CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

Background Previous research shows that Multicultural Psychology courses can produce significant improvements in students’ cultural competence-related atttitudes in in-person and online courses. Objective We evaluated the impact of adding a skills-focused group assignment (i.e., Difficult Dialogues) to an online asynchronous Multicultural Psychology course. Method Undergraduate students filled out a battery of self-report measures at the beginning and end of the course. Of the 192 total students, 107 were in course sections which completed a Difficult Dialogue (DD) group project, and 85 were in the teaching as usual (TAU) section. Results Students in DD groups had significantly greater pre-to post-increases on …

Broom snakeweed [Gutierrezia sarothrae (Pursh) Britton and Rusby] and threadleaf snakeweed [G. microcephala (DC.) A. Gray] are found on many rangelands in western North America. Snakeweeds are generally unpalatable; however, animals will graze them when other forage is not available and there are field reports that pregnant cows that graze snakeweeds may abort calves. Subsequent feeding studies using fresh cut snakeweed, ground and gavaged into pregnant cattle have failed to reproduce abortions, though it was evident that at high doses snakeweed quickly damaged the rumen microflora resulting in severe rumen atony, bloating and acidosis. Adaptation Of The Conditioned Assessment Of Speech Production In Spanish, Alliete R. Alfano, Daniel Gonzalez, David J. Ertmer

Purpose: The purpose of this article is to describe the adaptation of the Spanish adaptation of the CASP.

Method: The authors adapted each segment into Spanish, then had 41 participants complete a survey to determine if each adapted segment was representative of the Spanish phonologic system. Thirty-six children (half with typical hearing, half with hearing loss) completed the CASP in English and Spanish. Paired samples t-tests were run to compare English and Spanish CASP scores between children with hearing loss and those with typical hearing.

Results: All segments were adapted as needed into Spanish. There was no statistical difference between …

Utah State University Extension provides research-based programs and resources with the goal of improving the lives of individuals, families and communities throughout Utah. USU Extension manages Create Better Health, Utah’s Supplemental Nutrition Assistance Education Program (known as SNAP-Ed), and provides nutrition education and obesity prevention services to SNAP recipients and other eligible low-income individuals. Create Better Health (SNAP-Ed) offers a variety of classes to expand participants’ knowledge of nutrition, budgeting, cooking, food safety, and physical activity. This toolkit outlines how farmers markets can implement a SNAP program and help combat food insecurity in their communities.

Cloning is an important technique in functional genomics, particularly genetics and molecular biology. Cloned genes can be used to facilitate protein expression; this is an essential step in understanding gene function. In traditional cloning, the gene of interest is amplified and tagged with a restriction enzyme sequence and ligated to the digested open vector. Objective: This project aimed to examine the impact of nutrition knowledge, dietary intake, and physical activity on firefighters’ performance on their routine physical assessment (RPA).

Methodology: Members of the Unified Fire Authority, the largest fire agency in Utah with more than 400 sworn firefighters serving 15 communities representing 440,000 residents, were invited via email to participate in this cross-sectional study. Participants (N=92) completed a 40- question survey that assessed specialized diet adherence, dietary intake, nutrition knowledge (using questions from the General Nutrition Knowledge Questionnaire;1 point for each correct answer [26 points possible]), regular physical activity (International Physical Activity Questionnaire), and …

The purpose of this study was to better understand public sentiment and current conversations on Facebook regarding wild horse management practices, including adoption, roundups, and contraception, in the timeframe between the June 2021 BLM Wild Horse Advisory Board meeting and January 31, 2022. Social media monitoring and quantitative content analysis were used to examine the Facebook posts of four organizations communicating about the wild horse controversy. Does participation in Strength and Conditioning (S&C) classes have a positive effect on the physical, emotional, mental, and social health of college students? This study was designed to measure and explore different markers of physical, mental, emotional, and social health from participants in Strength and Conditioning classes. Class participants were asked to complete a survey to self report the effects of the training on various aspects of their life. Colorectal cancer is currently the second leading cause of cancer death in the world. The risk of developing colorectal cancer increases significantly in individuals who suffer from colitis, which is inflammation of the colon lining, seen in Irritable Bowel Disease. The term “leaky gut” is often used to describe increased intestinal permeability and is closely related to colitis. Leaky gut is associated with dysbiosis of the gut microbiota, which can occur through diet. Although there is a growing body of knowledge on eccentric resistance training and aquatic plyometric training on muscle function measures alone, no research to date has investigated the effects of a mixed training model. Background: Forward falls are the most common fall direction and pose safety concerns for adults. To prevent forward falls, compensatory steps, and change-in-support reactions (e.g., foot contact) are critical for restabilizing center of mass after unpredictable, balance disturbances. Multi-joint, lower limb eccentric and isometric strength may provide additional insight on foot contact responses after a forward, temporally unpredictable perturbation. Multi-joint, eccentric muscular contractions have been found to result in significant neuromuscular adaptations (e.g., hypertrophy and muscular strength) and have higher retention capabilities than concentric contractions. 4,4’-Methylenedianiline (MDA) is an important industrial chemical used primarily in the production of polyurethane. It is toxic and a suspected human carcinogen. Polyurethane is used in a wide variety of applications such as furniture cushioning, coatings, adhesives, sealants, and elastomers. Polyurethane in soil may degrade and release MDA. The Great Salt Lake (GSL) is the largest inland body of water on the Pacific flyway, a major pathway for migratory birds in the Americas that extends from Alaska to Patagonia. The lake is surrounded by approximately 360,000 acres of wetlands, providing critical food, shelter, cover, nesting areas, and protection to between 4–6 million birds that visit each year. Impounded wetlands were created as part of the GSL ecosystem to support waterfowl habitat. Since terrestrial ecosystems store approximately 3 times more carbon (C) than the atmosphere, they have a significant effect on the atmospheric CO2 concentration. Although many studies have been conducted to determine global change effects on C cycling in terrestrial ecosystems, the underlying mechanisms remain uncertain. To address this knowledge gap, I utilized meta-analysis, laboratory experiments, and soil microbial community analysis.

In chapter 2, I conducted a meta-analysis to examine whether effects of long-term N addition on plant productivity can shift over time. I found that 44% of studies showed a marked trend (increase or decrease) in the strength of …

Behavioral parent training is a research-supported treatment for improving child behavior and increasing parenting skills. Despite many programs sharing a theoretical foundation and common elements, there is great variety in terms of treatment targets, populations served, treatment length, delivery setting, and expected outcomes. The purpose of this research was to first systematically organize and categorize relevant program information for the most frequently referenced Parent Management Training (PMT) programs. To this end, 19 programs were identified for review. We summarized each program and their available research evidence which ranged from 1 to 72 studies. Among all eating quality characteristics in beef, tenderness is regarded as one of the most important traits. Previous research indicates that consumers are willing to pay a premium for beef guaranteed to be tender. Yet, tenderness is difficult to control and predict as it is influenced by a multitude of factors. Among these factors, meat aging has been shown to be a strong determinant of tenderness. Meat aging describes a process in which muscle tissue is broken down by other proteins within the muscle, resulting in a more tender product after cooking. The distribution and abundance of the greater sage-grouse (Centrocercus urophasianus; sage-grouse) have declined in the last 60 years. Range contractions and population declines have been attributed to loss and fragmentation of their sagebrush (Artemisia spp.) habitats. Grazing by livestock remains the predominant anthropogenic land-use across sagebrush ecosystems in North America, occurring on 87% of remaining sage-grouse habitat. Most of the peer-reviewed literature reports the potential for negative impacts of sagebrush reduction treatments, to increase livestock forage, on sage-grouse habitat. The objective of this study was to evaluate the effects of dietary palmitic acid and pH on rumen fermentation, fiber digestibility, and bacterial community composition. The two factors in the experiment were palmitic acid treatment and pH treatment. Palmitic acid treatments included a control diet compared to a diet containing 1.5% palmitic acid. pH treatments included normal pH (6.6 to 7.0) compared to low pH (6.0 to 6.4). Rumen fluid from a cow was added to artificial rumens to study the effects of the two treatments relative to fermentation and changes within the microbial community. Results of the study showed …

Background: Experience in multidisciplinary collaboration among healthcare providers, leaders in public health, and educators is essential to effectively address the diverse needs of children with intellectual and developmental disabilities (I/DD) and their families.

Purpose: We describe three participatory action research (PAR) projects from an interdisciplinary training program, which used experiential learning to enhance leadership competencies and promote inclusive services. Trainees report their leadership growth as providers and advocates for children with I/DD using experiential learning through PAR.

Monitoring tomato plants regularly from seedling to harvest allows for early detection of abnormal conditions. Although tomato plants can be attacked by a variety of living organisms (insects, mites, pathogens, vertebrates), nonliving (abiotic) conditions can cause just as much damage. Abiotic diseases in tomato plants can arise from nutrient deficiencies, temperature extremes, abnormal lighting, chemical application, changes in water uptake, mechanical damage, genetic mutations, and more. This guide will cover most of the abiotic disorders and diseases that can affect tomatoes in Utah.

Nitrogen is an important component of plant nutrition. However, nitrogen in the soil comes in many different forms including some proteins, amino acids, and mineral nitrogen. Not all of these forms are available to plants. Things that affect the availability of nitrogen are temperature, moisture, and chemical composition of the material. It is difficult for organic farmers sourcing nitrogen because of low nitrogen content and availability from organic sources. Previous research done at Utah State using a novel training machine, the Eccentron, has shown large improvements in muscular strength compared to traditional resistance training in a time and energy-efficient manner. This type of training could be beneficial for clinicians looking for a modality that can elicit rapid and large strength increases in populations that may not tolerate traditional resistance training. The strength gains made from the Eccentron did not transfer to vertical jump height or sprint speed indicating limited use for training the stretch-shortening cycle (SSC).
