolism, skeletal muscle is also an important regulator of metabolites like glucose and contributes to the regulation of body temperature. Although there is a gradual decline in muscle mass associated with aging, a certain percentage of the population suffer from severe muscle mass and strength deterioration, classified as sarcopenia (5-13% for people aged 60-70 years old, 11-50% for those 80 or older). Human age estimation is an important and difcult challenge. Diferent biomarkers and numerous approaches have been studied for biological age estimation, each with its advantages and limitations. In this work, we investigate whether physical activity can be exploited for biological age estimation for adult humans. We introduce an approach based on deep convolutional long short term memory (ConvLSTM) to predict biological age, using human physical activity as recorded by a wearable device. We also demonstrate fve deep biological age estimation models including the proposed approach and compare their performance on the NHANES physical activity dataset. Background: Consumption of health- and fitness-related social media content is a predominant behavior among teenage girls, which puts them at risk for consuming unreliable health-related information.
Objective: This mixed-methods study (qualitative and quantitative) assessed health behavior attitudes and practices as well as social media use among adolescent girls. Additionally, similar practices and behaviors of adults who regularly interact with this population were studied.

Overweight and obesity threaten the health, functionality and quality of life of 77.2% men in West Virginia. The purpose of this study was to evaluate the feasibility and effectiveness of a 12-week primary care referred telenutrition weight loss intervention. Fifty-nine 40–70-year-old men with obesity were randomized to either the intervention group (n = 29) or an enhanced usual care (EUC) (n = 30) group. Participants from both groups were prescribed a moderate energy restricted diet (500–750 kcal/day below energy requirements) and provided diet-related educational materials; but, only those in the intervention group received weekly support from a registered dietitian nutritionist …

Abstract: Anthropogenic and industrial emissions have resulted in historically high levels of acidic deposition into central Appalachian forests. Despite the reduction in acidic inputs due to legislation curbing industrial emissions in the United States, continued N deposition may impact forest ecosystems. Soil and foliar samples were collected from four high elevation red spruce sites along a modeled gradient of historic N deposition. Abstract The closure of the late Neogene interoceanic seaways between the Western Atlantic (WA) and Tropical Eastern Pacific (TEP)—commonly referred to as the Central American Seaway—significantly decreased nutrient supply in the WA compared to the TEP. In marine invertebrates, an increase in parental investment is expected to be selectively favored in nutrient‐poor marine environments as prolonged feeding in the plankton becomes less reliable. Background: This paper describes the development and validation of the Vending Evaluation for Nutrient-Density (VEND)ing audit to comprehensively evaluate vended products based upon healthfulness, price and promotion, and machine accessibility. Methods: A novel vending nutrient-density score was created to determine the healthfulness of vended snack/beverage products. Field tested in United States colleges, VENDing audit (∑nutrient-density + 10 × % healthy products) and Support sub-scores (price + promotion + accessibility) were calculated for snack/beverage machines. Higher scores indicate more healthful vending options and supports for choosing healthfully. A large body of research examines determinants of infant health outcomes but little examines geographic variation generated by exogenous economic shocks. Linking birth data from the CDC Natality files to counties building new facilities from 1995-2002, we find that sports facility construction projects generate local negative externalities. Infants born during facility construction periods have lower birth weights than infants born in comparable counties where no new facility opened. Maternal prenatal health visits also fall in the post-facility-opening period. Mechanisms for this impact include local airborne particulate matter and reduced provision of government services affecting prenatal health.

Glyceollin phytoalexins are the pathogen-elicited defense metabolites that belong to the isoflavonoid family of molecules of soybean (Glycine max L. Merr). Phytophthora root and stem rot of soybean caused by Phytophthora sojae is a destructive disease throughout the soybean-growing regions worldwide causing devastating economic damages (globally $1-2 billion and over $250 million in the USA) every year. Engineering soybean plants that produce higher levels of glyceollins could confer resistance against this pathogen. Objectives: To determine 1) the difference in lower extremity power obtained from a vertical jump in individuals who are dentate or edentulous (implants or dentures) and 2) the difference occlusal pressure makes on lower body force output. Variables included jump height, maximum kicking force, maximum push off force, take off velocity, flight time, jump impulse, and maximum velocity. Groups included dentate, implant overdenture, and conventional denture.

The aim of this study was to assess the effectiveness of a “learn first, practice second” intervention on the nutrition-related knowledge, attitudes, and self-efficacy of multidisciplinary health professionals in West Virginia, specifically highlighting the Mediterranean Diet. Data was captured via online surveys at four time points (Baseline, Post-education, Post-immersion, Follow Up). All information was self-reported. This approach consisted of 16 weeks of online education, 2 weeks of cultural immersion in Tuscany, Italy, and a 7 month return to practice period. Research suggests that many veterans with post-traumatic stress disorder (PTSD) struggle with reintegration (Sayer et al., 2010), but are unlikely to seek help or complete treatment (Schottenbauer et al., 2008). Neurokinin B (NKB) and kisspeptin are critical for fertility and potent stimulators of gonadotropin-releasing hormone (GnRH) and luteinizing hormone (LH) secretion in sheep. We previously demonstrated that administration of NKB receptor (NK3R) agonist, senktide, within the retrochiasmatic area (RCh) resulted in surge-like release of LH and increased expression of kisspeptin neurons in the arcuate nucleus (ARC) of female lambs. We concluded that NKB-responsive neurons in the RCh stimulate GnRH secretion by inducing kisspeptin release from neurons in the ARC.
