Practical implications of grain structure relate to every step from grain development and production through market ing to processing, utilization, and consumption . The structure and adherence of the hulls may contribute to protection of grain during germination or malting and protection against insect infestations . Germ retention during threshing and separation during processing depend on the germ structure and location in the kernel. The subaleurone and central endosperm layers differ in cell size, shape, and structure and in composition, especially with regard to protein contents and quality. The structure of milk in the stomach and proximal small intestine of suckling rats at 12 and 24 hours, 5, 10 and 15 days of age was examined by scanning and by transmission electron microscopy. The milk curd in the gastric lumen consisted of chains of casein micelles which entrapped milk fat globules. The appearance was similar to that reported for bovine milk curd and cottage cheese. The gastric milk curd at 12 and 24 hours also contained large masses of granules 4-8 nm in diameter. The relationship of these particles to casein micelles is unknown.

The fluorescence microscope is one of the most sensitive instruments available for morphological and microchemical analysis of biological material, and especially of cereal grains. Recent innovations in illuminating systems, fluorescence chemistry, and specimen preparation have combined to provide significant improvements over conventional bright-field microscopy in both specificity and sensitivity. A variety of relatively specific fluorescent markers has been devised for routine and high resolution detection of all major cereal components. Several examples of useful fluorescent markers are described, including appropriate methods for specimen preparation, fluorescence analysis, and photography.

The integration of information at all levels of organization in a food system - atomic and molecular through macroscopic properties is illustrated with cake batters as an example of a formulated food and bovine muscle as an example of a biologically intact, non-formulated food. Direct examples are given using macroscopic data collected in heat and water transport studies followed by integration of microscopical data for interpretive purposes.

Pericarp thickness (determined by Z gene) varies greatly among sorghum varieties ranging· from very thin (8 ~ m) to very thick (160 ~m ) . Pericarp thickness also varies within an individuual kernel. The areas below the style and near the hilum are the thickest with the sides of the kernel being thinnest . Scanning electron microscopy was used to document differences in pericarp thickness and to explain milling differences . Varieties with a thick pericarp had starch granules in the mesocarp cell layers. Sorghums with a thin pericarp did not have starch granules in the mesocarp except near the …

Milk contains different types of colloidal or coarsely dispersed particles, such as casein micelles, membrane fragments, fat globules and cells. The fat globules are composed of subpopulations of differently sized particles. In contrast to COW 1S milk, the overall average diameter (dys), increases with advancing lactation from about 1.8 ~min colostrum to 4.0 ~min mature milk. Membrane materials originating from the milk fat globule membrane, plasma membrane, secretory vesicles and other sources can be found in milk serum. These particles have also been called lipoprotein particles. Their size ranges from about 10 - 400 nm. New results concerning the structure …

The location and distribution of some of the storage constituents in the structures of rapeseed and its products were investigated. Hand-cut or glycol methacrylate-embedded sections were stained with dyes or fluorochromes of known specificities and examined using fluorescence, bright-field and/or polarizing microscopy. Results obtained from the study were based upon observations of characteristics of the various stainings, birefringence, induced fluorescence and autofluorescence. The effects of enzymatic hydrolysis, solvents and processing on the cellular structures and their affinity for certain dyes/ fluorochromes were also investigated. Coagulated protein obtained by alkali extraction and acid precipitation from the bone containing residues discarded after mechanical separation of chicken was textured by freezing in semi-infinite cylinders followed by heat-setting in a microwave oven. Macrophotography was used to illustrate textural differences resulting from pH variations (4.5-6.0) in the precipitated protein, and changes in the ambient temperature used for freezing (-5°C to -32°C). Well identified, permanent fibres were fanned by the process under all conditions studied. Cryofixation, freeze-etch techniques were used to study the structure of cake batters made from a lean cake formulation before heating and after heating to temperatures up to l00-l02°C. Batters were prepared without added emulsifiers and with saturated and unsaturated monoglycerides replacing 5 and l 0% of the oil. Unsaturated monoglyceri des were more effective than saturated monoglycerides in dispersing oil droplets through the batter. Saturated monoglycerides formed liquid crystals during baking. The temperature at which starch granules began to swell was slightly higher for saturated monoglyceride containing cakes. The functional properties of different lipids in foods are demonstrated and related to the structure of lipid or lipid-water phases. On the basis of new X-ray data on the crystal structure of the B'-form and the a + B' transition in fats, the polymorphic transitions are considered as different lateral arrangements of triglyceride dimers. The physical properties of fat crystals can be explained from the structures, as well as possibilities to influence the polymorphic transitions.

This report demonstrates the use of a computer program written in FORTRAN for the Burroughs B6800 computer at Utah State University to perform Breslow's (1970) generalization of the Kruskal-Wallis test for right censored data. A pairwise multiple comparison procedure using Bonferroni's inequality is also introduced and demonstrated. Comparisons are also made with a parametric F test and the original Kruskal-Wallis test. Application of these techniques to two data sets indicate that there is little difference among the procedures with the F test being slightly more liberal (too many differences) and the Kruskal-Wallis test corrected for ties being slightly more conservative …

The biological degradation of waste oil in an arid soil was studied at the 16 ha EPA oil disposal site near Ogden Bay Wildlife Refuge, Utah. Upon addition of oil and fertilizer (N, P) amendments, the hydrocarbon and lipolytic utilizing microbial populations increased to 108g-1 soil. Decreases in numbers of these populations correlated with the decrease in amount of residual oil in the soil. Changes in actinomycetes, carbohydrate utilizers, fungi, and anaerobic bacterial populations were not significantly correlated with oil degradation. Increases in species known to be hydrocarbon utilizers (Corynebacterium, Pseudomonas, Arthrobacter, Acinetobacter, Flavobacterium, Penicillium, and Aspergillus) were noted upon …

1. Pikas coexisting in areas with marmots gathered marmot scats along with vegetation for their haypiles during the summer and fall months. In these areas, haypiles were much smaller than those in areas that did not contain marmot populations. 2. Winter survival rates of pikas which coexisted with marmots were high even though haypiles on the average were small. This high rate of survival is attributed to the energy content in marmot scats which increased the total energy available in the haypiles. 3. Pollination And Seed Production Of The Onions Allium Cepa L. And Allium Acuminatum Hook, Cynthia L. Hatley

Pollination and seed production of the commercial onion, Allium cepa, and a native onion, A. acuminatum, were studied from 1978 to 1980. Insect densities on five fertile (male fertile) onion cultivars grown in Utah were high and there was a positive linear relationship between insect density and flower density. Insect densities on the cultivars were significantly different, suggesting differences in attractiveness of the cultivars. At peak bloom, pollination success was high and a mean of 91% of the flower styles examined contained pollen tubes. In four of the cultivars, 60% or greater of the flowers on an umbel set seed. …

The hyperactive disorder of childhood and the enumeration of its features were described in two papers published in the mid-1950's, by Laufer and his colleagues (Laufer, 1957; Laufer, Denhoff & Solomons, 1956). It was a list that has since become familiar; short attention span, impulsivity, irritability, low frustration tolerance, poor academic achievement, and visual-motor difficulties. Like many who have since searched for definers of the syndrome, Laufer and his colleagues remarked upon the perplexing variability displayed by these children, and they noted that no single symptom could be considered diagnostic. Data on the proximate nutrient content of feedstuffs, digestibility and energy utilization available from the International Feedstuffs Institute (Utah State University) were used to develop mathematical models for estimating energy and protein utilization of five classes of feedstuffs for various kinds of animals.

There is evidence for the importance of physical exercise balanced with diet and insulin therapy in the treatment and control of Type I insulin-dependent diabetes mellitus. Recent attention in the literature has focused on the once neglected component of treatment--exercise. A well-controlled exercise state is generally believed to be beneficial for the individual with diabetes. Limited studies are available on the effect of exercise on long-term metabolic control. The effect of time that processed cheese was held ex- posed to heat alone or with agitation, the level of rework cheese, and the type and level of emulsifying salt were evaluated by determining finess of emulsion based on scanning electron microscopy measurements, meltability, and rheological measurements using a Universal Testing Machine.

Process cheese held in the cooker at 82°C for up to 4o minutes became less meltable and more firm and the emulsion became finer while that held at 82°C outside of the cooker without agitation was only slightly affected. Loss of meltability and increased firmness associated with pro-longed …

Iron bioavailability of diets containing oxidized turkey and oxidized beef meat was investigated in two experiments. In both studies male, weanling rats were made anemic by consumption of a low iron diet and bleeding. The experimental diets were prepared so that meat was the only source of iron. Hemoglobin regeneration served as the basis for measuring iron utilization. In experiment 1, lyophilized, uncooked turkey meat was allowed to oxidize at 20-22°C for 0, 48, 96, 144, 216, or 264 hours and then fed to the rats. An affinity column for cathepsin D was prepared making use of the strong affinity of pepstatin for cathepsin D. Pepstatin is an N-acylated pentapeptide from Actinomycetes with the following structure: isovaleryl-L-valyl-L-valyl-4-amino-3-hydroxy-6-methylheptanoyl-L-alanyl-4-amino-3-hydroxy- 6-methyl heptanoic acid. A relatively rapid and efficient method for cathepsin D purification has been developed; Steps include homogenization, ammonium sulfate fractionation, and chromatography on pepstatin-Sepharose column. The final preparation has a specific activity of 38 units/mg. and shows a single protein band on polyacrylamide gel electrophoresis in sodium dodecyl sulfate corresponding to a subunit molecular weight of 42,000. Polyacrylamide gel electrophoresis studies did not reveal any impurities. The …

Weanling rats were fed diets containing raw lyophylized hand-deboned shank beef (HDS) supplemented with CaCO3, retorted lyophylized mechanically deboned shank beef (MDS), or raw lyophylized MDS. Ca in the latter two diets originated from bone during the mechanical deboning process. Ca absorption, Ca retention, bone weight, and bone breaking strength were similar for comparative dietary levels of Ca regardless of the source. Bone ash and Ca content was significantly higher (P < .05) in the MDS 393 (3.93 g Ca/kg diet) diet and in the retorted MDS 460 diet compared with the HDS 488 diet. Relative biological values for the MDS diets calculated relative to the HDS diets ranged from 102 to 132 when the linear regression of Ca consumed, Ca retained, or dietary Ca level vs bone ash or bone Ca content was obtained. The retorted MDS 460 diet contained the highest Fe level and exhibited a lower percent absorption, terminal hemoglobin level, and liver Fe storage. Humerus F content increased as dietary F (also present from bone) level increased. Dietary F level did not determine humerus breaking strength.

The purpose of this study was to develop and test a Learning Package on nutritional counseling principles in diabetes mellitus with specific application for adolescents with insulin-dependent diabetes.
