Evaluation And Management Of Dietary Habits In Japanese Renal Stone Formers, Haruo Ito, Tadashi Kotake, Naoto Miura

To elucidate the relationship between the formation of kidney stones and diet, we carried out a dietary investigation in patients with urinary tract stones. Dietary intakes were estimated for 36 patients (24 men, 12 women) with calcium stones, and compared with the official dietary requirements for the Japanese.

Total protein intake, animal protein intake and animal protein ratio were significantly higher for patients with stones in both men and women. Dietary salt intake was significantly higher for male patients and the total group. Dietary calcium and carbohydrate intakes were significantly lower for patients with stones in men and the total …

Brine shrimp are encysted as gastrula stage embryos, and may remain dehydrated and encysted for years without compromising their viability. This aspect of brine shrimp biology is desirable for studying development of animals during space shuttle flight, as cysts placed aboard a spacecraft may be rehydrated at the convenience of an astronaut, guaranteeing that subsequent brine shrimp development occurs only on orbit and not on the pad during launch delays.

Brine shrimp cysts placed in 5 ml syringes were rehydrated with salt water and hatched during a 9 day space shuttle mission. Subsequent larvae developed to the 8th larval stage …

Solid deposits of SiO2 (phytoliths) accumulate in many plants in specific intracellular and extracellular locations. Phytoliths have morphological characteristics unique to some taxa and therefore have taxonomic significance. Phytoliths persist and maintain their morphological integrity long after a plant has died, thus becoming a microfossil of the plant that produced them. Development of phytolith sytematics for microfossil phytoliths has traditionally followed a typological approach based on simple verbal descriptions of shape. Selection, development, management, and nutrition of heifer calves to be used as herd replacements are key factors in maintaining beef herd productivity. A cow/calf producer, to be successful, must have some goals or criterion for heifer selection and development. For practically all Utah cattle production areas, economics dictate that heifers must calve as two-year-olds. Heifers must be properly developed and managed to permit this. Diminished sunlight, characteristic of urban canyons, has been suggested as being potentially limiting to plant growth. This study investigated the response of sweetgum (Liquidambar styraciflua L.) to variable irradiance in a range of urban locations. Diurnal photosynthesis was measured in situ on mature trees, comparing an open site at an urban park with an urban canyon that received 4 h of midday sun in midsummer. Photosynthesis for trees growing in the canyon was lower both during shaded and sunlit periods compared with trees at the park. A method commonly used to measure the ability of cells to repair potentially lethal damage (PLD) is to compare immediate plating (IP) and delayed plating (DP) survival. Lower cell survival under IP conditions relative to that after DP conditions has been interpreted to indicate a higher ability of cells to repair potentially lethal damage (PLO) under DP conditions. However, this IP radiosensitization has not been observed in several cell lines and tumor models. IP conditions involve treatment of cells with trypsin and plating them into fresh growth medium. Synchronous Sporulation And Identification Of Two Secretory Proteins Associated With Sexual Reproduction Of Ascosphaera Proliperda, Meixiong Wu

Two secretory proteins associated with sexual reproduction m the bee pathogenic fungus Ascosphaera proliperda Skou were identified. In order to obtain sufficient quantities of homogeneous cells for this study, a minimal medium (MM) was developed to synchronously induce sporulation of A. proliperda. By culturing a mixture of sexually compatible mycelial fragments on this MM, a high degree of synchronous sporulation of the fungus was obtained. Monoclonal antibodies (McA) produced against secretory vesicles isolated from the synchronously sporulating cultures of A. proliperda were used to study antigens associated with sexual reproduction of this fungus. Syneresis is an integral part of cheese manufacture. The rate and extent of syneresis affect the properties of cheese. There are many factors that affect syneresis, but measured results vary because of inaccuracies in measuring techniques. To better control syneresis, an accurate mathematical description must be developed. Current mathematical models describing syneresis are limited because of inherent error in measuring techniques used to develop them. Developing an accurate model requires an accurate way to measure syneresis.

The effects of grazing and moisture availability on the competitive interactions of intermediate wheatgrass (Thinopyrum intermedium (Host) Barkw. & D.R. Dewey) and western wheatgrass (Pascopyrum smithii (Rhydb.) A. Love) were examined under a short-duration grazing system in central Utah. The fate of tiller cohorts was observed at approximately monthly intervals at the interface between patches of these two rhizomatous grasses and in monospecific stands. The effects of short-duration grazing, clipping of western wheatgrass following grazing to achieve levels of utilization equivalent to that of intermediate wheatgrass, irrigation, and removal of the competitor were assessed in terms of the …

This study was conducted to assess the effect of nutrition education utilizing computerized dietary analysis on nutrition knowledge, dietary compliance, nutrition status, and quality of life in hemodialysis patients. Twenty patients of the Bonneville Dialysis Center in Ogden, Utah voluntarily agreed to participate in this six-month study. All participants completed quality of life assessments, the Beck Depression Inventory© (BDI), and a nutrition knowledge assessment pre- and post-study. Patients in the treatment group (n=12) completed monthly 3-day food records which were analyzed by Computrition® nutrient analysis software. The purpose of this study was to examine children's perceptions of their alternative child care environment without constraining thought processes or suggesting appropriate answers. The Child Care Game Assessment (CCGA) was developed to meet these goals. The CCGA is a role-plating, game-like assessment for preschool children. It uses a model of the child's alternative care environment and allows children to act out portions of a typical day.

The CCGA was administered to 57 four- and five-year-old children attending non-parental child care. Twenty-one children (11 boys and 10 girls) attended Utah State University's Child Development Laboratory, a 10-hour-per-week preschool. Twenty-one children …

The purpose of this study was twofold. First, it sought to provide a profile of child development laboratory schools across the nation. Second, because laboratory schools are believed to be model programs that provide appropriate learning environments for children, their parents, and for the professional training of teachers, it was of particular interest to examine whether laboratory schools were training Early Childhood Education students in ways consistent with the current research and policies in the field. This study recognizes the need to identify and prioritize critical issues facing families. The literature review identifies and documents a number of critical issues facing families in American society. Survey questionnaires, which contained an abstract version of 33 previously identified issues, were sent to a sample of 2,000 people in Utah. The sample was randomly selected from resident listings in Utah telephone books. The survey asked respondents to rate each of 33 issues on a scale of 1 to 10, 1 being the least urgent and 10 being the most urgent. A survey was created and distributed to land-grant institutions to determine the availability and description of child care services at those institutions. Participants were 70 directors of child care centers or central administrators at land-grant institutions. Thirty-nine questions provided general demographic information, general information regarding child care programs at each institution, and specific information regarding administrative concerns and quality issues in child care (based on the components of quality from the National Academy of Early Childhood Programs, 1984) in both full- and half-day programs. Abnormal T lymphocyte reactions in both autism and Alzheimer's disease (AD) have been reported. This research investigated the possibility that these abnormalities may involve circulating antithymic antibodies. Plasma samples from autistic patients, AD patients, and normal-matched controls were tested for reactivity against murine thymocytes.

In the first of 3 studies results of the enzyme-linked immunosorbent assay (ELISA) were statistically significant for binding (P < 0.001) between antithymic antibodies in plasmas of AD patients and murine thymocytes. Binding (P < 0.05) in low dilutions (1/2.5 and 1/5} of autistic patient plasmas was also observed. In the second study, plasmas of neither autistic nor AD patients significantly inhibited DNA synthesis of thymic cells in the presence of interleukin-1 (IL-l} and phytohemagglutinin (PHA). In the third study, no significant increases (P > 0.05) in cytotoxic activities were detected using AD patient plasmas and both untreated and heat-treated autistic patient plasmas. After further testing, these heat-treated plasmas diluted 1/64 and 1/128 had increased cytotoxicities (P < 0.05) when rabbit complement was added, an indication that cytotoxicity of antithymic antibodies is complement dependent.

Three non-lactating Holstein cows fitted with rumen cannula were used to determine crude protein and dry matter rate of disappearance of two protein supplements: 1) soybean meal and 2) bypass protein blend by using the in situ bag technique. Rate disappearance (%/hr) was higher for soybean meal. Two collection periods were completed using 6 cows with a minimum of 21 d adaptation to the treatment top dressed on to the total mixed ration. Ruminal concentration of ammonia N, blood ammonia, and urea did not differ between treatments. Total concentration of volatile fatty acids was higher for bypass protein blend-fed cattle …

Twenty-four early to midlactation Holstein cows were allocated to one of three treatments. Treatments consisted of: 1) basal ration plus 60 g wheat bran per day per head (control); 2) basal ration plus 57 g yeast culture per day per head; 3) basal ration plus 57 g yeast culture plus 3 g Aspergillus oryzae per day per head. Feed intake and milk yield were recoreded daily and milk composition and body weights were recorded weekly. Feed and fecal samples were recorded weekly. The research concerning eating disorders and concomitant conditions shows that anorexia nervosa and bulimia nervosa are serious disorders that pose many diagnostic and therapeutic challenges to mental health and nutrition professionals. Most psychologists and nutritionists receive broad-based training that likely only superficially touches upon the importance of these diagnostic issues. Nevertheless, effective treatment planning requires that diagnostic issues and concomitant conditions be evaluated and incorporated into the diagnosis and treatment of eating disorders. A UHT-processed skim milk (85%)/orange juice (15%) drink was developed. Product integrity and stability were maintained by two methods. Proper homogenization of the blend before UHT processing stabilized a drink formulation containing .25% carboxymethyl cellulose and .025% carrageenan. Adjusting the pH of the blend (pH 6.3 and 6.5) resulted in a different stabilization. After 28 days at room temperature, settling of milk solids was 5.2% of volume height in the prehomogenized sample and 86.9% of volume height in the same blend that had not been homogenized prior to UHT processing. The effect of time on taste threshold was examined in 30 diabetics and 30 control subjects (ages 22-30) who had participated in a sensory study 14 years previously. Detection and recognition taste thresholds for sweet (sucrose), salty (sodium chloride), sour (citric acid), and bitter (quinine sulfate) were assessed using triangle testing. Food preferences related to concentration of the stimuli in model food systems were tested using a nine-point hedonic scale. Mashed potatoes were used as the carrier for different levels of salt. The nature of the cell surface components involved in donor cell clumping (Clu+) and the relationship of Clu+ to high frequency conjugal transfer of lactose utilization (Lac) in Lactococcus lactis subsp. lactis ML3 was examined. Lactose positive (Lac+), Clu+ transconjugants, containing a novel 104 kilobase Lac plasmid, were obtained by mating ML3 with LM2301. When used as Lac+ donors in second round matings, these transconjugants transferred Lac at high frequencies ranging from 10-2 to 10-4 transconjugants per donor CFU. The effect of ultra-high temperature processing by direct steam injection and room temperature storage of pH-adjusted and unadjusted 3X (volume reduction) skim milk retentate and the effect of storage at various temperatures of 3X skim milk retentate without pH adjustment on their ζ-potential, viscosity, and pH were determined. Pasteurized skim milk was concentrated to 3X by ultrafiltration. In the pH study portions of skim milk retentate were adjusted to pH 6.38 ± .02 with HCl and 6.85 ± .01 and 7.32 ± .02 with NaOH between ultrafiltration and ultra-high temperature processing. The pigments responsible for pink or red discoloration in cooked vacuum-packaged meat products {bratwurst (pork and beef), ground pork, and pork roasts} were investigated. In bratwurst, this study attempted to characterize the red pigment that appears upon refrigerated storage, and to determine the effect of pH, cooking and storage temperature, and sodium lactate on incidence of red discoloration. Myoglobin was identified in the exudate of samples with red discoloration. Myoglobin levels of cooked products were significantly lower in samples of low initial pH (5.5) or cooked to higher than normal internal temperature (74°C). Red discoloration was associated with microbial growth. …

The purpose of this research was to relate lactose reactivity and age gelation of UHT processed concentrated milk. Skim milk was pasteurized, diafiltered batchwise to reduce lactose concentration to less than 0.05%, and UF concentrated to 3X (one-third volume reduction).
