The poultry industry has dominated the dynamic livestock sector in Latin America during the last decades, doubling production in the last 20 years (Williams and Anderson, 2019). In the future, poultry production in the region is expected to grow at almost twice the annual global rate: 2.5% and 4.0%, respectively. The rapid expansion of the industry has been fueled by the growing consumer demand for chicken meat and eggs, given its price competitiveness and culinary preference in most Latin American countries. Conventional and slow-growing broilers are both quite responsive to dietary amino acids. However, when reducing dietary balanced protein (BP), the change in rate of gain on the slower-growing broilers results in a growth curve that is not as steep as it would be if using the current conventional broiler. Amino acid supply and balance, in combination with manipulation of dietary energy density, could enable customers to achieve the desired rate of gain when using slow-growing broilers, depending on the Global Animal Partnership or other certification level the integrator is aiming for.

Feed cost represents 70% of the total cost of poultry and pork production (Patience et al., 2015); therefore, a number of processing techniques have been developed to maximize utilization of nutrients in feed ingredients and diets for optimum animal growth performance. Oilseed meals are commonly exposed to varying degrees of heat to remove solvents used during oil extraction, increase nutrient digestibility, improve storage life, and to reduce anti-nutritional factors (Liener, 1994; Rehman and Shah, 2005; Goebel and Stein, 2011). Unprocessed crude oils consist of some amount of triglycerides as well as free fatty acids (FFAs). FFAs are virtually absent in oils from living tissue. They are formed by enzymatic action after the animal has been slaughtered. Hydrolysis of ester bonds in lipids, which results in the formation of FFA from the triglycerides, may be caused by enzymatic action, heat, or moisture. This release of short-chain fatty acids is the reason for rancid flavor and odor. Furthermore, the presence of FFAs can self-catalyze and release more FFAs from triglycerides. Coccidiosis is the most common parasitic disease caused by Eimeria spp., leading to over $14 billion economic loss worldwide annually. The most prevalent Eimeria spp. in poultry include E. tenella, E. maxima, E. acervulina, E. brunetti, E. necatrix, E. praecox, and E. mitis and have different level of pathogenicity and specific infection sites in the intestine. Eimeria spp. invade intestinal epithelial tissues and induce intestinal damage, causing inflammation, oxidative stress, hemorrhage, and diarrhea. Muscle development during embryonic and early post-hatch growth is primarily through hyperplastic growth and accumulation of nuclei through satellite cell contribution. Post-hatch, muscle development transitions from hyperplasia to hypertrophic growth of muscle fibers. Commercial selection for breast yield traditionally occurs at ages targeting hypertrophic rather than hyperplastic growth. This has resulted in the production of giant fibers and concomitant challenges with regard to muscle myopathies. Arkansas is the leading rice producer in the United States. The state represents 47.5% of total U.S. rice production and 48.1% of the total acres planted to rice in 2020. Rice cultural practices vary across the state and across the U.S. However, these practices are also dynamic and continue to evolve in response to changing political, environmental, and economic times. Using optical motion capture and wearable sensors is a common way to analyze impaired movement in individuals with neurological and musculoskeletal disorders. However, using optical motion sensors and wearable sensors is expensive and often requires highly trained professionals to identify specific impairments. In this work, we proposed a graph convolutional neural network that mimics the intuition of physical therapists to identify patient-specific impairments based on video of a patient. However, Vietnamese rice farmers face several challenges, including pressures to develop sustainable livelihoods while reducing the environmental impacts of their production activities. Due to the COVID-19 pandemic, surveys were administered via email to Dale Bumpers College of Agricultural, Food and Life Sciences undergraduate students and faculty at the University of Arkansas. Eleven questions were asked in the survey. Numerical values were assigned to each answer option in order to interpret the results. Description: Despite the increase in resources to address the alarming rates of collegiate sexual violence (SV), survivors consistently do not disclose or seek mental health treatment from campus supports (Halstead et al., 2017). The purpose of this study was to understand the lived experiences of women who survived SV during college.

Method: Seven women who experienced SV during college completed a series of two semi-structured interviews using a HIPAA-compliant, web-conferencing software (Seidman, 2013). Woody breast (WB) myopathy results in poor muscle quality. The increasing incidence of WB over the last several years indicates a need for improved prediction or early diagnosis. We hypothesized that the use of body fluids, including blood, may be more suitable than breast muscle tissue in developing a minimally invasive diagnostic tool for WB detection. Cachexia is a multisystemic and multifactorial syndrome prevalent in cancer patients. It is clinically defined by involuntary loss of >5% weight in a six-month window, despite nutritional interventions. A negative energy balance characterizes cancer cachexia (CC), it is associated with weakness and fatigue in skeletal muscle. Impaired muscle function is associated with lower quality of life in cancer patients. Defects in mitochondrial function are strongly associated with muscle wasting. Bacterial Chondronecrosis with Osteomyelitis (BCO) is a debilitating infection that negatively impacts animal welfare and costs the broiler industry billions of dollars annually. We have previously isolated Staphylococcus agnetis 908 from BCO samples obtained from broilers at the University of Arkansas research farm. This isolate can induce BCO lameness at greater than 50% in broilers exposed to the pathogen in drinking water. We found that S. agnetis 908 is capable of surviving and escaping macrophages compared to a closely related cattle isolate,1379. More than 38 % of United States’ rural land area was used for grazing (i.e., pastureland or rangeland) ruminant animals in 2017, constituting the largest private land use group. The expansive nature of these lands means that grazing and pasture management decisions have potential to impact water quality as well as profit margins. Since mostly consumed raw, foodborne pathogen contamination of leafy greens has led to a large number of foodborne disease outbreaks and illnesses each year in the United States. Human noroviruses (hNoV) are the most common viral pathogen transmitted by leafy greens. In this dissertation, the persistence of the hNoV surrogate Tulane virus (TV) on pre-harvest lettuce and microgreens was investigated. Lettuces are the most studied leafy green model, while previous hNoV research has mainly focused on the post-harvest stage of production.
