Meat is likely to take too important a place in the average American diet. Many home makers think they cannot serve a meal without meat. This means an unbalanced daily diet. If this practice is continued over a long time, conditions of ill health may result. The mineral needs for a small well planned diet, the place of meat in the diet and new ways to serve meat are discussed in this circular.

Alfalfa is truly a wonderful crop; a hardy, deep-rooted, long-lived, drought resistant legume plant; a nearly perfect forage; a very important crop for all parts of South Dakota. Alfalfa should be a permanent crop on every South Dakota farm. There is no crop that farmers can grow that will return as high an acre value for the labor expended upon it. Alfalfa has no superior as a hog pasture. It will withstand dry weather and in addition, it will furnish green feed over a longer period than any other legume. The study of metabolism in the higher forms of life has been carried on for many year and much has been found out that has been of great importance in understanding the way things live and grow. It has been only in the last few years that attention has been given to this phase of the work in insects. The extensive work that has been carried on concerning metabolism in men and animals is the basis for the more recent researches on the lower forms including the microorganisms. Much of the meat butchered on farms for home use spoils before it can be eaten. Furthermore, much of it that does not spoil is so well cured that it is "too salty to eat" without first being "soaked" or par-boiled. This is due largely to lack of knowledge of good methods and practices that make for safety in both curing and canning. Most farmers make it a practice to cure and can their summer meat supply during the fall or winter. Both the farmer and his wife take an active interest in providing and preparing this supply of meat …
