An obligatory heterofermentative lactic acid bacterium, Lactobacillus wasatchii sp. nov., isolated from gassy Cheddar cheese was studied for growth, gas formation, salt tolerance, and survival against pasteurization treatments at 63°C and 72°C. Initially, Lb. wasatchii was thought to use only ribose as a sugar source and we were interested in whether it could also utilize galactose. We conducted experiments to determine the rate and extent of growth and gas production in carbohydraterestricted (CR) de Man, Rogosa, and Sharpe (MRS) medium under anaerobic conditions with various combinations of ribose and galactose at 12, 23, and 37°C, with 23°C being the optimum …

We explored anisotropy of mozzarella cheese: its presence is debated in the literature. Tensile testing proved a good method because the location and mode of failure were clear. Mozzarella cheese cut direct from the block showed no significant anisotropy, though confocal microscopy showed good structure alignment at a microscale. Deliberately elongated mozzarella cheese showed strong anisotropy with tensile strength in the elongation or fibre direction ∼3.5× that perpendicular to the fibres. Temperature of elongation had a marked impact on anisotropy with maximum anisotropy after elongation at 70 °C. We suggest the disagreement on anisotropy in the literature is related to …

The focus of my research is on Ghana, because I completed a microfinance internship there. The methodology of this research is a combination of direct observation, interviews, and secondary research. Women in Ghana are limited from obtaining greater economic power by formal and informal barriers. Formal barriers are systematic exclusions from resources that prevent women from pursuing greater levels of power, specifically lack of access to capital and unstable political institutions. Informal barriers are perceived by individuals or societies but are not evidenced in the societal structure. Compromised liver and/or kidney function reduces the acceptable dosage of a variety of medications that can be administered to patients. These patients still have a need for drugs such as nonsteroidal anti-inflammatory drugs (NSAIDs), antivirals, and antibiotics. The project goal is to provide a drug delivery system to accommodate these reduced dosage limits with added therapeutic benefits to address symptoms of liver or kidney failure. Localized drug delivery allows for a smaller, concentrated dose rather than inundating the patient's system with the drug of interest. Human serum albumin (HSA) is a researched candidate for drug delivery with therapeutic properties. HSA …

This portfolio represents many hours spent in classrooms (as a student and as a teacher), in the library reading and writing, and spent in quiet contemplation. My views on teaching languages and on education in general have grown and changed. What a tragedy it would be to pass through a graduate program and not to have one’s views evolve and grow. Most importantly, this portfolio represents that growth and the ideal that, as an educator and as a human being, time on this earth ought to be spent growing, learning, and striving for something better.

This publication provides information on Utah's top priority invasive insects that have been reported in the state as well as some invasive insects that are considered to be a threat to Utah's agriculture and natural resources, but have only been reported elsewhere in the U.S. and abroad. Included is a brief description of each invasive insect, its host(s) and current distribution, symptoms to watch out for, and graphs of its expected activity throughout the season.

Plants are exploited by a diverse community of insect herbivores and phytopathogens that interact indirectly through plant-mediated interactions. Generally, plants are thought to respond to insects and pathogens through different defensive signaling pathways. As plants are selected for resistance to one phytophagous organism type (insect vs. pathogen) in managed systems, it is not clear how this selection may affect community interactions. This study examined the effect of nematode-resistant varieties on aphid (Acyrthosiphon pisum) suppression, and then determined how infection by the stem nematode, Ditylenchus dipsaci, mediated ecological effects on aphids and on plant defense proteins. This essay examines how the "everyday" functions in war, not only for those on the home fronts, but for those in combat roles and for those living between the lines. Five important qualities, among others, shape the everyday in World War I: Waiting, Staying Connected, Food and Shelter, Managing Fear, and Camaraderie. Each of these themes plays out at the homes of those left behind, in the camps of civilian and military prisoners, in occupied zones, and at the fronts.

Understanding the biology of heifer maturity and its relationship to calving difficulty and subsequent breeding success is a vital step in building abioeconomic model to identify optimal production and profitability. A limited dependent variable probit model is used to quantify the responses among heifer maturities, measured by a maturity index (MI), on dystocia and second pregnancy. The MI account for heifer age, birth BW, prebreeding BW, nutrition level, and dam size and age and is found to be inversely related to dystocia occurrence. On average there is a 2.2% increase in the probability of dystocia with every 1 point drop …

This report provides a summary of the main results of a household baseline survey carried out in late 2013 in four village development committees (VDC) in Bajura District. A total of 320 households were surveyed with 80 per VDC. Two of the VDCs have been subsequently targeted for interventions related to climate change adaptation, while two VDCs have voluntary agreed to serving as paired “controls.” This baseline survey was undertaken as part of a study entitled, ‘Improving the Resilience of Mixed Farm Systems to Pending Climate Change in Far Western Nepal’, conducted by USU and HKI.
