The primary function of leavening agents in baking is to cause the dough or batter to rise, allowing the baked product to be less dense, have more volume and be more aesthetically pleasing.1 The three main types of leavening agents are baking powder, yeast, and the production of carbon dioxide steam as the product is baked.2 These different types of leavening agents behave very differently and the purpose of this experiment was to discover and record the differences that occur in chocolate chip muffins. Dysphagia, or difficulty swallowing, affects many individuals around the world with an array of underlying medical conditions, and rates of dysphagia are expected to increase as the population ages1,2. Dysphagia affects the swallowing reflex, which can lead to a greater risk of aspiration and subsequent infections. In order to mitigate this, thin liquids are thickened following IDDSI standards so they can be more easily swallowed by those with dysphagia. - Indoor free play during preschool or childcare provides children with an opportunity to engage in total (light-to-vigorous) physical activity (TPA).
- Researchers may collect indoor free play TPA during a single indoor free play period, multiple indoor free play periods over a single day, or over multiple days.
- Little is known about the variability in TPA over indoor free play periods or if a single indoor free play period is representative of weekly indoor free play TPA.
Purpose: To assess within- and between-day variability in indoor free play TPA in young children.

Food insecurity among students in higher education programs is a relatively new area of research with the first study being published only 14 years ago.1 Over the years, the costs associated with higher education have steadily increased leading to more financial burdens for students than ever before. According to the 2019-20 National Postsecondary Student Aid Study, over 4 million students nationwide struggle with food insecurity.2

Forests in the United States continue to lose biodiversity and many fail to regenerate due to high deer (family Cervidae) abundance. Declines in biodiversity and overall ecosystem health due to high deer populations increases prevalence of wildlife and human diseases associated with increasing tick abundances and decreases forest resilience and the ability to deliver benefits provided by healthy ecosystems. In the eastern and midwestern United States, white-tailed deer (Odocoileus virginianus) are the main stressor, while in the western U.S. elk (Cervus elaphus) and black-tailed and mule deer (Odocoileus hemionus) can become equally problematic. Students are required to complete supervised practice hours prior to becoming Registered Dietitians and Physician Assistants. Research suggests that environmental and social factors affect dietetic interns’ diets during their internship, although these factors have not been studied among physician assistant interns. This cross-sectional study utilized an online survey to compare dietetic interns’ (n = 81) and physician assistant interns’ (n = 79) fruit and vegetable intake, food security, barriers to healthy eating, and empowerment for making healthy dietary choices during an internship. This fact sheet defines a breeding soundness exam (BSE) for a breeding bull and reviews the meaning of expected progeny differences (EPDs). Acronyms used and depended on by livestock producers are reviewed. Understanding the meaning of livestock acronyms is commonly overlooked. Highlights include how a producer makes financial decisions throughout the year in relation to their livestock.

Outcomes and Impact Quarterly
USU Extension Diabetes Cook Along classes provide diabetes education to the public while removing barriers to participation. These classes teach relevant topics through hands-on activities to increase participants’ ability to effectively self-manage their diabetes symptoms. Evaluation results show that participants experienced high satisfaction (86%) and substantial knowledge gain (92%) after the classes.

Outcomes and Impact Quarterly
NourishTank, a Shark Tank-style event, saw students propose food and nutrition insecurity solutions. Twenty-eight students formed 11 teams, promoting interdisciplinary collaboration. The winning idea, 'Farm2Fork Gone Mobile,' earned $1,000 toward their proposed project. NourishTank, through partnerships and media, highlights student-driven efforts combating food insecurity and raising awareness.

Eurasian Aspen (Populus Tremula L.): Central Europe's Keystone Species 'Hiding In Plain Sight', Antonín Kusbach, Jan Šebesta, Robert Hruban, Pavel Peška, Paul C. Rogers

Knowledge of Eurasian aspen’s (Populus tremula L.) ecological and growth characteristics is of high importance to plant and wildlife community ecology, and noncommercial forest ecosystem services. This research assessed these characteristics, identified aspen’s habitat optimum, and examined causality of its current scarce distribution in central Europe. We analyzed a robust database of field measurements (4,656,130 stands) for forest management planning over 78,000 km2 of the Czech territory. Our analysis we used GIS techniques, with basic and multivariate statistics such as general linear models, ordination, and classification.
