Utah State University Extension conducted a needs assessment in Summit County to identify the most pressing social issues related to home and community. Key informant interviews with county stakeholders and survey data from county residents revealed that mental health and youth development are high-priority issues in Summit County.

Herbivory by wild and domestic ungulates can influence tree recruitment and understory forest communities throughout the world. Herbivore-driven declines in tree recruitment have been observed for quaking aspen (Populus tremuloides), a foundation species whose health and management is recognized as a critical priority throughout much of its range. Livestock fencing is commonly used to promote aspen regeneration, but its effectiveness is rarely assessed, especially across large spatial scales. Using a livestock-reduction experiment, we evaluated the effects of ungulate herbivory on aspen in the Great Basin and southern Cascades, an expansive and environmentally heterogeneous region where aspen faces the …

Basic needs can include (but are not limited to) food and housing security, healthcare for mental and physical health/well-being, childcare, resources for personal hygiene, and more. Utah State University has many programs and services that aim to support the basic needs of students. In addition, there are many off campus resources that students are often eligible for. Being aware of the resources available and connecting students to those resources is essential when helping students navigate these hardships. …

The Affordable Care Act is one of the biggest changes in the American healthcare system in the 21st century. One element of the ACA is medicaid expansion, which opened up federal funding for states to cover any individual earning below 138% of the federal poverty line. 21 states expanded medicaid in 2014 while 12 haven’t expanded. This paper utilizes the disparity for a natural experiment to determine the efficacy of the program. Outcome variables of interest include measurements of individual health, health access and utilization, and premature death rates. Dairy cattle have lower dry matter intake (DMI) on pastures thus leading to less weight gain and milk production than feedlot cows. This study was conducted to determine whether different dairy breeds are better adapted to lower or higher quality pastures as measured in DMI and feed efficiency. The eight treatments consisted of Jersey, Holstein, Holstein-Jersey crossbreds, and 3-breed crossbreds (Montbéliarde-Swedish Red-Holstein) heifers on grass monocultures and grass-BFT mixtures. We observed greater DMI on grass-BFT mixtures. Among breeds, Holstein had the greatest DMI, then the two crossbreds, and Jersey had the least. Feed efficiency was most favorable for Jersey, less …

Land is also a common limiting factor in urban agriculture, so it is important to maximize yield and net returns. Two potential methods that can be used by the U.S. to help further improve environmental and economic sustainability of the beef industry are through the use anabolic implants, typically composed of the hormones estradiol and trenbolone acetate, and by crossbreeding Bos taurus and Bos indicus cattle. How anabolic implants operate to improve growth, and their resulting relationship with different cattle breed types have yet to be determined. This study evaluated microbial safety of relatively new and modified food products prepared especially by small-scale foodservice establishments and home producers. In the first part, microbial safety during fermentation at room temperature was evaluated. Chapter 3 monitored Listeria monocytogenes and Escherichia coli O157 survival during Sauerkraut’s natural fermentation. Chapter 4 evaluated the survival of acid-adapted E.coli O157 during kombucha fermentation and in kombucha-fruit blend during refrigeration. During both fermentations, the pathogens were inactivated before the recommended duration of fermentation. However, E.coli O157 introduced after fermentation survived in kombucha-fruit blends during refrigerated storage. The second part (Chapter 5) evaluated the safety …

Nanoparticles (NPs) are particles less than 100 nm (~4 millionths of an inch) in a direction. NPs, due to their small size, are used in a variety of products, such as silver (Ag) NPs as an antimicrobial in clothes. Copper Oxide (CuO) NPs are used in electronics as semiconductors and other fields as antimicrobials and purposefully or accidentally end up in the environment. Copper (Cu) is a necessary nutrient for plants, but at higher amounts is toxic to plants and beneficial soil microbes.

Embryos resulting from assisted reproductive technologies, such as in vitro fertilization (IVF) or intracytoplasmic sperm injection (ICSI), develop with lower efficiencies than embryos resulting from their in vivo counterparts. The reasons behind the developmental discrepancies remain largely unknown. Because the egg is the primary determinant of embryo developmental success, it is reasonable to consider inherent egg quality as a possible cause. The hypothesis for this project is that there are distinct mRNA transcript patterns, or molecular “fingerprints,” that distinguish high- versus low-quality eggs developing within the same environment. Alfalfa is one of the most economically important crops in North America. To produce alfalfa seed, a pollinator must release plant reproductive organs by applying pressure to keel petals. The alfalfa leafcutting bee, Megachile rotundata, is the primary commercial pollinator of alfalfa. U.S. bee managers struggle to maintain populations due to many mortality factors. One cause is attack from parasitoid wasps such as Melittobia acasta. Females can lay hundreds of eggs and have multiple generations, which can decimate bee stocks. This study was conducted to increase our understanding of the influence of adult female pronghorn (Antilocapra americana) physiology on fawn summer survival. Pronghorn are a valued big game animal in Idaho, but are particularly sensitive to capture; therefore, we designed a noninvasive fecal sampling study to measure pregnancy (progesterone and estrogen), diet, nutrition (fecal nitrogen and DAPA), and stress (cortisol), during metabolically-demanding female life history stages (late gestation, early lactation, and breeding season). We also compared survey results between ground and aerial methods within mountain valley landscapes.

The purpose of this study was to compare the effects of delivery method on the nutrition, food resource management (FRM), and physical activity behavior of participants enrolled in either Create Better Health’s in-person or online courses. The pre-survey and post-survey included data on nutrition, FRM, and physical activity behaviors. The researcher analyzed preexisting data from 138 SNAP-eligible adults who participated in Create Better Health’s online and in-person courses.

Results showed similar improvements in most of the nutrition and physical activity behaviors among those who took the CBH courses online or in-person. The online course showed statistically higher scores for four …

Well-designed monitoring strategies are required to obtain accurate estimates of population abundance, which is important for evaluating conservation and management strategies. Obtaining abundance estimates using traditional survey methods, like aerial surveys, is not possible in all scenarios and can be expensive and risky. One survey method that has gained popularity in the last decade is fecal DNA-based capture-recapture (CMR). However, this method has not been evaluated on winter ranges or in snowy, winter conditions.

Butter is a desirable fat rich product used for laminated pastries, like croissants, because of its flavor and consumer acceptance. However, butter has some functional aspects that reduce its performance and quality. In manufacturing of butter for laminated pastries, large blocks of butter are pushed through a rectangular opening to form a thin sheet. In this process it is not unusual to see water dripping, indicating water loss in the butter. Dactylis glomerata L., orchardgrass, is commonly grown with perennial forages such as alfalfa (Medicago sativa L.). However, commercial orchardgrass cultivars currently grown in the Intermountain West generally flower earlier than alfalfa. This results in a reduction in grass nutritional value if harvested to maximize the alfalfa yield, because the two species mature at different rates. It is critical to gain insight into the responses of forest soils to the changing climate. We simulated future climate conditions with growing season throughfall reduction (by 50%) and winter snow removal using a paired-plot design across a soil drainage class gradient at three upland, Populus-dominated forests in northern Minnesota, USA. In situ bulk soil respiration and concentrations of extractable soil N were measured during the summers of 2020–2021. Soil respiration and N concentrations were not affected by throughfall reduction and snow removal, which was largely attributed to the limited treatment effects on soil moisture content and soil temperature. …

Oak trees (Quercus sp.) are generally a tough, drought tolerant, and beautiful addition to Utah landscapes. There are roughly 450 known species of oak, with about 60 cultivars that are native to North America. Oaks are known for slow growth, sturdiness, and easy care and can be used to create a focal point and ornamental interest in the landscape. This fact sheet reviews recommended cultivars for the Intermountain West and how to grow them, including site selection and preparation, planting and spacing, irrigation, and addressing challenges such as weeds, fertilization, pruning, and diseases and pests.

1. Energy stores and migration are important adaptations for animals in seasonal environments, but their roles may vary relative to an animal's endogenous and exogenous environment. In partially migratory populations, migrants and residents experience different seasonal environments; thus, the influence of energy stores on survival may differ relative to migratory tactic, with potential consequences to survival and fitness.

This study aimed to evaluate the changes in impedance and estimates of body composition variables obtained from segmental multi-frequency bioelectrical impedance analysis (SMFBIA) following acute hydration change. All participants (N = 11 active adults) had SMFBIA measurements at baseline (euhydration), post-dehydration, and post-hyperhydration in an experimental repeated-measures design. Dehydration and hyperhydration trials were randomized with the opposite treatment given 24 h later. Dehydration was achieved via a heat chamber of 40 °C and 60% relative humidity. Hyperhydration was achieved by drinking lightly-salted water (30 mmol·L-1 NaCl; 1.76 g NaCl·L-1) within 30 min. Post-measurements were taken 30 min …

Space bioprocess engineering (SBE) is an emerging multi-disciplinary field to design, realize, and manage biologically-driven technologies specifically with the goal of supporting life on long term space missions. SBE considers synthetic biology and bioprocess engineering under the extreme constraints of the conditions of space. A coherent strategy for the long term development of this field is lacking.
