Food, nutrition, and health - and their complex interrelationships - are necessities of life. Basically, nutrition depends on food; health depends on nutrition. Everyone needs to have enough good quality food to sustain himself. Satisfying that need on a world basis must be of concern to each of us.
Although accurate data are lacking, it is estimated that more than two-thirds of today's world population is afflicted by hunger and/ or malnutrition. Almost 300 million children are suffering physical and, probably, mental damage because of insufficient food. This evidence points to one of two conclusions: we have either too many …

Widgeongrass (Ruppia maritima), muskgrass (Chara Sp.), and midge larvae (family Chironomidae) were grown under controlled greenhouse conditions using a solution of Logan tap water, 3000 ppm. sodium chloride, and an algicide-fungicide inhibiter. Soil, vegetation, and invertebrates came from a spring-fed marsh in western Utah. Ammonium sulfate, treble superphosphate, and sewage sludge fertilizers were applied to the plants at 5, 10, 20, 25, 50, 75, 100, and 300 pounds per acre equivalents of ammonium sulfate; 5, 25, 50, 75, 100, and 300 pounds per acre equivalents of treble superphsophate; and 5, 25, 100, 200, 300, 400, 500,700, and …

Rats given L-Ascorbic Acid in their drinking water prior to and during starvation did not develop severe ulceration in the glandular portion of their stomachs. Control rats which were either nontreated or given deactivated L-Ascorbic Acid developed severe stomach pathology on the starvation regimen.
The present study was based on the finding that food deprivation results in severe rumenal ulceration in rats. Given that L-AA is essential in maintaining tissue integrity and that ulcers are examples of tissue degeneration, the L-AA in large amounts could retard, or prevent, the formation of starvation induced stomach ulcers in rats.

Education of women has been neglected in many ways throughout history. In recent decades educational opportunities for women have been greatly expanded. Women have become leaders in education and compose the majority of public school teachers. In spite of these strides in women's education, and growing educational provisions for both men and women, some special groups remain neglected.
This investigator is particularly concerned with one special group: School-age girls who are pregnant. Special educational needs of most school-age pregnant girls are not being met. These young women often face insurmountable difficulties in the schools.

Thirteen bacterial cultures were isolated from the North arm of Great Salt Lake during the months of January and February of 1973. Eleven isolates were gram-negative pleomorphic rods which lysed in hypotonic solution. The remaining two were gram-positive cocci. All isolates and one known strain of Halobacterium salinarium were subjected to examination of morphological, cultural, physiological, and biochemical characteristics. A numerical taxonomic analysis was applied to the compiled characters to compute a coefficient of similarity for each individual isolate as compared to all other isolates. Ground turkey samples were prepared with different fat levels, fat types, percent mechanically deboned meat and grind. All samples were analyzed at three different time-intervals. Samples were evaluated by chemical, sensory, and physical measurements, in term of stability, water content, fat content, press fluid, water loss, flavor, texture, and hedonic values. Significant differences were determined by analysis of variance.
Coarse ground (5/8") samples showed significantly higher TBA numbers, fat content, total loss, and juiciness. Water content, flavor scores, amount of press fluid, texture scores, and hedonic scores were lower when compared to the fine and medium ground samples.

Extractable-Emulsifying Capacity Of Hand And Mechanically Deboned Mutton And Organoleptic Acceptability Of Various Mutton Salami Formulations, Jack Robert Anderson

Salt soluble extracts from mechanically deboned mutton were significantly higher (P < .01) in pH than the extracts from the hand boned mutton. An associated trend toward greater extractability, however, was not significant. Variation in emulsifying capacity between extracts from carcass parts were highly significant yet significant variation did not occur in the emulsifying capacity of hand versus mechanically deboned mutton. A new term, extractable- emulsifying capacity is presented which incorporates the extractability and emulsifying capacity of meat extracts into one value which should more accurately estimate the contribution of a meat ingredient in forming a stable sausage emulsion.
Salami, utilizing mutton, was formulated from experimental results which indicated that up to 10 percent mutton fat and 68 percent mutton lean was acceptable to panelists. Pork was preferred to beef for use in combination with mutton as determined by panel scores, however disagreement was noted between panelists. Panelists were unable to detect flavor, moisture or texture differences between the final mutton salami and a commercial beef and pork formulation. They did however prefer the appearance of the mutton salami (P < .05).

Effect of added calcium ions on the relative milk clotting activities of porcine pepsin, Mucor miehei protease, Endothia parasitica protease, and Mucor pusillus protease was compared with that of rennin. Skimmilk, maintained at pH 6. 3 with 0.000% to 0.030% added calcium chloride, was used as a substrate. The coagulation activity of Mucor pusillus protease appeared to be most sensitive to calcium ions, followed by Mucor rniehei protease, porcine pepsin, rennin, and Endothia parasitica protease. The clotting activities of Mucor pusillus protease were also more sensitive than rennin to added calcium ions in milk samples maintained at pH values of …

Whole milk acidified to pH 5.3 with hydrochloric acid was used for the manufacture of Monterey cheese. The milk was inoculated with one and one-half percent lactic starter and set with 12.5 ml rennet per 1000 pounds of milk. Normal washing treatments resulted in cheese with moisture in excess of 44 percent. Moisture content was brought below 44 percent by using wash water at a temperature such that the water-curd-whey mixture was 35 C. The pH of cheese made by preacidification was all between 5.21 and 5.09. No acid defects were encountered. Preacidification eliminated chance of spoilage or losses caused …

Dietary calcium has been classified as one of the minerals frequently limiting in the American diet (FAO, 1962) . Bone demineralization has been observed as a result of calcium deficient diets (Salomon et al., 1972), partial gastrectomies (Eddy, 1971) and inadequate hormonal balance (Albright et al., 1948). Although bone demineralization, or osteoporosis, has been attributed to many factors, the interrelationship of gastric acidity and the utilization of dietary calcium may be a key to the etiology of osteoporosis.

Germination of mung bean, Phaseolus mungo L. , and wheat, Triticum aestivum L., seeds was used for bioassay to demonstrate the toxic effects of selected pesticides--menazon, disulfoton, and GS-14254-- and allergens-- alantolactone and usnic acid. The ability of gibberellic acid to counteract the toxic effects of these chemicals on germination and seedling growth was studied. Chemical composition of the treated and untreated seeds was made with special attention to starch and protein degradation. A linear diffusion test in sedimentation tubes filled with caseinagar gel successfully measured milk clotting enzymes at concentrations of 10-4 to 1 X 10-l rennin units/ml with 95% accuracy. Diffusion rates were unaffected by diluting enzyme samples with whey, 3% NaCl, and water, The distribution of rennet, porcine pepsin, mucor pusillus var Lindt (MP) protease, and rennet-pepsin mixtures between curd and whey was determined on milk coagulated at pH 5.2, 6.0, 6.4, and 6.6. Test procedures were developed for measuring the residual milk clotting activity of a protease produced by Endothia parasitica in curd and whey separated from freshly coagulated milk. A substrate was prepared by reconstituting 6 g low heat nonfat dry milk in 500 ml buffer containing 50 ml 0.5M cacodylic acid, 50 ml 0.2M CaCl2 , 30 ml 0.2M triethanolamine and 370 ml double distilled water. High quality, mature sour cherries (Prunus cerasus L., cultivar Montmorency) were freeze-dehydrated, conditioned with one thousand part per million of sulfur dioxide solution spray followed by dry heat at 200 F for 1 minute and compressed with a pressure of 400 pounds per square inch. The samples were vacuum sealed in cans and stored at 100 F and 70 F for 6 months. The samples were analyzed every 2 months for compression characteristics, changes of color, acidity, anthocyanins, and ascorbic acid. Organoleptic evaluations were made for flavor, texture, and appearance of the rehydrated products prepared as pies.

Sheep with esophageal fistulas were used to determine the daily intake, nutritive content and digestibility of forage at three periods and two stocking intensities during the spring of 1972 on a typical foothill range in northern Utah.
Heavy grazing under a season-long regime did not influence the concentrations of dietary chemical components when compared to moderate grazing; however, it did depress the digestibility of cellulose and organic matter. There was a significant decline in the dietary chemical components due to forage maturation. Digestibility of organic matter and cellulose were significantly higher in the early spring as compared to late spring. …

Few studies in the area of psychodietetics have concentrated upon the relationship between a single dietary nutrient and behavior. However, some vitamins have been shown to be particularly important to central nervous system activity. Among these is Vitamin C (ascorbic acid).
Two experiments were done to determine the effects of ascorbic acid deficient diets on a learning task in which guinea pigs were subjects. Learning was defined as acquisition and extinction of shock-escape and shock-avoidance behavior.

The purpose of this research was to develop and test a group of predictors that could be used by fundraisers to determine potential corporate support for environmental and recreational programs. Local surveys were conducted to determine environmental and recreational needs for Cache Valley and twenty interviews were held with local corporate managers. The information gathered in these interviews and the literature review provided a list of approximately 20 variables which were narrowed down to 10 to predict both the potential for giving and the level of giving.

Spraying with the chemical herbicide 2,4-D is the most widely used method of controlling big sagebrush. Spraying is very effective in increasing forage production and generally is not poisonous to either man or animals.
Two procedures can be used to calculate the internal rate of return to big sagebrush control: standard and modified discounting. Standard discounting assumes all nonuse costs are incurred in the year of treatment, and the annual income stream is constant throughout the effective life of treatment. Soil moisture and nitrogen are often the primary controlling factors of crop production. Production functions are valuable in describing crop responses to such controlling factors. Such functions are also needed for determining the economic reliability of crop production.
Soil moisture and nitrogen fertilizer were maintained at various levels to determine the response of field corn to these controlling factors. A conventional split plot design, a continuous function experimental design, and a confined barrel plot design were used to obtain data for determining production functions.

The purpose of the study was to determine if a relationship exists among opinions toward fluoridation of public water supplies, income, and level of education of the people of Salt Lake City, Utah. There were also two secondary concerns. One was to determine if a relationship exists between opinions toward fluoridation and other controversial social issues. The issues identified for investigations were: (1) the Supreme Court decision on abortion, (2) the Equal Rights Amendment, and (3) capital punishment.
