Effect Of Maturity And Divalent Salts On Quality Of Low-Fat, Low-Sodium Restructured Beef., Sharon L. Pojedinec

Manipulation of product formulation protocols and ingredients to optimize texture development and processing yields provides opportunity to produce high quality, low sodium, low-fat restructured beef. The objective of this experiment was to determine effect of preblending with MgCl2 and/or CaCl2 on functionality of A- and C-maturity, in low-sodium, low-fat restructured beef. Addition of CaCl2 decreased (p< 0.001) raw and cooked pH. For both maturities, raw products with CaCl2 had more soluble protein (p< 0.05) than products without CaCl2. C-maturity products contained more soluble myosin (p< 0.10) than A-maturity products. In C-maturity treatments, MgCl2 increased (p< 0.005) myosin solubility. Products with CaCl2 decreased (p< 0.01) actin solubility. In A-maturity products, MgCl2 had less (p< 0.05) soluble actin than treatments without MgCl2. In C-maturity products, MgCl2 contained more (p< 0.05) soluble actin than treatments without MgCl2. Addition of CaCl2 decreased (p< 0.005) cook yield and addition of MgCl2 increased (p< 0.005) cook yield. In C-maturity products, treatments without CaCl2 had a higher (p< 0.0005) peak force than treatments without CaCl2 in A maturity products. In A-maturity products, treatments without MgCl2 had lower (p< 0.005) peak force than the same treatment in C-maturity products and lower (p< 0.05) than MgCl2 containing treatments. C-maturity products were more cohesive (p< 0.08) than A-maturity. Addition of CaCl2 increased (p< 0.05) cohesiveness and added MgCl2 decreased (p< 0.05) cohesiveness. Addition of MgCl2 and CaCl2 and beef maturity affect protein-water interactions and texture development of low-sodium, low-fat restructured beef.

Preschool Teaching Experience And Special Education Support Systems: A Survey Of Western Pennsylvania., Stephanie Ann Sterling

A regional descriptive study was conducted in Western Pennsylvania, throughout a five county area. Preschool teachers (N= 80, return rate 23.7%) of three and four year old children were surveyed to gain descriptive information about their preparation and training as a preschool teacher and their experience with preschool children with disabilities in their classrooms. Results indicate that most teachers have a Bachelors degree although many did not have this degree in early childhood education. It was found that almost every preschool has at least one child with disabilities enrolled in its program, but only half of the preschool teachers surveyed …

The problem of this research was to analyze science- and technology-related health assistance provided to Third World nations between 1985 and 1995 by four donor agencies: Ford and Rockefeller Foundations, USAID, and World Bank. The research examined health assistance in terms of (1) the number and value of projects by region, sub-region, and country; (2) the amount of assistance provided by individual donor agencies; (3) the types of projects initiated; and (4) the impact that these projects had on 8 health-related and 1 economic-related indicator in selected countries. Elevated levels of acidic deposition are leading to higher concentrations of aluminum (Al) in the soil solutions of some forest ecosystems. For this thesis, I performed a suite of experiments to investigate the effects of four interconnected factors on the growth and nutrition of Liriodendron tulipifera L. (tulip poplar): 1. Al exposure in solution; 2. mycorrhizal presence and percent colonization; 3. N source ratio; and 4. N level. My studies of L. tulipifera demonstrate a sensitivity to Al at concentrations as low as 100 µM, ranking it among the most Al sensitive tree species ever studied. Selected Al tolerant species …

The Effect Of Diet Dilution With Lactose On The Performance Of Turkeys., Melvin Fungayi Simoyi

An experiment involving 96 turkeys was carried out in conventional battery cages. The purpose of this experiment was to determine the effect of lactose on the productive performance of turkeys. Another objective was to establish the optimum level of inclusion in the diet. Birds were housed two per cage from day-old to six weeks old. Diets, containing 0, 0.5, 1, 2, 4 and 8% lactose, and water were offered ad libitum throughout the trial. The highest average weight gain per cage (3.79Kg) was recorded in birds on the 4% lactose diet. There was significant difference (p < 0.01) in weight gain per cage between birds on the 4% and those on the 0% lactose diet (control). All birds on lactose diets were more feed efficient than those on the control diet. Diet did not affect fecal DM but caused high fecal DAPA content (p < 0.05) in 4% lactose birds.

This experiment was conducted to determine the effect of incubation of Artemia nauplii with steroids prior to the first feeding instar II stage of Artemia development. Decapsulated Artemia cysts were incubated at a concentration of 3 g cysts/L in hatching media (1 L seawater at 1.030 SG, 0.08 g highly unsaturated fatty acid supplement) and either 20 mg 17β-estradiol (E2) or 17 αmethyldihydrotestosterone (MDHT) dissolved in 3 mL 70% ethyl alcohol or ethyl alcohol alone (control). Historically, weight gain during pregnancy has been a topic of intense debate. During the 19th century, the mother was to “diet” to produce smaller babies, thereby avoiding early induction of labor. Excessive weight gain was thought to complicate labor, increase the incidence of eclampsia and preclampsia, and decrease the likelihood of successful breast feeding, in addition to a number of other complications (Cogley, 1983). In response to such debate, the Committee on Nutritional Status during Pregnancy and Lactation was formed, and subcommittees were appointed to focus on specific aspects of the overall subject. Plants often respond to elevated UV-B by increasing the concentration of UV-B absorbing compounds in their tissues. However, evidence that UV-B absorbing compounds confer an adaptive advantage to plants in elevated UV-B environments has not been produced. Three of four experiments utilized an Arabidopsis mutant deficient in the ability to produce flavonoids (a set of UV-B absorbing compounds) to address this question. Results from a life history experiment showed that the wild type out-performed the mutant plants under both UV-B environments, indicating that flavonoids may confer an adaptive advantage across UV-B environments. Desire for thinness and desire for health were surveyed among eighteen and nineteen year old female adolescents in north-central West Virginia to determine the incidence of these motivations within this population and their relationship to unnecessary weight loss concerns, and dieting behaviors. Variables derived from body image satisfaction, self-esteem, socioeconomic status, religiosity, and food management behavior were examined for their ability to predict desire for thinness and health in subjects.;Using the statistical process of discriminate analysis, 51.6% of 345 subjects were correctly classified into groups desiring thinness and/or health. Productive Performance And Fertility Of Broiler Breeders Maintained In Commercial Colony Cages And On The Conventional Floors, Kitogho J. Mwashighadi

A trial with four replicates was conducted to compare performance and fertility of naturally mated broiler breeders maintained on litter floor versus their counterparts maintained in two tiered colony cages. Cage maintained hens with restricted feeding weighed less (P 0.05) was found in egg weights among treatments. No difference (P > 0.01) was found in feed conversion ratio per dozen eggs produced by hens maintained in cages and those on the conventional floors. A higher (P < 0.05) hen-day production was observed from 29 to 35 weeks of age in broilers maintained in cages than those on the conventional floors, but after this period no difference (P > 0.05) occurred. There were more (P < 0.05) eggs collected with cracks from cages than from the litter floors. The fertility rate was different (P 0.05) difference in mortality rate occurred between hens maintained on the fitter floors versus those in cages. When the breeders were 41 weeks of age, eggs from each treatment group were randomly collected, weighed, and incubated. Offspring from these treatments were randomly allocated to litter floor pens. Progeny were spaced at 23 CM.2 and were reared to 42 days. There was no significant (P > 0.05) difference in growth rate and feed conversion ratio in offspring from hens maintained on the litter floors versus …

The factors which influence the age-related decline in production performance and increases in meat toughness in broiler breeder hens are poorly understood. We have hypothesized that the elevated plasma concentration of glucose contributes to the nonenzymatic attachment of glucose to proteins, and generates glycoxidation crosslinks in tissues which can ultimately impair function, is responsible for loss of production. One such crosslink, pentosidine, is an established indicator of both glycative and oxidative tissue damage in mammals. Although persons with Diabetes Mellitus (DM) report more physical symptoms than do relatively healthy persons, the relation between blood glucose (BG) and symptom reporting in persons with DM has been shown to be idiosyncratic. Even in subjects that demonstrate and significant BG/symptom relation, the effect is not stable over time (i.e., greater than eight months). Daily minor stressors and solicitous spousal responding have been shown to be related to symptom reporting in other chronic illness populations and might account for variance in symptom reporting by persons with DM. The purpose of this study was to construct a student perception of a teacher's health scale. The rationale for the study was the severe lack of research on the effects of a teacher's health in the classroom environment. In addition, the tremendous dropout rate in the teaching profession due to burnout, stress and other health related factors was a key ingredient. Scale construction was deemed an important beginning component in investigation of an area with little prior investigation. The original scale was designed using student focus group participation. This study was designed to determine if 1996 high school seniors who enrolled at West Virginia University at Parkersburg in the fall of 1996 were receiving equal educational opportunity with a focus on computer access and usage. The data collection consisted of two major parts: surveying the students in the 7-county service area of WVUP and interviewing at least 5 teachers or other professional staff from among each of the 11 schools located in 7 different counties. Approximately 95-99% of soil phosphorous is unavailable to plants, with {dollar}\\sim{dollar}90% of phosphate fertilizers also being rendered unavailable upon application. 2-Ketogluconate (2KG) has been shown to solubilize insoluble phosphates in vitro. If plants themselves could solubilize the insoluble phosphate in the soil, this would greatly reduce the need for phosphate fertilizers. Two greenhouse experiments were conducted to examine in vitro and in situ solubilization of insoluble phosphates (calcium phosphate, RP, and iron phosphate, IP) with increasing concentrations of 2KG, as seen through plant (Lycopersicon esculentum) growth and Pi uptake. Using a four step phenomenological approach for inquiry, the researcher explored and interpreted data obtained from the lived experiences of sixteen perimenopausal women and eight health care providers living in rural areas. A purposive sampling technique was utilized. Participation was on a voluntary basis. Data collection procedures included a face-to-face semi-structured taped interview and completion of a demographic questionnaire. Following analysis of the data, twenty-two common essences were identified from intuiting of the interview data. Morphological plasticity of astrocytes has been hypothesized as vital to ongoing plasticity in the adult central nervous system. However, it has yet to be demonstrated directly that astrocytes are capable of gross morphological changes under non-pathological circumstances in the adult nervous system. In our studies, we have investigated this issue in the glial limitans associated with a well-known model of neuronal plasticity, the hypothalamic supraoptic nucleus. The activity of the neuroendocrine cells comprising this region was stimulated in rats by substitution of 2% saline for drinking water for 2 or 9 days. The goal of this work was to determine how polyunsaturated fatty acids (PUFAs) affect gene expression at the molecular level. Glucose-6-phosphate dehydrogenase (G6PD) is a member of the family of lipogenic enzymes known to be inhibited by dietary PUFAs. Addition of PUFAs to diet causes a 70-80% decrease in G6PD enzyme activity and mRNA accumulation in liver with no change in transcriptional activity of the gene, indicating that regulation occurs at a posttranscriptional step. Similarly, regulation of G6PD by starvation and refeeding results in a 12- to 15-fold increase in G6PD activity and mRNA accumulation but no change in transcriptional …

Five clay minerals (Well Crystallized Kaolinite (KWC), Poorly Crystallized Kaolinite (KPC), Illite, Attapulgite, and Montmorillonite) with a range of surface characteristics were selected to investigate the adsorption of three oxyanions (molybdate, selenite, and selenate). The minerals were coated with five different levels of each of Fe and Al hydrous oxides. The charge characteristics were determined using potentiometric titration. Adsorption was studied by batch experiment at 11 different concentrations of each of the oxyanions at three different pH levels. This dissertation is composed of two topics that share the focus of placental vascular tone control. In the first investigations, we looked at the effect of caffeine (Caff; 10nmol/L-10{dollar}\\mu{dollar}mol/L), nicotine (Nic), and cotinine (Cot) (1nmol/L-100{dollar}\\mu{dollar}mol/L for both) administration on isolated placental blood vessels, to see if these substances altered placental vascular tone. We found that moderate relaxations were initiated by all three alkaloids in precontracted placental blood vessels. Some people argue that Western psychology and Asian psychology are fundamentally different and irreconcilable. Western psychology is scientific and analytic-reductionistic, while Asian psychology is concerned with man's harmony{dollar}\\...{dollar} (in Paranjpe et al, 1988, p18). This study examines and compares the scientific roots of Western psychology and the humanistic roots of Asian psychology in an attempt to determine commonality between Chinese and American educational psychology.
