This paper reviews the application of field spectroscopy in the food production chain, particularly how field spectroscopy aids research and production of agricultural crops , and helps to understand the process of converting these crops into food.

The review discusses the nondestructive application of field spectroscopy such as ultraviolet, reflective , visible, near infrared and fluorescence techniques using conventional or laser light sources, to determine qualitative and quantitative properties of agricultural crops and produce.

Symposium proceedings and books pertinent to toxic substances management and test procedures have appeared, as have several literature reviews pertinent to specific pollutants. The effect of grazing on water quality has been documented by bacteriological studies of streams adjacent to grazed areas. Bacterial release from fecal deposits is a parameter of the pollution transport mechanism that is poorly understood. The objective of this study was to determine a fecal coliform release function for cattle fecal deposits. Standard cowpies were rained on with a rainfall simulator, and the fecal coliform counts were determined using the most probably number (MPN) method of enumeration. The fecal deposits were rained on at ages 2 through 100 days. The effects of rainfall intensity and recurrent rainfall were tested. …

Artificial streams, soil perfusion columns, and potted plants were exposed to 20 ug Cd/l in the presence and absence of unretorted oil shale leachate. High cadmium accumulations occurred in the stream biota, but did not measurably affect community structure or function. The presence of oil shale leachate had no effect on bioaccumulation or ecosystem structure or function. Nitrification in soil columns was enhanced by the presence of the organic fraction of oil shale leachate, but this effect was not observed when cadmium was present. Crop accumulation of cadmium was somewhat higher in alfalfa and radishes irrigated with leachate, but did …

Six sites on the Wasatch Plateau were chosen representing subsurface coal mines which were discharging or collecting accrual water on this coal field. Water samples were collected monthly at these sites for a period of 1 year (May 1981 to April 1982). Samples were taken before and after each mine's treatment system. Water sampels were analyzed for major anions and cations, trace metals, physical properaties, nutrients, total organic carbon, oil and grease, trihalomethanes, and algal assay. The objective of this study was to use the Upper Blackfoot watershed in the mountains of Southeastern Idaho as an arena for developing methods for construction, refinement, and application of indices needed to design land and water management schemes, compare alternatives, and influence the public in their uses of the area. Introduction: Phosphorus inputs to lakes and reservoirs from tributary streams and non-point sources are well-known contributors to nuisance algal growths that degrade water quality for potable and recreational uses in lakes and reservoirs. However, phosphours inputs to the euphotic zone may also occur from within the lake itself, as a result of releases from both oxic and anoxid sediments. Urbanizing areas thorughout the nation are considering governmental reorganization or consolidation to coordinate planning and improve the cost effectiveness of the delivery of public services. More efficient water supply and wastewater services may become important in the political debate over reorganization. However water factors figure politically, accomplished reorganizations must carefully plan for efficent provision of water services. This study profiles the structure and interactions of municipalities and water service agencies in Utah's Salt Lake County during the 1970s. The increasing public interest in naturally flowing streams has fostered efforts to obtain their protection under existing state water laws. In this study, the water laws of Arizona, Colorado, Idaho, Montana, Nevada, New Mexico, Utah, and Wyoming were examined and compared 1) with each other, and 2) against a set of aleitn criteria, to assess shortcomings in accommodating instream flow protections. It causes poisoning of animals, particularly cattle and sheep, and constitutes a serious problem for animal production in some countries. The present study was undertaken to develop a biological test for the detection of toxicity of extracts obtained from the plant. The objective of this study was to investigate a population of identified inhalant users at Intermountain Intertribal School, comparing and contrasting two user groups to a control group of nonusers on a number of selected research variables. The subjects included 42 identified inhalant users. Subjects were further classified into two user groups: one-time users and repeat users, and 20 nonusers. The nonuser group comprised the control group. Each subject was individually interviewed and administered the research and data collection instruments. Performance testing data from a registered herd of Hereford cattle in Northern Utah for the years 1974 through 1980 were analyzed in this study. The cattle consisted of a spring calving herd, approximately 440 cows, and a fall calving herd, approximately 120 cows. Four levels of NaNO2 (0 ppm, 50 ppm, 100 ppm, and 156 ppm) were tested for antibotulinal activity in ground pork inoculated with spores of Clostridium botulinum either at the time of formulation or after cooking. Samples formulated with less than 156 ppm sodium nitrite received additional nitrite to adjust the residual nitrite equal to that found after cooking in samples formulated with 156 ppm nitrite. All samples were subjected to abusive storage at 27 C. Inoculating the spores at the time of formulation resulted in a faster rate of swelling. Heating C. botulinum spores for 30 min. at …

Selected drugs are being utilized as models of putative colon carcinogens in a study of the influence of major types of dietary fiber upon drug pharmacokinetics. Adult, male Wistar rats were pretreated with standardized, isocaloric hydrated gelatin diets containing no fiber or 15% (w/w) cellulose, lignin, hemicellulose (metamucil), or pectin for 30 days. An additional group was fed lab chow ad libitum as a reference control.

Data from 7285 individual participants in the USDA Spring Nationwide Food Consumption Survey were analyzed using the nutrient density concept and multiple regression procedures to evaluate the impact of socioeconomic status on the nutritional quality of foods consumed. For each socioeconomic group the average daily amount of nutrients consumed per 1000 kcal of food consumed were computed and compared with the Recommended Dietary Allowances which had been converted to single-value nutrient allowances per 1000 kcal. The purpose of this study was to compare growth following hospitalization in preterm, low birth weight infants fed their own mother's milk versus preterm, low birth weight infants of similar weight and gestational age given standard infant formula upon demand. Growth measurements were taken 40, 42, 48 and 56 weeks postconceptual age.

A total of 28 healthy, preterm, low birth weight infants completed the study. Seventeen infants received standard infant formula (Similac) and 11 were breast-fed upon demand. Eighty-five samples of milk and Swiss cheese made from the same milk were collected at Cache Valley Dairy Association, Smithfield, Utah, between August, 1979, and July, 1980. The weights of the milk, Swiss cheese and the trim were carefully recorded. The milk samples were analyzed for fat and protein, and the cheese samples were analyzed for fat, protein and moisture. An attempt was made to predict Swiss cheese yields from the fat and protein content of the milk and the moisture content of the cheese.

A nutrition education component was developed, implemented, and evaluated for integration into the Title I migrant education program. The component was based on an evaluated nutrition education curriculum implemented by Brown in the elementary school. The nutrition education program was developed on the concept of nutrient density which measures the ratio of a food's nutrient contribution to its caloric contribution on a constant caloric basis. The nutrition component was modified to include behavioral objectives and concepts that partially met the needs of a migrant population in Utah.

This study was conducted to develop and evaluate several formulas which predict Mozzarella cheese yield from fat and protein content of milk and moisture content of cheese. During a one month period, 107 samples of milk and cheese were collected at Olympia Cheese Company, Olympia, Washington. Milk samples were analyzed for fat and protein content. Cheese samples were analyzed for fat, protein and moisture content.

Milk samples from fifty individual Holstein cows at the Utah State University Dairy Farm were tested monthly for 10 months for total protein, casein, fat, somatic cells and pH. A new instrument (Foss Formagraph) was used to measure the coagulation properties of the samples. Simulated cheese making procedures were utilized to measure recovery of fat and protein. All the data were statistically analyzed in relation to individual animals, stage of lactation, number of lactation and milk yield.

Three separate food grouping systems were derived for diet evaluation by utilizing a computer clustering program. System 1 was based on grouping of foods according to nutrient quality and quantity, system 2 was based on nutrient quality and frequency of consumption and system 3 was based on nutrient quality and kilocalories consumed. Defendable nutritional principles as well as knowledge of present nutritional concerns and eating habits of the U.S. population underpinned the derivation of the three systems. In the western regions of North America, mountain pine beetle, Dendroctonus ponderosae Hopk., infestations take a tremendous toll of pines , especially lodgepole pine, Pinus contorta Dougl. var. latifolia Engelm.. Mass attack by the beetles is a devastating event for the trees. As well as girdling the tree, a massive inoculation of blue stain fungus "complex" (composed of several species of Ceratocystis, numerous yeasts and other mycelial fungi) is made beneath the bark. These fungi colonize and destroy the parenchyma tissue system of the host sapwood, primarily the ray parenchyma and resin duct epithelium.
